World's Best Lasagna image

It takes a little work, but it is worth it.

Provided by John Chandler

Categories     World Cuisine Recipes     European     Italian

Time 3h15m

Yield 12

Number Of Ingredients 20

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Time 6h43m

Yield 12

Number Of Ingredients 24

1 tablespoon olive oil
1 tablespoon butter
½ pound pancetta (Italian bacon), diced
2 cups chopped celery
1 ¾ cups chopped carrots
1 ¼ cups chopped onion
1 ½ pounds coarsely ground chuck
1 pound coarsely ground pork shoulder
salt and ground black pepper to taste
1 cup dry white wine
1 ½ cups no-salt crushed tomatoes in puree
2 tablespoons tomato paste
1 teaspoon white sugar
½ cup beef broth
½ cup heavy whipping cream
½ cup whole milk
5 tablespoons butter
¼ cup all-purpose flour
4 cups whole milk
1 bay leaf
½ teaspoon salt
¼ teaspoon freshly grated nutmeg
8 (9x13-inch) fresh lasagna sheets
2 cups finely grated Parmesan cheese, divided

Steps:

  • Heat olive oil and 1 tablespoon butter in a large Dutch oven over medium heat. Add pancetta; cook and stir until browned, about 8 minutes. Add celery, carrots, and onion; cook, stirring occasionally, until very soft, about 15 minutes. Stir in beef and pork. Season with salt and pepper. Cook until evenly browned, about 20 minutes.
  • Pour white wine into the Dutch oven; cook until alcohol evaporates, about 5 minutes. Stir in crushed tomatoes, tomato paste, and sugar. Bring to a simmer; reduce heat to low, cover and simmer Bolognese sauce, stirring occasionally and skimming fat off the surface, about 3 1/2 hours. Stir in beef broth, 1/4 cup at a time, if sauce looks dry.
  • Stir heavy cream and 1/2 cup milk into the Bolognese sauce; mix well. Cover and cook over very low heat until flavors combine, about 30 minutes.
  • Melt 5 tablespoons butter in a large saucepan over medium heat. Stir in flour until a smooth paste forms; cook and stir until paste turns a golden sandy color, about 7 minutes.
  • Increase heat to medium-high and slowly whisk 4 cups milk into the saucepan. Bring to a gentle simmer; reduce heat to medium-low and add bay leaf. Continue simmering, stirring occasionally until bechamel sauce is thick and smooth, about 10 minutes. Season with salt and nutmeg; discard bay leaf.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with butter.
  • Spread 1/4 cup bechamel sauce in the bottom of the baking dish. Cover with 1 lasagna sheet; prick in several places with a paring knife. Spread 1/2 cup bechamel sauce and 1/2 cup Bolognese sauce on top. Sprinkle 1/4 cup Parmesan cheese on top.
  • Repeat layers 7 times with remaining lasagna sheets, bechamel sauce, Bolognese sauce, and Parmesan cheese. Cover lasagna with aluminum foil and place on a rimmed baking sheet.
  • Bake lasagna in the preheated oven until bubbly, about 25 minutes. Remove aluminum foil and continue baking until cheese is browned, about 20 minutes more. Let cool before serving, about 15 minutes.

MOM'S SEAFOOD LASAGNA

Mom's Seafood Lasagna image

Growing up, I always loved when my mom made this lasagna. I changed a couple of things-no-boil lasagna noodles make assembly much faster. Also, I like the nutty, robust flavor of Romano cheese, so I added that, too.

Provided by Kardea Brown

Categories     main-dish

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 27

Nonstick cooking spray, for the pan
2 tablespoons unsalted butter
2 pounds medium shrimp, peeled and deveined
3 cloves garlic, minced
1 tablespoon seafood seasoning
1/4 cup dry white wine
1 tablespoon fresh lemon juice
1 pound lump crabmeat
4 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1 1/2 cups shredded Romano
One 15-ounce carton ricotta
One 10-ounce package frozen chopped spinach, thawed and squeezed dry
One 14-ounce can artichoke hearts, drained and chopped
1 cup shredded part-skim mozzarella
1/2 cup Italian breadcrumbs
1 teaspoon lemon zest
1 large egg, lightly beaten
Kosher salt
One 9-ounce package no-boil pasta noodles
1 cup shredded part-skim mozzarella
1/2 cup shredded Romano
Nonstick cooking spray, for the foil

Steps:

  • For the seafood: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch baking pan with cooking spray.
  • Melt the butter in a large skillet over medium heat. Add the shrimp, garlic and seafood seasoning and cook until the shrimp turn pink, 2 to 3 minutes. Remove the shrimp from the skillet.
  • Add the wine and lemon juice to the skillet, scraping any browned bits from the bottom of the skillet with a wooden spoon. Bring to a simmer and cook until the mixture is reduced by half, about 2 minutes. Remove from the heat and stir in the shrimp and crabmeat.
  • Make the béchamel sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour until combined. Gradually add the milk, salt, pepper and nutmeg. Cook, whisking constantly, until the mixture is thickened, about 2 minutes. Remove from the heat and stir in the Romano until melted. Set aside.
  • Make the spinach-artichoke ricotta: Stir together the ricotta, spinach, artichoke hearts, mozzarella, breadcrumbs, lemon zest and egg until combined. Season with salt. Fold in 1 cup of the béchamel sauce.
  • Assemble the lasagna: Spread about 1/2 cup of the béchamel sauce in the bottom of the prepared baking dish. Top with 3 to 4 lasagna noodles and about 2/3 cup béchamel sauce. Top with half of the spinach-artichoke ricotta and half of the seafood. Repeat the layers once. Top with the remaining 3 to 4 lasagna noodles and béchamel sauce. Sprinkle with the mozzarella and Romano.
  • Cover the baking dish with aluminum foil (coat with cooking spray before adding to the top to prevent the cheese from sticking). Bake, covered, until the lasagna is bubbly, about 30 minutes. Uncover and bake until the noodles are tender and the top is golden brown, 10 to 15 minutes longer. Remove from the oven and let stand for 10 minutes before slicing and serving.

IRISH LASAGNA

Irish Lasagna image

My wife and I came up with this recipe. It is relatively simple to make, although it is a little time consuming, but the results are well worth the time.

Provided by foreveryoung001

Categories     Potato

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 7

8 -10 potatoes, medium to large size (peeled)
1 1/2 lbs cheese (shredded, we use Colby-Jack but any cheese will work)
1 lb bacon
5 green onions (finely chopped)
1/2 cup onion (chopped)
2 teaspoons olive oil
salt, pepper, garlic powder

Steps:

  • Set aside 1/2 cup of cheese.
  • Slice potatoes. slices should be about an 1/8 inch thick.
  • We like to deep fry the potato slices, although you can use any cooking method that you prefer. The goal is to get them cooked, without having them fall apart. We've found deep frying to be the easiest method.
  • Fry the chopped onion in the olive oil. If you like your green onions cooked, you can cook them up with your regular onion.
  • Cook bacon until crisp, then chop into bacon bits.
  • Use a large cake pan (lasagna pan).
  • Put a layer of cooked potatoes on the bottom of the pan, then sprinkle some onions, green onions, and bacon bits on top of the potatoes.
  • add a sprinkle of salt, pepper, and just a hint of garlic.
  • now sprinkle some cheese on top.
  • that completes one layer. add another layer of potato slices, then more onions, green onions, etc --
  • keep going until you reach the top of the pan or until you run out of ingredients.
  • The very top layer should be only potatoes.
  • Bake at 350 for 25-30 minutes, or until all of the cheese is meted throughout.
  • Take the 1/2 cup of cheese you set aside earlier, and sprinkle on top.
  • Return to oven until top layer of cheese is melted.
  • cut and serve like regular lasagna.

BRAZILIAN LASAGNA

Brazilian Lasagna image

Luciana (from Curitiba, Brazil) taught me this. She grew up with this back home. It's a white lasagne, with ground beef and ham slices. Conceptually similar to the familiar "red" lasagne, but a completely different taste. We loved it.

Provided by Belgophile

Categories     Brazilian

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 17

2 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
1/4 teaspoon nutmeg
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1 small white onion, chopped
1 garlic clove, crushed
1/2 lb ground beef
1 lb ripe tomatoes, peeled, seeds removed, and chopped
1 lb uncooked lasagne noodles
1/2 lb sliced mozzarella cheese
1/2 lb thinly sliced ham
2 ounces grated parmesan cheese
2 teaspoons oregano
2 teaspoons salt

Steps:

  • Melt butter with flour in saucepan over medium heat. Add nutmeg, salt and pepper. Add milk slowly while stirring mixture with a wooden spoon. Bring sauce to boil and cook 10 minutes. Set white sauce aside until it's time to assemble the lasagne.
  • Brown ground beef in a large sauce pan over high heat with vegetable oil, onion and garlic. Add tomatoes and water just enough to cook a thick meat sauce. Set meat sauce aside until it's time to assemble the lasagne.
  • Preheat oven to 350°F Bring four quarts of water to a boil. Stir in salt then add noodles four at a time and cook uncovered until tender but firm. Use a large fork or slotted spoon to remove cooked noodles directly to the baking dish.
  • Spoon meat sauce into baking dish. Make four layers of noodles, as follows: Put first layer of noodles on top of meat sauce. Then alternate each layer with meat sauce, mozzarella and ham. In one of the layers put only white sauce with ham. Cover lasagne with sauce, grated parmesan and a sprinkle of oregano. Bake for 20 minutes. Cover with foil during baking to avoid cheese from burning.

PORTUGUESE LASAGNA

Portuguese Lasagna image

This recipe gets its Portuguese twist from milho (cornmeal), which is used on the Madeira Islands off Portugal in place of a starch. H. Vern Pereira says he used to eat it topped with a meat sauce. He experimented to turn that combination into lasagna, arriving at this tasty version. From Cooking Club of America.

Categories     < 4 Hours

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 10

4 cups water
1 1/2 teaspoons vegetable oil
1 teaspoon salt
1 cup white cornmeal
1/2 cup chopped cilantro, divided
1 lb ground beef
1 medium onion, chopped
1 (26 ounce) jar marinara sauce, divided
2 cups shredded mozzarella cheese, divided
1 (4 ounce) can sliced mushrooms, drained

Steps:

  • Spray 13x9-inch glass baking dish with cooking spray. Bring water, oil and salt to a boil in large saucepan. Slowly whisk in cornmeal until it begins to thicken. Cover and cook over low heat 10 minutes or until very thick. Stir in 1/4 cup of the cilantro. Pour into baking dish; let stand until firm.
  • Cook beef and onion in large nonstick skillet over medium-high heat 3 to 5 minutes or until beef is no longer pink and onion is tender. Drain.
  • Invert dish with cornmeal onto countertop. With piece of kitchen string or unflavored dental floss longer than dish, cut in half horizontally to form 2 layers.
  • Spoon small amount of the marinara sauce over bottom of dish. With two spatulas, place 1 layer of cornmeal in dish. Combine half of the remaining marinara sauce with ground beef mixture; spread over cornmeal layer. Sprinkle with 1 cup of the cheese; top with half of the mushrooms. Top with remaining cornmeal layer. Spread with remaining marinara sauce; repeat layering of cheese and mushrooms.
  • Heat oven to 350°F Bake lasagna, covered, 45 minutes or until heated through. Sprinkle with remaining 1/4 cup cilantro just before serving.
