EASY SLOW COOKER MASHED POTATO STUFFED MEATLOAF #5FIX
5-Ingredient Fix Contest Entry. As a busy Mom, the slow cooker is my friend! This recipe will allow a Sunday dinner any night of the week. Be sure not to over fill the center, or it will separate, exposing your mashed potatoes. The beef will shrink slightly in the slow cooker. The best way to easily remove your meat loaf in one piece is to use a slow cooker liner and remove it supporting the sides, keeping your meatloaf in one piece until ready to slice.

Steps:
- 1. Line slow cooker with a slow cooker liner.
- 2. Soak stuffing mix (seasoning and bread cubes) in 1 cup warm water in a large bowl approximately 5 minutes until stuffing is moist and fluffy.
- 3. With hands, mix ground beef well into stuffing. Be sure to thoroughly incorporate stuffing and ground beef. Shape half the beef into loaf shape, creating a well lengthwise to house potatoes. Spoon Simply Potatoes Mashed Potatoes into the well, packing firmly. Do not over fill. Cover the mashed potatoes with the remaining beef mixture, be sure to seal edges well. Place meatloaf into slow cooker.
- 4. Cook on low for 8 hours or high for 6 hours.
- 5. During last 45 minutes of cooking, top with beef and mushroom gravy.
- 6. Allow to stand 15 minutes before slicing.

- Preheat the oven to 350 degrees.
- Break up the bread and place into a large bowl. Add in the milk and allow to sit for 2 minutes. Using a fork, mash up the bread to form a paste.
- Remove the sausage from the casing. Place the sausage and ground turkey into a separate bowl. Work the two together until well combined. Add the meat into the bread mixture and combine.
- Using a tablespoon size scooper, scoop the meatballs, and place them into a 24 count mini-muffin tin (or use 2-12 count muffin tins). Cook for 15-18 minutes or until cooked through.
- During the last few minutes of baking, prepare the Simply Potatoes Traditional Mashed Potatoes in the microwave according to the package instructions. Place the cooked potatoes into a pastry piping bag affixed with a decorative tip of your choosing.
- When the mini-meatloaves are cooked, move them to a serving tray. Using the potatoes in the piping bag, "frost" the tops of the meatloaves. The finished product should resemble a frosted cupcake.
- Serve immediately.

- Preheat the broiler.
- Place the onion, bell peppers and garlic cloves on a baking sheet. Broil 3 inches from heat for 7 minutes or until blackened, turning frequently.
- Transfer to a paper bag, close tightly and let stand 15 minutes or until soft. Scrape off outside skins.
- Chop the onion and garlic; seed and chop the peppers.
- (You will have about 2 cups of vegetables). Preheat oven to 350 and spray a 13x9x3" baking dish with nonstick cooking spray.
- In a large bowl, mix the beef, veal, vegetables, egg, chili sauce, bread crumbs, 1/2 cup of the cheese and the black pepper.
- Mix with your hand until well combined.
- Transfer to the baking dish and pat into a 12x7" loaf, mounding it slightly in the center.
- In a small bowl, with an electric mixer set on med.-high, whip the hot potatoes with the remaining 1 cup of cheese, the chives and the butter until fluffy.
- Pipe or spoon on top and sides of the loaf.
- Bake for 1 hour or until a meat thermometer inserted into the center of the meat loaf registers 145.
- Let stand for 10 minutes before serving.

- 1. Adjust oven racks to upper-middle and lower-middle positions and heat broiler. Line rimmed baking sheet with aluminum foil, set wire rack in sheet, and place 14 by 6-inch piece of foil in center of rack. Whisk ketchup, sugar, vinegar, and hot sauce together in bowl; set aside glaze. 2. Melt 2 tablespoons butter in 10-inch skillet over medium heat. Add onion and cook until just softened, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Set aside off heat. 3. Combine saltines and 1/3 cup milk in large bowl and mash with fork until chunky paste forms. Add pork, eggs and yolk, parsley, mustard, Worcestershire, 1 teaspoon salt, 3/4 teaspoon pepper, thyme, and onion mixture and knead with your hands until mostly combined. Add beef and knead until combined. 4. Transfer meat mixture to foil rectangle on wire rack and form into 9 by 6-inch loaf. Broil on upper-middle oven rack until well browned, 5 to 7 minutes. Brush glaze over top and sides of meatloaf, return to upper-middle rack, and broil until glaze begins to brown, 3 to 5 minutes. Meanwhile, bring potatoes and 2 quarts water to boil in Dutch oven over high heat. Reduce heat to medium-low and simmer until potatoes are tender, 20 to 25 minutes; drain potatoes thoroughly in colander. Set ricer or food mill over now-empty pot and press or mill potatoes into pot.
