¼ cup mayonnaise
¼ cup nonfat plain Greek yogurt
2 tablespoons lemon juice

1 tablespoon capers, rinsed and chopped
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh dill, plus more for garnish
1 tablespoon chopped fresh parsley
½ teaspoon salt
¼ teaspoon ground pepper
4 cups packed baby arugula

Steps:

  • Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add potatoes, cover and cook until tender, about 15 minutes. Transfer to a baking sheet to cool completely, about 30 minutes.
  • Meanwhile, whisk mayonnaise, yogurt, lemon juice, mustard, capers, chives, dill, parsley, salt and pepper in a large bowl.
  • Add the potatoes to the dressing and toss to coat. Add arugula and gently toss again. Garnish with more dill, if desired.

1½ lb. baby potatoes, quartered
2 tbsp extra virgin olive oil
1 garlic clove, minced
1 tsp dried rosemary
½ tsp ground sweet paprika
½ tsp ground cumin
Salt and pepper, to taste
4 cups (packed) baby arugula
2 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
Salt and pepper, to taste
Parmesan cheese (Parmigiano Reggiano), freshly grated, to taste (I used 1/4 cup)

Steps:

  • For the potatoes. Preheat the oven to 425 degrees F. In a large bowl, combine together the potatoes, garlic, dried rosemary, paprika, cumin, salt, and pepper until the potatoes are well-coated.
  • On a large baking sheet (lined with parchment paper for easy clean-up), spread the potatoes in a single layer and roast for 30-40 minutes, flipping once halfway through, until crispy on the outside and tender on the inside.
  • For the salad. As the potatoes roast, place the arugula in a large bowl and top with lemon juice, olive oil, salt, and pepper. Toss to combine and then set aside.
  • Put it together. Plate the arugula on a large platter or plate and top with the roasted potatoes. Then grate a generous amount of parmesan cheese over the dish. Best served immediately.

3 potatoes
1/4 cup extra virgin olive oil
1 tbsp lemon
1 tbsp Dijon mustard
1 pinch salt
ground pepper to taste
1 bunch arugula
1 tbsp chives, fresh
4 radishes

Steps:

  • Peel the potatoes, then cut them in half lengthwise and boil them in a pot of salted water about 15 min, until tender.
  • Drain, then cut each piece in half to obtain quarters and set them aside in a bowl.
  • In a small bowl, whisk together the oil, lemon juice, mustard, salt, and pepper, using a fork or whisk until the vinaigrette is emulsified.
  • Pour the vinaigrette over the warm potatoes and toss well.
  • Wash the arugula well, then drain and place the leaves on a serving plate or in a bowl.
  • Arrange the vinaigrette seasoned potatoes over the arugula, sprinkle with chopped chives and sliced radishes.
  • Serve warm.

Steps:

  • Potatoes: Put an oven rack in the upper third of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Put the potatoes and the olive oil in a medium bowl and toss until coated. Arrange the potatoes, cut side down, in a single layer on the prepared baking sheet and season with salt and pepper, to taste. Roast until golden, about 35 to 40 minutes Remove the potatoes from the oven and set aside to cool for 15 minutes.
  • Salad: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a salad bowl. Squeeze the juice from the membranes into a small bowl and reserve 1 tablespoon of juice for the dressing. Add the arugula, Gorgonzola, walnuts and the cooled potatoes to the salad bowl.
  • Dressing: In a small bowl, whisk together the olive oil, reserved orange juice, vinegar, and orange zest until smooth. Season with salt and pepper, to taste.
  • Add the dressing to the potato mixture and toss well. Season with salt and pepper, to taste, and serve.

6 cups 1/2-inch-diced sweet potatoes (4 to 6 large sweet potatoes; I leave the skin on but peeling is an option)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 cups loosely packed baby arugula
4 scallions, white and light green parts only, thinly sliced
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray.
  • Toss the sweet potatoes in a large bowl with the olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer to the prepared baking sheet and bake for 20 minutes. Stir the potatoes and continue to bake until fork-tender, an additional 15 to 20 minutes. Let cool completely.

2 to 3 bunches arugula (about 12 ounces), stems trimmed
2 1/2 cups leftover sauteed corn from Chili-Rubbed Salmon with Zucchini and Sauteed Corn
Baked Tortilla Strips, or store-bought tortilla chips, crumbled, for serving (optional)
Goat cheese, crumbled (optional)

Steps:

  • Preheat oven to 425 degrees. On 2 large, rimmed baking sheets, toss together sweet potatoes, mushrooms, cumin, and oil; season generously with salt and pepper. Roast, rotating sheets halfway through, until vegetables are tender, browned, and dry, about 40 minutes. Reserve 4 cups sweet potatoes and mushrooms (see Cook's Note below).
  • In a large bowl, combine arugula with the sauteed corn and 6 cups of the roasted sweet potatoes and mushrooms; toss until arugula wilts slightly.
