CREAMY ASPARAGUS MUSHROOM POTATO CASSEROLE



Creamy Asparagus Mushroom Potato Casserole image

Vegetarians and omnivores alike will enjoy this simple, hearty and nutritious, creamy asparagus and mushrooms potato casserole with mushrooms.

750 g potatoes (peeled, halved or quartered)
200 g asparagus (chopped)
350 g mushrooms (roughly chopped)
3 tbsp each: chives and parsley (finely chopped (more for sprinkling))
25 g butter
20 g corn flour
250 ml semi-skimmed milk/low fat milk
40 g mature cheddar cheese (coarsely grated)
sea salt and white pepper to taste
1 bay leaf
olive oil for drizzling
3 tbsp fromage frais/fromage blanc

Steps:

  • Peel the potatoes, cut into similar size pieces (halves or quarters) and boil in salted water with the bay leaf until tender but take care not to overcook them. Place in a medium casserole dish and set aside.
  • Preheat the oven to 400 F/ 200 C/ gas mark 6.
  • Heat up a large non-stick pan and fry the mushrooms for 3-4 minutes over a high heat until lightly browned, stirring once or twice. Scatter the mushrooms along with the chopped asparagus over the potatoes. Season.
  • To make the herb sauce, in a saucepan melt the butter over a low heat, add the flour and whisk until the mixture is smooth. Add some of the milk, increase the heat and continue whisking until the mixture has thickened. Add the rest of the milk and continue whisking until the sauce starts bubbling up. Add the fromage frais and remove from the heat. Stir in the herbs, season to taste and pour over the casserole.
  • Sprinkle the grated cheddar over the whole thing, drizzle with a little olive oil and bake for 20-25 minutes. Remove from the oven and serve immediately.

1 lb new potato, scrubbed, halved
3 tablespoons extra virgin olive oil, divided
1 bunch asparagus, trimmed and cut in 1/2-inch pieces or 1 lb asparagus
4 ounces shiitake mushroom caps, sliced (may use any mushrooms you have on hand)
1 shallot, minced
1 garlic clove, minced
1 small onion, coarsely chopped
1/2 cup chopped jarred roasted red pepper, rinsed
1 tablespoon minced fresh sage
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons fresh chives (to garnish)
4 poached eggs (optional)

Steps:

  • Place a steamer basket in a large saucepan, add 1 inch of water and bring to a boil. Put potatoes in the basket and steam until barely tender when pierced with a skewer, 12 to 15 minutes, depending on size. When cool enough to handle, chop into 1/2-inch pieces.
  • Heat 1 tablespoon oil in a large (not nonstick) skillet over medium heat. Add asparagus, mushrooms, shallot and garlic and cook, stirring often, until beginning to brown, 5 to 7 minutes. Remove to a plate.
  • Add the remaining 2 tablespoons oil to the pan. Add onion and the potatoes and cook, stirring occasionally and scraping up the browned bits with a metal spatula, until the potatoes are browned, 4 to 8 minutes. Return the asparagus mixture to the pan along with roasted red pepper, sage, salt and pepper; cook, stirring, until heated through, about 1 minute more.
  • Divide the hash among 4 plates and top each with a poached egg if you wish.
  • Serve sprinkled with chives.

2 cups button mushrooms, halved
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 pound baby new red potatoes
1 clove garlic, smashed
3/4 cup reduced-fat sour cream
1/4 cup low-fat plain yogurt
1/4 cup well-shaken buttermilk
1 tablespoon champagne vinegar
Small pinch cayenne
1/4 cup roughly chopped parsley leaves
1/4 cup chopped chives
2 tablespoons chopped green onion
2 tablespoons chopped dill
1 tablespoon chopped tarragon leaves
Dash Worcestershire
Dash hot sauce

Steps:

  • Preheat the oven to 450 degrees F.
  • On a rimmed baking sheet, toss the mushrooms with 1 tablespoon olive oil, and season with salt and pepper, to taste.
  • On another rimmed baking sheet, toss the potatoes with the remaining 1 tablespoon olive oil, and season with salt and pepper, to taste. Put both pans in the oven, and roast until the mushrooms are browned and the potatoes are cooked through, about 20 minutes, tossing once and rotating the sheets halfway through. Remove the pans from the oven, and let cool slightly.
  • While the potatoes and mushrooms roast, make the dressing. Add the garlic, sour cream, yogurt, buttermilk, and vinegar into a food processor and blend to combine. Add the cayenne, herbs, Worcestershire, and hot sauce. Blend until fully incorporated and the dressing is a pale green. Season the dressing with salt and pepper, to taste, if needed.
  • Add the potatoes and mushrooms to a serving bowl and pour in the dressing. Toss to coat and serve warm or room temperature.

Steps:

  • Preheat the oven to 450 degrees F. Place mushrooms and 1/4 tablespoon olive oil in a bowl.

  • Toss asparagus in remaining olive oil. Season with salt and pepper, place asparagus on another baking sheet.
  • Place both baking sheets in oven and roast until asparagus is tender (10-15 minutes depending on thickness) and mushrooms are tender and golden (approximately 20 minutes).

Steps:

  • Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Meanwhile, cut the tips off asparagus spears; set aside for garnish. Cut stalks into 1-in. pieces; place in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 18-20 minutes or until tender. Drain asparagus and place in a food processor or blender. Cover and process until pureed; set aside. Drain potatoes; mash and set aside., In a large saucepan, melt 1 tablespoon butter; whisk in flour until smooth. Gradually stir in cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in asparagus pieced, mashed potatoes, salt and pepper. Transfer to a greased shallow 1-1/2 quart baking dish. Top with reserved asparagus tips., Melt remaining butter; lightly brush some over top. Toss bread crumbs, Parmesan cheese and remaining butter; sprinkle over casserole. Bake, uncovered, at 350° for 25-30 minutes or until lightly browned.

1 pound fresh asparagus, trimmed and cut into 1 1/2-inch pieces
1 tablespoon olive oil
1 (8 ounce) package sliced fresh mushrooms
¼ onion, thinly sliced
1 (4 ounce) packet saltine crackers, crushed
1 cup shredded sharp Cheddar cheese
¼ teaspoon ground black pepper
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Cover pan and bring the water to a boil. Add asparagus, cover, and steam until just tender, 5 to 8 minutes.
  • Heat olive oil in a large skillet; cook and stir mushrooms and onion until the mushrooms have given off their liquid, 5 to 8 minutes. Stir in the asparagus, tossing vegetables just until hot. Remove from heat.
  • Mix saltine cracker crumbs, sharp Cheddar cheese, and black pepper together in a bowl; spread half the mixture into the bottom of the prepared baking dish.
  • Spoon the asparagus mixture over the crumb mixture.
  • Whisk the cream of mushroom soup and milk together in a bowl until smooth, and pour the soup mixture over the asparagus mixture.
  • Spread the remaining crumb-cheese mixture over the casserole and sprinkle with pecans.
  • Bake in the preheated oven until the casserole is bubbling, about 30 minutes.
