CIDER-BRAISED PORK CHEEKS
You'll probably need to order pork cheeks from your butcher, but the resulting slow-cooked meaty goodness is so worth it. This is delicious served over buttery mashed potatoes with lots of the gravy.

Steps:
- Season both sides of pork cheeks with salt and pepper. Sprinkle with flour and press it into the meat to coat thoroughly.
- Heat clarified butter in a pan over medium-high heat. Sear meat on both sides until richly browned, adjusting heat lower if necessary. When cheeks are browned, reduce heat to medium. Transfer cheeks to a plate to rest.
- Remove all but 2 tablespoons fat from the skillet. Add onions, carrots, and celery to skillet. Cook and stir until softened and sweet, seasoning with a pinch of salt. Add vinegar and stir to deglaze the pan. Pour in the cider and chicken stock. Bring to a simmer. Add sage and rosemary. Reduce heat to low and transfer cheeks back to pan. Cover. Cook until fork tender but not falling apart, 2 to 3 hours depending on the size of the pork cheeks. Transfer to a plate.
- Bring liquid to a boil over high heat, skimming off fat as it rises to the surface. Reduce volume of liquid by about 60 to 70%. Sauce will start to thicken up. Taste for salt and season as needed. Transfer cheeks back to liquid. Continue to cook over medium-low heat until cheeks are heated through and tender and sauce is thick enough to coat cheeks.

PORK TENDERLOIN STEAKS WITH MUSTARD CIDER SAUCE

Steps:
- Cut the pork tenderloin into 1-inch-thick steaks on a long bias. Season the steaks all over with salt and black pepper, then toss in the flour to coat.
- Melt 2 tablespoons of the butter in a large skillet over medium-high heat until the foam subsides. Shake the excess flour off the meat and add it to the skillet. Cook, flipping once, until cooked to medium and an instant-read thermometer inserted into the center registers about 150 degrees F, about 4 minutes per side. Remove the pork steaks to a platter and lower the heat under the skillet to medium.
- Add the remaining 1 tablespoon butter and the shallots. Cook, stirring, until softened, about 2 minutes. Add the cider, mustard, parsley, chives and a sprinkle of salt and black pepper. Simmer, scraping up any brown bits, until reduced by about half, about 2 minutes. Top the steaks with the sauce and serve.
OVEN DELICIOUS PORK STEAKS
This recipe came from my aunt who is an awesome cook, just like my mom. It's a great way to prepare a cheaper cut of meat and still have something that's tasty and tender. My aunt's note on this is: "I dice my onion, tomato and bell pepper and use as much as I want. I also divide the sauce mixture evenly between the 4 steaks." Either way, it's delicious!

- Mix first 4 ingredients together.
- Season the pork steaks with the salt, pepper and garlic powder. Spread each lightly with the sauce mixture.
- Place in baking dish and top each pork steak with a slice of onion, tomato and green pepper.
- Seal well in aluminum foil, leaving room for expansion of steam. Bake 1 hour at 350°F.
- Transfer to serving platter and serve hot.

SAUCY PORK STEAK
This is a very mild and somewhat sweet sauce. I put it on one pork shoulder blade steak but there is enough to cover two steaks. This recipe is very versatile, so if you want to spice it up, you can. I did not want to call it a BBQ sauce since it has no "smokey" flavor in it. Cooking more steaks may take additional time to cook in the crockpot.

- Mix sauce ingredients together.
- Refrigerate for at least one hour before using.
- Trim excess fat from pork steak.
- If possible, cut it in half.
- Put half of the pork steak in bottom of a crockpot.
- Spread some of the sauce on top of the steak.
- Lay the other half on top of that.
- Pour the remainder of the sauce onto the steak.
- Cook on high for 2 hours.
- Turn down to low and cook another 45 minutes to 1 hour or until tender and falling off the bone.

SPICED PORK STEAKS

- Pound each piece of pork lightly with a flat mallet.
- Combine the flour, salt, pepper, cumin, paprika and cayenne pepper in a flat dish and blend thoroughly.
- Dredge the pork pieces on both sides in the mixture. Pat to make the mixture adhere. Shake off excess.
- Heat the oil in a heavy skillet large enough to hold the meat pieces in one layer. Add the pork and cook over high heat until well browned on one side, about 2 minutes. Turn and cook on the second side until well browned, about 2 minutes.
- Transfer the pieces to a dish and pour off the fat from the skillet. Add the onions and garlic to the skillet and stir. Cook until wilted and add the vinegar. Stir and add the chicken broth, tomato paste and honey. Stir and bring to a boil.
- Return the pork pieces in one layer to the skillet and add the bay leaf. Cover. Cook about 30 minutes or until tender. Remove bay leaf and serve.

PORK CHEEKS
Steps:
- Preheat oven to 375 degrees.
- Heat 3 tablespoons of olive oil in a 4-quart Dutch oven. Add the mirepoix. Cover and cook until the vegetables are soft but not browned, about 10 minutes, stirring once or twice. Place the cheeks on top of the vegetables and add enough water to cover. Cover and bring to a boil.
- Place the pan in the oven. Braise cheeks for 1 1/2 to 2 hours, until tender.
- With a slotted spoon, remove the cheeks to a bowl. (Reserve cooking liquid.) Remove any fat and shred the meat using 2 forks. Sprinkle with salt.
- When the meat is cool enough to handle, use a little cooking liquid to form into 2- to 3-inch ''sausages.''
- Wrap each sausage in plastic wrap and refrigerate until firm, at least 1 hour.
- To serve, unwrap the sausages and slice each into four pieces. Brush the flat ends of each slice with a thin coat of mustard and then lightly coat with cornmeal.
- Heat 3 tablespoons of oil in a skillet. In batches, saute each slice until crisp and lightly browned.
SHERRY-BRAISED PORK CHEEKS
Cook this offcut of pork in a Spanish-inspired sauce of sweet sherry, cumin, paprika, parsley and almonds- it's a great addition to a tapas spread

- Heat 1 - 2 tbsp olive oil in a large pan then add the onion. Cook gently for 10 - 15 minutes until softened and lighty coloured. Remove and set aside.
- Toss the cheeks in the seasoned flour. Add a little more oil to the pan and turn up the heat. Brown the pork cheeks all over in batches. Turn the heat down to medium.
- Return all the pork and the reserved onions to the pan. Add the garlic, cumin and paprika and cook for a minute, then pour in the sherry. Use your spoon to scrape the bottom of the pan and mix in all the flavours.
- Pour in the beef stock then bring the pan to a simmer. Simmer gently for 2 hours or until the cheeks are tender.
- Scatter with parsley leaves and flaked almonds. Serve with rice or buttery mashed potato.
