PORK TENDERLOIN WITH ORANGE SALAD

- Preheat a grill to medium-high on one side and lightly oil the grate. Combine 1 teaspoon smoked paprika, 2 teaspoons kosher salt, 1/2 teaspoon ground cumin, and pepper to taste; rub all over two 1-pound pork tenderloins (silver skin trimmed). Grill over direct heat until golden brown, 5 minutes per side, then move to the cooler part of the grill; cover and cook 8 more minutes, or until the meat reaches 145 for medium doneness. Let rest 5 minutes. To make the salad, toss 2 segmented oranges, 1/2 thinly sliced red onion, 1/4 cup parsley, 2 tablespoons each olive oil and sherry vinegar, and salt and pepper to taste. Slice the pork into thin medallions and top with the orange salad.

- Place pork slices in an ungreased 13-in. x 9-in. baking dish. Combine butter, thyme and cayenne; spread over pork. Pour 3/4 cup orange juice over meat. Bake, uncovered, at 425° for 20-25 minutes or until meat is no longer pink, basting occasionally., Remove pork and keep warm. Pour pan drippings into a measuring cup; add enough remaining orange juice to measure 3/4 cup. Pour into a saucepan. Stir in flour and sugar until smooth. , Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Serve with pork.

- Make the orange marinade by whisking together the orange juice, soy sauce, rosemary, and garlic. Pour over pork tenderloin and marinate for at least one hour, preferably overnight.
- Preheat oven to 400 degrees F (205 degrees C). Drain pork, reserving the marinade, and place on a baking sheet. Season with salt and pepper to taste. Roast for about 20 minutes until internal temperature has reached 145 degrees F (63 degrees C).
- Meanwhile, strain the reserved marinade and bring it to a simmer in a small saucepan. Serve this as a sauce for the meat.

Steps:
- In a small bowl stir together the salt, black pepper, cumin, chili powder and cinnamon.
- Using clean hands rub the spice mixture over the pork to coat well.
- Heat a large heavy oven-proof skillet with oil over medium-high heat until very hot.
- Add in tenderloins (if you have a large enough skillet to brown both at the same time).
- Brown the pork on all sides then leave in the skillet.
- Set oven to 350 degrees F.
- To make the glaze: Stir together brown sugar, garlic and Tabasco; pat onto the top of each tenderloin.
- Roast in the middle of the oven for about 20-22 minutes, or until a thermometer registers 140°F.
- Let sit in the skillet for 10 minutes at room temperature (the temperature of the pork will rise to about 155F while standing for the 10 minutes).
- Remove to a board and slice.
- Delicious!

- Combine brown sugar, water, balsamic vinegar, soy sauce, and cornstarch in a small saucepan over medium heat. Cook, stirring constantly, until mixture thickens, 4 to 6 minutes. Remove from the heat and set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking sheet.
- Combine garlic, sage, salt, and pepper in a small bowl. Rub garlic mixture over pork tenderloins.
- Heat oil in a large skillet over medium-high heat. Arrange tenderloins in the skillet and brown evenly, 2 to 3 minutes per side. Transfer pork to the prepared baking sheet and brush with the balsamic glaze.
- Bake in the preheated oven for 20 minutes. Turn pork, brush again with glaze, and continue cooking until pork is slightly pink in the center, about 20 minutes more, or until desired doneness. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Remove tenderloin to a platter. Allow to rest for 10 minutes. Drizzle a little extra glaze over the top. Carve and serve with remaining glaze on the side.

PORK TENDERLOIN WITH BURNT BROWN SUGAR, ORANGE CONFIT

- Orange Confit: Peel orange in strips and place them in a small saucepan. Cut orange in half and juice..save juice for another time. Put orange carcass, bay leaf, peppercorns, 1 T EVOO, wine and salt to pan. Cover with water; bring to a boil and simmer about 25 minutes. Remove orange peel strips, place in a container, cover with oil and discard the rest. The confit will keep, tightly covered in the refrigerator, for at least a week. Pork: Press the meat down to flatten and season with half the salt. Tear the orange confit into 1/2-in.pieces, and scatter on the meat, then sprinkle with the thyme and brown sugar, pat down firmly. Add the orange confit oil to the pan. Place the tenderloins in pan, sugar-side down. Cook for 5 min. without moving. (If sugar begins burning, turn down hear or shift pan) Sear on all sides, 10 min. or more. Let rest under foil for 10 min., then slice.

- Combine first 6 ingredients in a large zip-top freezer bag. Add pork to bag; seal bag, and marinate in refrigerator 30 minutes (or overnight), occasionally turning bag.
- Preheat grill to medium-high (350° to 400° F). Drain marinade from plastic bag into a small saucepan; bring to a boil. Boil 1 minute. Remove from heat and set aside.
- Grill tenderloins, uncovered, over medium-high heat 10 to 12 minutes on each side or until pork is barely pink inside or a meat thermometer inserted in thickest portion of tenderloin registers 155°, basting often when reserved marinade. Remove from grill; let stand 10 minutes.
PORK TENDERLOIN WITH ORANGE

- Trim each tenderloin to remove excess fat. Cut each tenderloin into 4 equal rounds.
- With a mallet or meat pounder, pound each pork round to about 1/4 inch thick. Sprinkle with salt and pepper.
- In a skillet large enough to hold the pieces of pork in one layer, heat the oil over medium high heat. Saute pork for about 2 minutes on each side. Do not overcook. Remove from the pan and keep warm on a platter.
- In the same skillet, add the onions and cook until wilted. Drain the fat and add the port and wine. Bring to a boil. Stir and scrape to dissolve the brown particles that cling to the bottom of the pan. Add the chicken broth and the tomato paste. Stir to blend; reduce by half.
- Add the orange sections and zests, bring to a simmer and swirl in the butter. Add any juices that may have accumulated around the pork slices. Blend well. Pour the sauce over the pork and serve hot.
