Steps:

  • I don't think anyone needs a lesson in how to build a s'mores, but here's the idea...
  • Using a stick, long grilling fork, or wood skewer, stick on a marshmallow and roast over an open flame for 30-60 seconds, or until toasted.
  • Place roasted marshmallow between 2 graham crackers (or cookies, etc) lined with chocolate (or other toppings) Devour immediately.

1 package (14-1/2 ounces) graham crackers, crushed
1/2 cup butter, melted
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 cup butterscotch chips
2 cups miniature marshmallows

Steps:

  • Prepare grill or campfire for low heat, using 16-18 charcoal briquettes or large wood chips., Line a cast-iron Dutch oven with heavy-duty aluminum foil. Combine cracker crumbs and butter; press into bottom of pan. Pour milk over crust and sprinkle with chocolate and butterscotch chips. Top with marshmallows. , Cover Dutch oven. When briquettes or wood chips are covered with white ash, place Dutch oven directly on top of 6 of them. Using long-handled tongs, place remaining briquettes on pan cover., Cook until marshmallows begin to melt, about 15 minutes. To check for doneness, use the tongs to carefully lift the cover.

8 jumbo-size marshmallows
8 full honey-flavored graham cracker sections (can substitute cinnamon-flavored graham crackers or chocolate-flavored graham crackers)
Chopped nuts
Caramel, chocolate, or strawberry ice cream topping
Mini chocolate chips
Whipped cream
Bananas
Chocolate candy pieces (recommended: M&M's)

Steps:

  • Preheat a grill to medium. Alternatively, you can roast the marshmallows over an open fire.
  • Break each graham cracker section in half. Divide chocolate bar into 8 equal parts. Place each chocolate piece on top of half of a graham cracker.
  • Divide marshmallows among several long skewers, spacing them far enough apart so that they won't melt together. Place marshmallows on grill and cook over medium heat, turning slowly, until golden brown. Carefully remove marshmallows from skewers and set on top of chocolate pieces. Add toppings of your choice. Place the other half of the graham cracker on top to form the perfect S'more.

¼ cup light corn syrup
1 ½ cups milk chocolate chips

Steps:

  • Coat a 9x13 inch dish with cooking spray. Place cereal into a large bowl; set aside.
  • In a medium saucepan over low heat, melt margarine. Add marshmallows and corn syrup and stir until melted and smooth. Stir in chocolate chips until melted. Remove from heat and pour over waiting cereal; stir well to coat. Press into prepared pan. Cool completely before cutting into squares.

1 cup heavy cream
1 cup half-and-half
5 tablespoons sugar
5 ounces bittersweet chocolate
6 egg yolks
1 tablespoon Cognac
1/2 cup graham cracker crumbs
About 24 minimarshmallows

Steps:

  • Preheat oven to 350 degrees. Place the cream, half-and-half and sugar in a medium saucepan, and warm over medium heat. Do not let the mixture boil.
  • Melt the chocolate slowly over warm water in a double boiler.
  • In a large bowl, beat the egg yolks lightly. Slowly whisk in the cream mixture. Add the warm chocolate and Cognac, stirring well. Strain the mixture through a fine sieve.
  • Fill 6 four-ounce ramekins with the mixture, and place them in a baking dish. Pour in enough hot water to come halfway up the sides of the ramekins. Cover tightly with foil, and bake for 30 minutes until the custards are just set. Remove the ramekins from the water bath and allow to cool.
  • Sprinkle the tops of the custards with the graham cracker crumbs. Toast the marshmallows under the broiler for a few seconds and place in the center of each ramekin.

2 teaspoons marshmallow creme
2 tablespoons Bacardi 151 rum
1/4 cup graham cracker crumbs

Steps:

  • Melt the chocolate in the top of a double boiler set over simmering water, stirring constantly.
  • Transfer to a fondue pot.
  • Spoon the marshmallow crème into the center of the chocolate. Do not stir.
  • Add the rum to the pot and ignite carefully, using a long wooden match or lighter. Allow the flame to burn out and stir gently to combine.
  • Sprinkle with the graham cracker crumbs. Keep fondue warm over low heat.
