HAM, BEAN, AND POTATO SOUP

Ham, Bean, and Potato Soup image

There's nothing more satisfying than home cookin', and there's nothing more home cookin' than a thick, hearty soup on a fall or winter's day. This is a very basic, traditional soup using a ham bone and the trimmings from a baked ham, pre-sliced or not. If you bake your own hams but have been throwing out the bone, you're missing out on something very special!

Provided by Steve A

Time 11h

Yield 8

Number Of Ingredients 13

1 pound dried great northern beans
1 (10 ounce) ham bone
1 pound cooked ham, diced
1 (8 ounce) can tomato sauce
2 large onions, chopped
4 stalks celery, sliced
1 bouquet garni
1 tablespoon dried parsley
¼ teaspoon baking soda
salt and ground black pepper to taste
water to cover
2 medium carrots, sliced
3 medium potatoes, peeled and cubed

Steps:

  • Place beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight.
  • Strain and rinse beans. Transfer to a large stockpot with ham bone, ham, tomato sauce, onions, celery, bouquet garni, parsley, baking soda, salt, and pepper. Cover with water and bring to a boil over medium-high heat.
  • Reduce heat and simmer for 2 hours. Add potatoes and carrots, and continue to simmer until tender, about 20 minutes. Season with salt if necessary and remove ham bone to serve.

HAM, POTATOES, AND GREEN BEANS

Ham, Potatoes, and Green Beans image

A farm-food classic, but low in fat and perfectly suited to today's lighter diets. Not a soup, not a stew, but a one-pot meal that stays good on those busy days when everyone has to eat on a different schedule.

Provided by 3KillerBs

Categories     One Dish Meal

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 cups ham, diced
2 lbs white potatoes
1 -2 lb fresh green beans or 1 -2 lb frozen green beans
1 onion (optional)
water
black pepper

Steps:

  • Cube the potatoes, peeling first if desired.
  • String the beans and break into 2 inch pieces.
  • Coarsely chop the onion.
  • Place ham, potatoes, beans, black pepper, and onions into a wide, shallow pot or dutch oven.
  • Add enough water to come within a couple inches of the top of the food.
  • Bring the pot to a boil then simmer gently for 15 minutes or until potatoes are tender.
  • This can be drippy so I suggest serving it in bowls or soup plates.
  • Cornbread makes a good accompaniment if you want to sop up the juices.

HAM AND BEAN TOMATO SOUP

Ham and Bean Tomato Soup image

Erin Lembke's take on this hearty classic is a thick tomato-based soup loaded with veggies and well-seasoned with herbs. Cayenne pepper gives it some zip. "I always make up a soup recipe as I go along," Erin writes from Bothell, Washington. "My husband, who doesn't usually care much for soup, really likes this one."

~ POTATO, HAM & BEAN SOUP ~

~ Potato, Ham & Bean Soup ~ image

Another hearty Potato soup I created this afternoon. The family thoroughly enjoyed it. I hope you do as well. The slight tang of the sour cream and cheese gave it awesome flavor. Enjoy!

Categories     Other Soups

Time 55m

Number Of Ingredients 16

2 Tbsp butter
1 c each - slivered or shredded carrots and chopped onion
1/2 c sliced celery
2 Tbsp chunky garlic paste or minced garlic
3 - 4 medium potatoes, peeled and cubed
1 Tbsp parsley paste or chopped parsley
salt & pepper - to taste
dried thyme - 1/2 tsp - optional
2 - 15.5 oz cans, great northern beans, drained and rinsed. - smash up one can of beans with potato masher
48 oz chicken broth
1 1/2 tsp better than buillion chicken flavored paste - or dried buillion
1 1/2 Tbsp flour
1 c sour cream
3/4 c heavy cream
4 - 6 oz shredded cheddar cheese
1 c cubed, cooked ham

Steps:

  • 1. In a dutch oven, over medium heat - melt butter. To this add the onion, celery, carrots and garlic. Salt and pepper. Cook and stir until veggies are beginning to become tender.
  • 2. Once veggies are cooked, add the broth, bullion, potatoes, thyme if using and parsley. Bring to a boil and then simmer until potatoes are tender. ( About 25 minutes.)
  • 3. Smash 1 can of beans with potato masher and set aside.
  • 4. Once potatoes are tender, stir in whole and smashed beans. Stir. Continue simmering, another 5 minutes. Add ham and stir.
  • 5. Mix together the sour cream, cream, and flour.
  • 6. Stir this mixture into the potato mixture and then add the cheese, stir until melted. I then took my potato masher and twice smashed down the soup mixture, just enough to smash some of the potatoes. You can skip this part, just makes the soup a little thicker.
  • 7. Now, taste soup and adjust salt and pepper accordingly.
  • 8. Serve in individual bowls and add some shredded cheese if desired.

BLACK BEAN, SWEET POTATO & HAM SOUP image

Categories     Soup/Stew     Bean     High Fiber     Simmer

Yield 6 people

Number Of Ingredients 13

1 lb dry black beans, soaked overnight.
1 large onion, chopped
5-6 garlic cloves, minced
4 Tablespoons butter
1 Tablespoon ground cumin
1/2 tsp smoked paprika (Pimenton de la Vera Dulce brand works well)
Ground pepper to taste.
4 cups chicken broth
1/2 - 3/4 cup malty amber beer (Belgian style works well)
1 15 oz can diced tomatoes with juice
1 lb ham, diced
1 lb sweet potatoes, peeled and diced
3-4 Tablespoons seasoned rice vinegar

Steps:

  • 1) Soak the beans overnight, rinse, drain and set aside 2) Melt the butter in a large pot over medium heat. 3) Add onions, cumin and pepper; saute until the onions begin to soften (about 5-10 Minutes). 4) Add garlic and continue to saute until the garlic becomes fragrant, but do not allow it to burn (2-4 minutes) 5) Add tomatoes, chicken broth, beans, beer, 1 TB of the vinegar, and 1/4 of the diced ham to the pot. 6) Bring to a boil, lower to a simmer, cover the pot and cook 45 minutes. 7) Add the sweet potatoes to the pot along with remaining vinegar. Bring to a boil, lower to simmer, cover and cook for 30 minutes, or until the beans and sweet potatoes are done. 8) Use an immersion blender to puree about half of the soup to make it creamy, but still leave whole beans and sweet potatoes. 9) Add ham, bring to a boil, then lower to a simmer. Once the ham is heated through, serve.

NAVY BEAN, HAM AND POTATO SOUP

Navy Bean, Ham and Potato Soup image

This is a very hearty soup which can be prepared in a crock pot. Full of veggies and great flavors.

Provided by bwigstrom

Categories     Ham

Time 9h20m

Yield 1 1/2 cups, 8 serving(s)

Number Of Ingredients 12

1 lb dried navy beans
1 large smoked ham hock
1 cup chopped ham
3 garlic cloves, minced
3 carrots, chopped
3 stalks celery, thinly sliced
1 large onion, chopped
3 large potatoes, peeled and cubed
1 tablespoon fresh thyme
1 teaspoon sea salt
1/2 teaspoon pepper
5 cups water, to cover all contents

Steps:

  • Sort, wash and soak beans overnight. Drain, rinse and put in the crock pot, stirring in all of the remaining ingredients. Add enough water to cover all ingredients, typically almost to the top of the pot. I usually increase the garlic because we love it. Be careful with the salt, I add sparingly to compensate for the ham hock and the additional diced ham. Cover crock pot, cook on high for 3 hours, turn to low for 6 hours or more. I remove the ham hock, cut the meat off, cutting away the fat it in the process and place remaining meat back into the pot.
