Pork stew Instant Pot style creates the most tender meat and vegetables cooked in a thick flavorful sauce. A complete one pot meal!

1.5 lbs pork (fat removed, cubed into bite size pcs.)
1 tbsp olive oil
1 onion (sliced or diced)
2 tbsp minced garlic
3 carrots (cut into chunks)
3 medium potatoes (cut into 8ths)
15 oz tomatoes (diced or whole depending on what texture you want)
1 tsp salt
1/4 tsp pepper
1.5 c broth (beef or chicken)

Steps:

  • Add olive oil to pot and set to saute. Saute meat until they're no longer pink on the outside. Then add onion, carrots and potatoes. Stir. Turn pot off.
  • Pour in can of whole or diced tomatoes, garlic, seasonings and stir. Then add broth.
  • Close lid and steam valve and set to high pressure for 35 minutes. Allow for a natural release for 10 minutes.
  • Stir when done and allow to cool slightly before serving topped with parmesan cheese.

1 pound beef chuck, cut into 1-inch cubes
4 Yukon Gold potatoes, cubed
1 ½ cups mushrooms, halved
1 onion, cut into 6 wedges
2 carrots, cut into 1/2-inch thick slices
2 cloves garlic, minced
3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried rosemary

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

During the pandemic of the Coronavirus and the stay-at-home order, I have been trying different ways of cooking pork shoulder. Hubby and I cook together and this is a simple but delicious recipe we made.

2 tablespoons olive oil
2 pounds pork shoulder, cut into 6 pieces
salt and ground black pepper to taste
2 tablespoons all-purpose flour
1 cup red wine
1 cup beef broth
2 tablespoons tomato paste
1 onion, cut into large chunks
4 stalks celery, cut into 1-inch pieces
½ pound baby carrots
2 cloves garlic, chopped
2 bay leaves

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil for 1 minute. Season pork with salt and pepper. Add to the pot. Cook and stir until browned evenly on all sides, 4 to 5 minutes. Add flour and cook and stir for 1 to 2 minutes. Deglaze the pot by adding wine, broth, and tomato paste, scraping up all the browned bits from the bottom.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in onion, celery, carrots, garlic, and bay leaves. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 5 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.

3 pork steaks
2 tsp smoked paprika
2 tsp garlic powder
1 tsp Old Bay seasoning
1/2 tsp Salt
1/4 tsp ground black pepper
3 tbsp olive oil (for marinade)
4 garlic cloves
rosemary stalk

Steps:

  • Mix pork steaks with smoked paprika, ground garlic, Old Bay seasoning, salt, ground black pepper, and olive oil. Leave it marinating at least overnight
  • Set Instant Pot to Saute mood. Once it is Hot, add the vegetable oil, and wait for about 1 minute for the oil to heat up. Then add pork steaks to the bottom of the pot in one layer. For extra flavor, add about four minced cloves of garlic and one stalk of rosemary
  • Cook stakes on each side for about 3 minutes. If it starts burning, splash some stock or add one tablespoon of butter
  • Seal the pot with the lid and set the pressure cooking program on high
  • Cook for 15 minutes with the vent sealed/closed
  • When the pot beeps, quick release the steam and unseal the pot when possible
  • Serve with pleasure!

  • At this point cancel the “Saute” program and switch on the Pressure cook for 30 minutes on High. Pour diced potatoes and baby carrots. Add water just to cover the ingredients and close the lid. When the program is done let the “pressure release” naturally for 10 minutes and then open carefully the lid. Top with finely chopped fresh parsley.

  • SEAR: Pat the pork cheeks dry with some paper towel, then trim off any loose pieces of fat. Cut the pork cheeks into 2 x 3 inch / 5 x 7.5 cm pieces so that they’re evenly sized. Working in batches, sear the pork cheek pieces until they are golden brown on both sides, then transfer them to the insert of the Instant Pot. You can use the “sear” function of the Instant Pot if you would like, but it will take much longer to get all the pieces done, so I prefer to just dirty up a large cast iron skillet.
  • PRESSURE COOK: Pour the broth over the browned pork cheeks, then add the mushrooms, leek, onion, garlic and sea salt. Check the rubber seal is in place on the lid, that the shield is in place, that the float valve moves freely and that the weight is set to the “sealing” position. Pop the lid on and lock it into the closed position. Use the “Meat and Stews” setting to pressure cook for 45 minutes, until the meat is fork tender.
  • BLEND: Carefully turn the weight to the “venting” position so that the pressure is quickly released. Remove the pork cheek pieces to a chopping board and use two forks to gently shred them into bite size pieces. Carefully transfer the cooked vegetables and all of the cooking liquid from the Instant Pot to a large blender and add the lemon juice. Make sure that the blender is large enough to handle 5 cups / 1.2 l of hot liquid, making sure to leave part of the lid open to allow steam to escape when blending, covered with a kitchen towel if needed. Blend until you have a smooth, sauce like consistency, then taste and add any extra salt, if needed.
  • SERVE: Transfer both the shredded meat and the blended liquid to the insert of the Instant Pot and stir through to combine into a silky smooth stew. You can either serve it immediately, or pop the insert back into the Instant Pot and use the “warm” setting to keep it hot until you’re ready to serve.
