CAPE COD PORTUGUESE KALE SOUP

Cape Cod Portuguese Kale Soup image

This is an authentic Portuguese Kale soup. I don't use the dried bans, I use canned canneloni instead. It saves time and I like them better than the red variety. The number of servings is a guess as the size of your bowl and appetite varies. Also whether you use this as a main dish or soup course.

Provided by Nana Lee

SOUTH COAST PORTUGUESE FISH CHOWDER

South Coast Portuguese Fish Chowder image

Provided by Food Network

Categories     main-dish

Yield Makes about 14 cups; serves 8

Number Of Ingredients 14

2 tablespoons olive oil
2 dried bay leaves
3 cloves garlic, finely chopped (1 tablespoon)
2 medium onions (14 ounces), cut into 3/4-inch dice
1 green bell pepper (6 ounces), cut into 1/2-inch dice
1/4 teaspoon ground allspice
2 pounds Yukon Gold, Maine, PEI, or other all-purpose potatoes, peeled and sliced 1/3 inch thick
4 cups fish stock, chicken stock, or water (as a last resort)
2 cups canned whole tomatoes in juice (from a 28-ounce can), cut into 1/2-inch diced (measured with their juice)
6 ounces spicy chorico (dry, spicy Portuguese sausage) or andouille sausage, casing removed, sliced 14 inch thick
Kosher or sea salt and freshly ground black pepper
2 pounds skinless silver hake, cod, haddock, or bass fillets, pinbones removed
10 sprigs fresh cilantro, leaves and tender stems finely chopped (1/4 cup)
2 tablespoons coarsely chopped fresh Italian parsley

Steps:

  • Heat a 4- to 6-quart heavy pot over medium heat and add the olive oil and bay leaves. As soon as the bay leaves turn brown, add the garlic and cook, stirring constantly with a wooden spoon, for 30 seconds or until it is golden. Add the onions, bell pepper, and allspice and saute, stirring occasionally, for about 8 minutes, until the onions and peppers are softened but not brown.
  • Add the potatoes and stock; if the stock doesn't cover the potatoes, add just enough water to cover them. Turn up the heat, bring to a boil, cover, and cook the potatoes vigorously for about 10 minutes, until they are soft on the outside but still firm in the center.
  • Reduce the heat to medium, add the tomatoes and sausage, and simmer for 5 minutes. Season the mixture assertively with salt and pepper (you want to almost overseason the chowder at this point, to avoid having to stir it much once the fish is added).
  • Add the whole fillets and cook for 5 minutes, then remove from the heat, gently stir in the cilantro, and allow the chowder to sit for 10 minutes. (The fish will finish cooking during this time.) If you are not serving the chowder within the hour, let it cool a bit, then refrigerate; cover the chowder after it has chilled completely. Otherwise, let it sit for up to an hour at room temperature, allowing the flavors to meld.
  • When ready to serve, reheat the chowder over low heat; don't let it boil. Use a slotted spoon to mold the chunks of hake, the chorico, tomatoes, peppers, and potatoes in the center of large soup plates or shallow bowls, and ladle the savory tomato broth over. Sprinkle with the chopped parsley.

CALDO VERDE (PORTUGUESE SAUSAGE KALE SOUP)

Caldo Verde (Portuguese Sausage Kale Soup) image

This soup is so hearty and comforting, you'll almost forget how good it is for you. And it's perfect for cold weather with the spicy sausage, kale, potatoes, and plenty of chicken broth.

Provided by Chef John

Categories     Soups, Stews and Chili Recipes     Soup Recipes

Time 1h20m

Yield 6

Number Of Ingredients 9

12 ounces linguica sausage, sliced
1 tablespoon olive oil
1 onion, finely diced
1 pinch salt
3 pounds russet potatoes, peeled and sliced 1/8 to 1/4 inch thick
2 teaspoons salt, plus more as needed
2 quarts chicken broth or water
2 pounds kale - trimmed, chopped, rinsed, drained
1 pinch cayenne pepper

Steps:

  • Slice sausage into 1/4-inch rounds. Heat oil in a pot over medium-high heat. Add sausage and saute until sausage begins to turn brown and renders some fat, 3 to 5 minutes. Transfer with a slotted spoon to a dish. Reduce heat to medium-low; add onions and pinch of salt salt. Stir and cook until softened, 4 to 5 minutes.
  • Transfer potatoes to pot. Sprinkle in 2 teaspoons salt. Pour in chicken broth. Increase heat to high and bring to a simmer. Reduce heat to medium-low; simmer until potatoes are tender, 8 to 10 minutes.
  • When potatoes are tender, carefully mash them in the broth with a potato masher until broken up or completely mashed. Add kale, a handful at a time. Transfer browned sausage to soup. Bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer until greens are tender, about 45 minutes.

SALT COD CHOWDER

Salt Cod Chowder image

Salt cod is used for cooking in Scandinavian and Spanish cooking, but isn't very well known in the United States. Here's a tasty chowder to introduce it to the uninitiated.

Provided by Julesong

Categories     Chowders

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 10

1 lb salt cod fish
1/4 cup fat salt pork, finely diced
1 medium onion, thinly sliced
3 cups raw potatoes, diced
1 cup raw carrot, diced
3 cups boiling water, or chicken broth
1 teaspoon salt, to taste
1/2 teaspoon freshly ground pepper
1 cup canned corn niblet, or hominy ((I prefer hominy))
3 cups whole milk, heated

Steps:

  • Freshen salt cod by soaking it overnight in cold water to cover.
  • Drain, place in a stewing pot, and cover with fresh water.
  • Bring to simmer with low heat.
  • Check to see if the fish is still too salty - if so, drain, add fresh cold water, and bring to simmer again, and drain.
  • Fry salt pork in stewing pot until crisp; remove fried pork scraps and reserve for garnish.
  • Cook onion in pork fat until tender.
  • Add potatoes, carrots, water, salt, and pepper and cook covered for about ten minutes, or until vegetables are tender.
  • Add corn or hominy, heated milk, and freshened salt cod.
  • Bring chowder to a simmering temperature, but do not boil.
  • Garnish with the pork scraps.
  • Serve hot, with freshly baked home made bread or rolls and butter.

PORTUGUESE SMOTHERED COD

Portuguese Smothered Cod image

Provided by Molly O'Neill

Categories     dinner, casseroles, one pot, main course

Time 1h45m

Yield Four servings

Number Of Ingredients 11

1 1/2 tablespoons olive oil
2 links linguica sausage, about 6 ounces each, halved (see note)
1 clove garlic, peeled and minced
2 pounds kale, rinsed, stems and ribs removed, finely chopped
Salt
Freshly ground pepper
2 medium baking potatoes, about 1 1/4 pound, peeled and sliced into paper-thin rounds
4 cod fillets, 6 to 8 ounces each
1 lemon, halved
1/2 cup white wine
1/2 cup fish broth or canned clam juice

Steps:

  • Put 1/2 tablespoon of the olive oil in a large pot over low heat, add the sausage and cook until lightly browned, about 10 to 15 minutes. Add the garlic and kale, season lightly with salt and pepper, stir and cover the pot. After 10 minutes, add 2 cups of water and continue cooking, covered, until the kale is soft, about 45 minutes. Discard the sausage.
  • Preheat the oven to 350 degrees. Coat the bottom of a baking dish, large enough to hold the fillets in one layer, with the remaining olive oil. Arrange the potato slices, overlapping them to make four narrow beds on which the cod fillets will rest. Season lightly with salt and pepper. Place a cod fillet on each bed, squeeze the juice from half the lemon over the fillets and season lightly with salt and pepper. Cover each fillet with a quarter of the kale and sprinkle with lemon juice.
  • Combine the wine and the broth and pour into the dish. Cover with foil and bake until the fish is cooked through and the potatoes are tender, about 25 minutes.
