3 -4 lbs under blade roast
4 cups water
2 stalks celery
2 whole carrots
1/2 cup fresh dill
16 ounces sour cream
3 tablespoons flour
2 tablespoons sugar
2 tablespoons white vinegar

Steps:

  • In a large pot.
  • Add your water-beef roast-celery-carrots.
  • Bring the pot to a boil.
  • Then let it simmer for about 1 1/2 hours.
  • This is just like you were making soup.
  • If you want to skip this part. Just add instead of water 4-cans of beef broth. This is just the old fashion way of making beef broth.
  • After 1 1/2 hours of cooking take the beef out of the pot.
  • You should have about 2 1/2 cups of beef broth left in the pot.
  • put in the dill and bring the pot to a boil.
  • Then add the sour cream-sugar-white vinegar and mix very well.
  • Then add the flour mix very well so there are no lumps.
  • Then put the beef back in the pot and cook for about 1/2 hour. If the gravy is a little thin add little flour till it is thick the way you like it. After it is done taste the gravy you may like to add a little salt. You can put this over wide noodles-potatoes or I like bread dumplings. Tell me how you like it.

1 (2 lb) boneless chuck roast
2 tablespoons vegetable oil
1/2 cup water
3 medium potatoes, peeled am
3 medium carrots, cut into 2 inch pieces
3 medium onions, quartered
1 tablespoon all-purpose flour
1 (8 ounce) carton sour cream
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Brown roast on all sides in hot oil in a large Dutch oven; add water. Cover, reduce heat, and simmer 2 1/3 hours.
  • Add vegetables, cover and simmer 30 minutes longer or until vegetables are tender, adding additional water if needed.
  • Remove roast and vegetables to a serving dish. drain off drippings, leaving 2 tablespoons of drippings in pan; reserve remaining drippings.
  • Stir flour into drippings in pan with wire whisk, cook over medium heat until browned, stirring constantly.
  • Add enough water to reserved drippings to make 1 cup, stir into flour and cook, stirring constantly, until smooth and slightly thickened.
  • Add sour cream, salt and pepper, cook stirring constantly until thoroughly heated. Serve gravy with roast, and vegetables.

2 teaspoons dill weed, divided
1 teaspoon salt
1/4 teaspoon pepper
1 boneless beef chuck roast (2-1/2 pounds)
1/4 cup water
1 tablespoon cider vinegar
3 tablespoons all-purpose flour
1/4 cup cold water
1 cup sour cream
1/2 teaspoon browning sauce, optional
Hot cooked rice

Steps:

  • In a small bowl, combine 1 teaspoon dill, salt and pepper. Sprinkle over both sides of roast. Transfer to a 3-qt. slow cooker. Add water and vinegar. Cover and cook on low for 7-8 hours or until meat is tender., Remove meat and keep warm. In a small bowl, combine flour and remaining dill; stir in cold water until smooth. Gradually stir into slow cooker., Cover and cook on high for 30 minutes or until thickened. Stir in sour cream and browning sauce if desired; heat through. Serve beef and sour cream sauce with rice.

2 Tbsp flour
1 tsp salt
1/4 tsp pepper
2 1/2 lb beef chuck pot roast
1 Tbsp shortening
1/4 c water
1 Tbsp vinegar
1 tsp dill weed
5 small potatoes, pared
5 carrots, quartered
1/2 tsp salt
1 lb zucchini, quartered
1/2 tsp salt
1 Tbsp flour
water
salt and pepper
1 c sour cream
1 tsp dill

Steps:

  • 1. Mix flour, 1 teaspoon salt and pepper; coat meat with flour mixture.
  • 2. Melt shortening in large skillet or dutch oven; brown meat.
  • 3. Add water and vinegar. Sprinkle dill weed over meat.
  • 4. Cover tightly and simmer about 3 hours or until meat is tender.
  • 5. One hour before end of cooking time, add potatoes and carrots; season with 1/2 teaspoon salt.
  • 6. Twenty minutes before end of cooking time, add zucchini; season with 1/2 teaspoon salt.
  • 7. Serve with sour cream gravy.
  • 8. Sour Cream Gravy: Place meat and vegetables on warm platter.
  • 9. Pour drippings from pan into bowl, leaving brown particles in pan.
  • 10. Return 1 teaspoon drippings to pan. Blend in 1 tablespoon flour.
  • 11. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat.
  • 12. Measure drippings and add water to measure 1 cup liquid.
  • 13. Stir in flour mixture. Heat to boiling, stirring constantly.
  • 14. Boil and stir one minute. Season with salt and pepper.
  • 15. Stir in one cup dairy sour cream and 1 teaspoon dill weed; heat through.

2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
1 boneless beef pot roast (about 2 lb), trimmed of fat
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1 tablespoon Dijon mustard
4 cloves garlic, finely chopped
1/2 teaspoon dried dill weed
1 large onion, cut into 12 wedges
1 bag (16 oz) ready-to-eat baby-cut carrots
4 medium Yukon gold potatoes (about 1 1/4 lb), unpeeled, cut into 1-inch cubes
1/2 teaspoon lemon-pepper seasoning
2 tablespoons all-purpose flour
2 tablespoons water
1 teaspoon dried dill weed
1 cup fat-free sour cream

Steps:

  • On sheet of waxed paper or in shallow bowl, mix 2 tablespoons flour, 1 teaspoon salt and the white pepper. Place beef on flour mixture; turn to coat evenly.
  • Spray 5- to 6-quart slow cooker with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add beef to skillet; cook about 5 minutes, turning once, until golden brown on both sides. Place in cooker.
  • In small bowl, mix broth, mustard, garlic and dill weed. Pour over beef in cooker. Place onion, carrots and potatoes on top of beef. Sprinkle with lemon-pepper seasoning.
  • Cover; cook on Low heat setting 9 to 10 hours.
  • Remove beef and vegetables from cooker; place on large serving platter and cover to keep warm. In small bowl, beat all sauce ingredients except sour cream with wire whisk until smooth.
  • Strain any fat from liquid in cooker. Pour liquid into 1-quart saucepan; heat to boiling over high heat. Stir flour mixture into hot liquid; cook 2 to 3 minutes, stirring constantly, until thickened. Remove from heat; stir in sour cream.
  • Cut beef into 8 serving pieces. Serve sauce with beef and vegetables.

Another oldie but goodie. I've seen some similar ones here but not exactly like it. I specified using a crock pot but you can also cook it in a dutch oven in the oven. Hubby always insists on mashed potatoes and English peas with this and pours the gravy over everything.

3 or 4 lb beef roast, whatever you like, i use what's on sale
1 pkg (1 envelope) onion soup mix
1 can(s) cream of mushroom soup
1 can(s) french onion soup
pepper to taste, no salt!!!!

Steps:

  • 1. Place the roast in the crock pot.
  • 2. Mix the rest of the ingredients and pour over the roast. Don't add salt as the soups are all salty.
  • 3. Cook on high one hour then reduce to low for 8 hours.
  • 4. It should be fork tender with a nice creamy gravy to ladle over it when served.
