WILD MUSHROOM RAVIOLI WITH BUTTER AND PARMESAN SAUCE

Steps:
- Cook the ravioli in a large pot of boiling salted water until just cooked through, about 5 minutes. Drain and put on a platter.
- Meanwhile, cook the butter in a heavy medium frying pan over medium-high heat until pale golden, about 4 minutes. Add the basil leaves and cook until lightly fried, about 2 minutes. Add the pine nuts. Pour over the cooked ravioli. Grate 1/2 teaspoon of nutmeg directly over ravioli. Sprinkle Parmesan over dish and serve.
FILIPINO-STYLE ROAST PORK BELLY WITH CHILE VINEGAR
This method for roasting pork belly simplifies and mimics the effects of traditionally deep-fried lechon kawali, the celebratory Philippine dish with crackling skin and succulent meat.

- Season pork generously with salt. Set, skin side up, on a wire rack set inside a rimmed baking sheet. Chill at least 12 hours and up to 2 days.
- Preheat oven to 350°F. Pour 4 cups water into baking sheet with pork. Rub pork skin with oil; season with more salt. Roast, adding more water to pan as needed, until skin is golden brown and an instant-read thermometer inserted into thickest part of pork registers 195°F-200°F, 1 1/2-1 3/4 hours.
- Meanwhile, pour out 1/2 cup vinegar from bottle (save for another use). Remove pouring spout from bottle and add garlic, chiles, and a large pinch of salt. Cover and shake to distribute; let sit until ready to serve. (Or, combine in a glass jar or bowl).
- Bring hard cider and honey to a boil in a large saucepan; cook until thickened and very syrupy, 30-45 minutes.
- Increase oven temperature to 450°F. Continue to roast pork until skin is browned and puffed, 15-20 minutes (add a few more splashes of water to baking sheet if juices are scorching). Transfer rack with pork to a cutting board; let rest 20 minutes.
- Pour off fat from baking sheet and add 1/2 cup water, scraping up browned bits. Return baking sheet to oven for a few minutes if needed to help loosen browned bits. Stir into reduced cider mixture.
- Remove skin from pork, using the tip of a knife to get it started (it should come off in 1 large piece with a little help). Slice pork lengthwise into 2"-wide strips, then crosswise into 1/2"-thick pieces. Transfer to a platter and drizzle with reduced cider mixture. Break skin into large pieces and arrange on top; place a few chiles from vinegar around. Serve with chile vinegar.

- Chile vinegar can be made 1 week ahead. Store at room temperature.
EASY PAVLOVA
In this elegant dessert, a crisp white meringue layer is filled with whipped cream and fresh fruit. To keep your meringue from being flat and grainy, try beating egg whites until stiff but not dry. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Also, when beating in sugar, beat in about 1 tablespoon at a time, beating well between each addition. Then beat until meringue is thick, white and glossy. Be absolutely sure not a particle of grease or egg yolk gets into the whites.

- Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment paper.
- In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, about 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Gently fold in vanilla extract, lemon juice, and cornstarch.
- Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
- Bake for 1 hour. Cool on a wire rack.
- In a small bowl, beat heavy cream until stiff peaks form; set aside. Remove the paper, and place meringue on a flat serving plate. Fill the center of the meringue with whipped cream, and top with kiwifruit slices.

TWO DELICIOUS 5-MINUTE RAVIOLI SAUCE RECIPES
A delicious Brown Butter and Walnut Ravioli Sauce and a Creamy Cherry Tomato and Garlic Ravioli Sauce. Both are ready in just 5 minutes! Use with homemade or store-bought fresh or frozen ravioli.

- Boil a large pot of water for the ravioli and salt well. Add fresh or frozen ravioli and cook according to package instructions.
- For the Brown Butter and Walnut Sauce: Heat a skillet over medium heat. Add the chopped walnuts to the dry skillet and cook, stirring, about 1-2 minutes, until fragrant. Add the butter and stir until melted. Add the thyme leaves then let it cook a bit further until it the butter turns golden. Remove skillet from heat until the ravioli is ready. When the ravioli is cooked, spoon out of the boiling water with a slotted spoon or spider strainer into the skillet and return the skillet to the heat. Cook, tossing the ravioli in the sauce, about 1 minute. Serve immediately topped with salt and freshly ground pepper and some freshly grated or shaved Parmesan cheese. You can also garnish with additional fresh or dried thyme.
- For the Creamy Cherry Tomato and Garlic Ravioli Sauce: Heat olive oil in a skillet over medium-high heat. Add the halved cherry tomatoes and cook, stirring, until the tomatoes soften. Add the garlic and cook, stirring, about 1 minute more or until the garlic has softened. Add the cream and stir to combine. Remove skillet from heat until the ravioli is cooked. When the ravioli is ready, spoon out of the boiling water with a slotted spoon or spider strainer into the skillet and return the skillet to the heat, reducing the heat to medium. Cook, tossing the ravioli in the sauce, about 1 minute. Serve immediately topped with salt and freshly ground pepper and some freshly grated or shaved Parmesan cheese. You can also garnish with additional fresh or dried basil.

PORK RAVIOLI WITH LIME AND MALT VINEGAR DIPPING SAUCE
This was my favorite recipe for 2008. It is a delicious, different and very flavorful dish. Just the thought of making this sauce makes my mouth water, but keep in mind, a little of it goes a long way. The ravioli freeze beautifully so are great for a make ahead appetizer. If using frozen, do not defrost. Boil them frozen. Ground chicken or turkey can be substituted for the pork.

Steps:
- Combine the lime zest, juice, malt vinegar, soy sauce, honey, canola oil, sesame oil and pepper flakes.
- Whisk or shake well to combine and set aside (this is the dipping sauce).
- In a large bowl, whisk together the Parmesan, basil, ginger, garlic, scallions, nutmeg and egg.
- Add the pork and mix very gently with your finger tips until just blended.
- Place the pork mixture in the fridge for 30 minutes to firm.
- Lightly brush the four side of a wrapper with water (or you can use an egg wash if you like).
- Place a heaping tbs of the pork mixture in the center of the won ton wrapper.
- Place another wrapper on top.
- Press the edges together to seal while working out any air bubbles.
- If a wrapper tears, throw it away and start over.
- If you want to be fancy, trim the edges with a zigzag pastry wheel.
- Repeat with the remaining filling and wraps.
- Bring a large pot of water to a boil, add some salt and cook the ravioli for 6 minutes.
- Drain the ravioli.
- Serve drizzled with the sauce.
- Garnish with thin slices of lime and chopped fresh chives if you like.
- To freeze - place the uncooked ravioli on a cookie sheet in a single layer and put them in the freezer for a couple hours. Once frozen, place in a freezer storage bag.
