FONDANT POTATOES
My buttery fondant potatoes, creamy smooth braised potatoes in the oven! I always want to try out new potato side dishes and these potatoes are to die for.

Steps:
- Peel the potatoes. You can use a dough cutter if you want the potatoes to be of the same shape. I used a sharp knife to make the sides even. This French technique is called 'turning' potatoes.
- Then trim the edges a little bit.
- Add the unsalted butter and the olive oil to a medium non-stick pan (one with a lid). Place it over medium heat until the butter and oil start to foam, then add the potatoes.
- Don't let the butter and oil burn. Bake the potatoes in it for a couple of minutes on both sides until a little browned. Drizzle regularly with the butter and oil. Season with a little pepper and salt. Then pour in the warm stock.
- Turn the heat lower and bring to to a light simmer. Then put a lid on the pan.
- Let the potatoes cook gently for about 15 to 20 minutes or until they are very smooth and soft on the inside. Check regularly if you don't have to add extra stock or water.
- You can grill the potatoes in the oven for a couple of minutes if you want to add more color to them. Remove the potatoes from the pan and serve.

CLASSIC FONDANT POTATO RECIPE
Steps:
- Gather the ingredients.
- Peel the potatoes and then rinse them under cold water. Slice off the narrow ends of each potato, discard, and cut each remaining potato in half, crosswise, to create a total of 6 potato cylinders of nearly equal size. Heat the oil in a dutch oven or a cast iron pan over high heat. When the oil is hot, sear both sides of each potato cylinder until golden brown, about 5 to 6 minutes.
- Lower heat to medium-high and add the butter pieces to the pan to melt around the potatoes. Cook for 5 minutes.
- Add the stock and simmer for 5 minutes.
- Finally, add the garlic and thyme sprigs. Cover with a tight-fitting lid, lower heat to medium-low, and simmer for 20 minutes. Insert a sharp knife into one potato to see if it's tender all the way to the center. If tender, the potatoes are ready; if not, cook a little longer.
- Serve the potatoes with your favorite roast, chops, or grilled steak. You can also strain the stock and butter from the cooked potatoes into a small saucepan and reduce the stock slightly to serve alongside the potatoes; it really makes a delicious sauce.

EASY FONDANT POTATOES RECIPE
As elegant and refined as fondant potatoes may look (and taste, of course), they aren't so complex to make at all.

- Peel the potatoes, then slice the top and bottom of them so they are straight.
- Place the olive oil into a cast iron skillet over medium-high heat.
- When the oil is hot, place the potatoes in it (flat side up), and cook until the potatoes begin to brown, around 7 minutes on each side.
- Add the butter, rosemary sprigs, thyme springs, garlic cloves, salt, and pepper, and cook for an additional 5 minutes, flipping the potatoes once.
- Meanwhile, preheat the oven to 350 F.
- Add the chicken broth to the skillet, then use a spoon to pour the broth over all of the potatoes so they are well-coated.
- Bake the potatoes for 1 hour.
- Take the skillet out of the oven, plate the potatoes, and serve warm.

- Slice the ends off the potatoes so they lie flat on either side.
- Heat the oil in a pan over a medium-low heat. When hot, add the potatoes cut-side down. Fry for 5-7 mins, or until deep golden brown, then flip and fry on the other side. Add the butter to the pan to melt.
- Scatter the garlic and herbs around the potatoes and season well. Carefully pour the stock around the veg, being aware of any hot butter that may splash out. Cover and simmer gently for 25-30 mins, or until the potatoes are tender, then serve.

EASY FONDANT DECORATIONS RECIPE BY TASTY

- Star: Sprinkle work surface with powdered sugar. Knead red Sugar Paste for a minute, until it folds easily and becomes more pliable.
- Use a rolling pin to roll sugar paste out to a thickness of 1 millimeter. Use a star-shaped cookie cutter to cut out stars.
- Use a pastry brush to brush off excess powdered sugar. Place a star on each cupcake.
- Bow: Sprinkle work surface with powdered sugar. Place a few drops of pink food coloring on the white Sugar Paste. Wearing gloves to prevent skin from staining, knead sugar paste until it is uniformly pink and texture is pliable.
- Use a rolling pin to roll sugar paste out to a thickness of 1 millimeter.
- Cut two strips that are 4x1 inches (10x3 cm) (these will be the sides of the bow). Roll up a paper towel to form 1 inch (2cm) wide cylinder. Fold a sugar paste strip over the rolled-up paper towel and press the two ends together (the paper towel will help keep the shape of the bow sides). Gently fold the pressed end into a slight wave shape. Repeat with the other strip and then press the two sides together to form the beginning of the bow shape. Carefully remove the paper towels.
- Cut one strip that is 2.5x1 inches (6x2 cm) wide (this will be the middle of the bow). Roll the long edges of the strip up slightly, then wrap the strip around the middle of the bow. Press the paste together behind the bow to seal and trim any excess with scissors.
- Cut two strips that are 2x½ inch (5x1.5 cm) wide (these will be the tails of bow). Cut a small diagonal piece off the top of one of the strips, then line up the two strips in the shape of a letter A with the diagonal edge pressed against the right edge of the other strip. On the bottom edge of the tails, cut out a small triangular piece to form a notch.
- Use a pastry brush to brush off excess powdered sugar from both the tails and the bow.
- Place the tails on the frosted cupcake first, then top with the rest of the bow.
- Leaves: Sprinkle work surface with powdered sugar. Place a few drops of green food coloring on the white Vahile Sugar Paste. Wearing gloves to prevent skin from staining, knead sugar paste until it is uniformly green and texture is pliable.
- Use a rolling pin to roll sugar paste out to a thickness of 1 millimeter.
- Select a mint leaf and press the leaf on the surface of the sugar paste, vein side down. Use a finger to gently press the leaf into the paste to create a print of the veins.
- Still holding the leaf in place, cut the leaf out using a paring knife, tracing around the leaf. Gently remove the mint leaf and the excess sugar paste around the cutout.
- Use a pastry brush to brush off excess powdered sugar from the leaf.
- Place leaf on a frosted cupcake.
- Flowers: Sprinkle work surface with powdered sugar. Cut off a quarter of the white Sugar Paste and set aside.
- Place a few drops of blue food coloring on the rest of the sugar paste. Wearing gloves to prevent skin from staining, knead sugar paste until it is uniformly pale blue and texture is pliable.
- Roll out half of the blue paste to a thickness of 2 millimeters. Use the wide end of a pastry tip to stamp out circles.
- Pinch off pieces of blue paste and roll into balls that are about the size of an ⅛ teaspoon. Spread a little bit of white frosting on a blue circle and place the balls around the circle, leaving a space in the middle (5-6 balls will fit - these will be the petals).
- Use the white sugar paste to roll another ball to place in the center of the flower. Gently press the edge of a paring knife into each blue petal to form a small notch.
- Use a pastry brush to brush off excess powdered sugar from the flower.
- Place flower on a frosted cupcake.

Fondant potatoes, also known as melting potatoes, are a classic French delicacy that seem like something only fancy chefs can whip up, but are actually quite simple to make. Yukon gold potatoes are cut into cylinders, pan-fried until crispy, then transferred to the oven to braise in a buttery herb bath for a crispy-on-the-outside texture that's deceptively creamy on the inside. - Preheat the oven to 400°F (200°C).
- Heat the canola oil in a large cast iron skillet over medium-high heat.
- Season the potatoes with salt, then add to the hot skillet, flat-side down. Sear for about 5 minutes, until golden brown, then flip and cook on the other flat side for another 5 minutes.
- Add the clarified butter, rosemary, thyme, and garlic to the skillet. Let the butter melt, then use a large spoon to baste the potatoes with the butter until coated, about 30 seconds.. Add the chicken stock and bring to a boil.
- Transfer the skillet to the oven and roast the potatoes for 35 minutes, or until tender.
- Spoon the pan sauce over the potatoes and garnish with freshly ground black pepper.

- Preheat oven to 425 degrees F (220 degrees C).
- Cut off ends of russet potatoes, stand potatoes on end, and peel potatoes from top to bottom with a sharp knife to make each potato into a uniform cylinder. Cut each cylinder in half crosswise to make 6 potato cylinders about 2 inches long.
- Place potatoes into a bowl of cold water for about 5 minutes to remove starch from outsides; pat dry with paper towels.
- Place a heavy oven-proof skillet (such as a cast iron skillet) over high heat. Pour in vegetable oil; heat oil until it shimmers slightly.
- Place potato cylinders with best-looking ends into the hot oil, lower heat to medium-high, and pan-fry potatoes until well-browned, 5 to 6 minutes. Season with salt and black pepper.
- Flip the potatoes onto the opposite ends. As they cook, use a paper towel held with tongs to carefully blot out the oil from the skillet. Add butter and thyme sprigs to skillet.
- Pick up a thyme sprig with tongs and use it to paint butter over the top of the potatoes. Cook until butter foams and foam turns from white to a pale tan color. Season with more salt and pepper. Pour chicken stock into skillet.
- Transfer skillet to preheated oven and cook until potatoes are tender and creamy inside, about 30 minutes. If potatoes aren't tender, add 1/4 cup more stock and let cook 10 more minutes.
- Place potatoes on a serving platter and spoon thyme-scented butter remaining in skillet over potatoes. Garnish with thyme sprigs. Let cool about 5 minutes before serving.
