SWEET POTATO COFFEE CAKE



Sweet Potato Coffee Cake image

I found a recipe for an acorn squash streusel cake and had very little of the ingredients on hand, so I used it as a base recipe--but changed it so much that it became an original. It is rich and flavorful, so a small piece is enough. It has a heavy texture that is nice. Let cool or eat warm with a cup of coffee.

2 cups soft white wheat flour
2 teaspoons baking soda
1 teaspoon cinnamon
½ teaspoon salt
½ cup brown sugar
¼ cup honey
¼ cup butter, softened
1 egg
1 cup cooked mashed sweet potatoes
½ teaspoon vanilla
⅓ cup all-purpose flour
⅓ cup brown sugar
⅓ cup rolled oats
¼ cup butter, softened
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9-inch square baking dish with cooking spray.
  • Whisk white wheat flour, baking soda, 1 teaspoon cinnamon, and salt together in a bowl. Beat 1/2 cup brown sugar, honey, and 1/4 cup butter together in another bowl with an electric mixer until creamy; beat in egg. Add sweet potato and vanilla extract to butter mixture and beat until smooth.
  • Stir flour mixture into sweet potato mixture until batter is evenly moistened and smooth. Pour batter into prepared baking dish.
  • Mix all-purpose flour, 1/3 cup brown sugar, rolled oats, 1/4 cup butter, and 1 teaspoon cinnamon together in a bowl until combined. Sprinkle oats mixture over batter.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 30 minutes.

This is an old German recipe that's become a family favorite. I have adapted it to mix and raise the first time in your bread machine. I make it every year at Christmas for gifts and everyone loves it. It's also delicious anytime, especially warm with butter on it!

¾ cup dry potato flakes
1 cup boiling water
1 cup warm milk
3 tablespoons butter, softened
2 eggs
1 cup white sugar
4 ½ cups bread flour
1 (.25 ounce) package active dry yeast
3 tablespoons white sugar
½ teaspoon ground cinnamon
3 tablespoons butter, melted

Steps:

  • In a small bowl, dissolve potato flakes in boiling water. Let stand until lukewarm, about 15 minutes.
  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Manual cycle; press Start. The mixing and first rise of the dough will be completed in the bread machine.
  • When Dough/Manual cycle is finished, remove dough and briefly knead on a floured board. Divide dough into 3 round loaves and place in three lightly greased 8 inch pie pans. Cover and let raise until doubled in size, about 60 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine 3 tablespoons sugar with 1/2 teaspoon cinnamon. Brush risen loaves with melted butter and sprinkle with cinnamon sugar mixture.
  • Bake in preheated oven for 20 minutes, or until golden brown.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 cup cold mashed potatoes (without added milk and butter)
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 cup whole milk
1 cup chopped walnuts or pecans
CARAMEL ICING:
1/2 cup butter, cubed
1 cup packed brown sugar
1/4 cup evaporated milk
2 cups confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in nuts. , Pour into 2 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For icing, in a saucepan over low heat, cook butter and brown sugar until butter is melted and mixture is smooth. Stir in evaporated milk; bring to a boil, stirring constantly. Remove from the heat; cool to room temperature. Stir in confectioners' sugar and vanilla until smooth. Spread between layers and over top of cake.

Moist, easy and unusual coffee cake with a chopped nut topping. Sweet potatoes add a delicate tint to the cake and a sweet creaminess. Not noticeably sweet potato flavored (unless you add additional chunks to it like I do!). From about.com's southern food recipe collection but modified to reduce fat and increase fiber.

2/3 cup nonfat yogurt (or applesauce, originally melted butter)
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla (original called for 1 tsp)
1 cup nonfat sour cream
3/4 cup cooked mashed sweet potatoes (I increase this to 1 C and increase the flour by about 2 T. Also have stirred in 1/2 C small chunks )
1 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans
1/2 cup light brown sugar, firmly packed
1/2 cup all-purpose flour (I add 1/4 C oats and decrease flour to 1/4 C)
1 tablespoon butter (original calls for 3 T)
2 teaspoons vanilla

Steps:

  • Heat oven to 325°.
  • Grease a 9 to 10-inch springform pan .
  • In mixing bowl, combine butter, sugar, eggs, and vanilla; add sour cream and mashed sweet potatoes.
  • In large mixing bowl, combine flour, baking powder, baking soda and salt. Stir first mixture into the flour mixture, stirring just until blended (if using additional sweet potato chunks add now).
  • Spread batter in prepared pan. Combine topping ingredients until crumbly and sprinkle over the batter.
  • Bake coffee cake for about 1 hour to 1 hour and 10 minutes, or until a wooden toothpick inserted near center comes out clean (I baked at 350 for 45 minutes and it was perfect). Let cool, loosen edges, and remove sides of pan.

This was passed down to me by my Mother-In-Law 48 years ago, as it has been through several generations now. This is a most requested recipe for every family gathering. Takes a while to make due to the rising times, and it does make a lot, but freezes well. I use 7 round cake pans however you can use any shape or size pan. I weigh out 16 ounces of dough for each round cake pan. Very worth while the time it takes. Using fresh flour and yeast will give you excellent results.

2 tablespoons yeast
2 cups potato water or 2 cups warm water
1 cup boiled mashed potatoes
make sure your liquids are cooled to 120 - 130 f before adding to yeast
1 1/2 tablespoons salt
2 cups milk (boiled and cooled)
1 cup butter, melted
11 cups flour
1 cup sugar
1 teaspoon lemon extract
1/4 cup butter
1 cup sugar
1/2 cup milk
3 tablespoons butter

Steps:

  • First Step.
  • Mix this and let set for 10 minutes.
  • Then add second step to this.
  • Knead and let this raise.
  • Third Step.
  • Divide dough into your greased pans and let raise again.
  • Fourth Step.
  • Melt more butter, spread over tops of raised cakes and sprinkle with cinnamon/sugar mixture before butter runs down.
  • Bake at 350 degrees for 15 minutes or until done.
  • Fifth Step.
  • Make sauce for baked cakes.
  • Boil until about as thick as cream. Spread hot sauce over hot baked cakes and sprinkle with more cinnamon/sugar on top.
