Bourbon Sweet Potato Pie image

Celebrate the fall season with this bourbon-laced sweet potato pie. Take it to the next level, and top with bourbon-spiked whipped cream! It's easy to impress when you use ready-to-bake pie crust.

2 lb dark-orange sweet potatoes (2 medium)
1/2 cup packed brown sugar
2 eggs
1 cup half-and-half
2 tablespoons bourbon
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 Immaculate Baking Co.™ refrigerated ready-to-bake pie crust (from 15-oz box), softened as directed on box
1 cup cold heavy whipping cream
3 tablespoons powdered sugar
1 tablespoon bourbon
1/2 teaspoon vanilla

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil. Place sweet potatoes on cookie sheet; pierce several times with fork. Roast 45 to 60 minutes or until tender. Cool 5 minutes. Cut potatoes in half lengthwise. Scoop out pulp into medium bowl to measure 2 cups. Reserve any remaining pulp for another use; discard skins.
  • In food processor, place sweet potato pulp; cover and process until creamy. Add brown sugar, eggs, half-and-half, 2 tablespoons bourbon, the cinnamon, nutmeg and salt; cover and continue to process until well blended and smooth.
  • Place pie crust in ungreased 9-inch pie plate. Fold and roll pastry under, even with plate; flute as desired. Pour sweet potato mixture into crust-lined plate. Bake 10 minutes.
  • Reduce oven temperature to 350°F. Bake 30 to 35 minutes longer or until center is set and knife inserted in center comes out clean. Cover edges with foil if crust is getting too dark. Cool 30 minutes on cooling rack. Refrigerate 2 hours.
  • When ready to serve: In chilled medium bowl, beat whipping cream with electric mixer on medium-high speed until slightly thickened. Reduce speed to low; beat in powdered sugar, 1 tablespoon bourbon and the vanilla. Increase speed to medium-high; beat until stiff peaks form. Cut pie into slices; serve topped with whipped cream. Store covered in refrigerator.

2 medium or 3 small sweet potatoes (about 1 1/2 pounds)
3/4 cup heavy cream
6 tablespoons maple syrup
5 tablespoons brown sugar
4 tablespoons unsalted butter, melted
1/4 cup bourbon
3 large eggs
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon fresh grated nutmeg
1/4 teaspoon ground cinnamon
1/8 teaspoon ground clove
A few grinds of black pepper
1 baked 9-inch pie crust

Steps:

  • Heat oven to 425 degrees. With a fork, pierce sweet potatoes, and place on foil-lined baking sheet. Roast until soft, about 1 hour, turning once. Cool, peel, and put flesh through a food mill, or mash smoothly with a potato masher to make 2 cups of puree.
  • Reduce heat to 350 degrees. In a medium bowl, whisk puree and remaining ingredients to combine. Pour into prepared crust.
  • Place pie plate onto a cookie sheet, and bake until filling is just about set, or when a knife inserted one inch from the edge comes out clean, 45 to 50 minutes. Cool pie on wire rack to room temperature.

2 lbs sweet potatoes, peeled and cut into 1 1 & # 8260, 2-inch chunks
1/3 cup pure maple syrup
1/2 cup dark brown sugar, firmly packed
1 teaspoon vanilla
2 tablespoons butter, melted
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1/2 cup Bourbon
3 eggs
2/3 cup instant nonfat dry milk powder, crystals
1 cup water
1 pie shell, 9-inches and unbaked
1/2 pint heavy cream, sweetened and whipped
candied ginger, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • In a 3-quart saucepan, combine the sweet potatoes and enough water to cover them; heat to boiling over high heat. Reduce the heat to low; cover and simmer 15 to 20 minutes or until the potatoes are fork-tender. Drain well.
  • In large mixing bowl, use a potato masher to mash the sweet potatoes with maple syrup, brown sugar, vanilla, butter, salt, spices, eggs, and bourbon until well blended. (Sweet potatoes have a coarse texture to them, so there will be some very small lumps that give the filling a textured look.)
  • Stir the milk crystals into water and add to the sweet potato mixture; spoon into the pie shell. Bake in preheated oven for one hour or until filling is just set in the center. If necessary, cover the edge of the pie crust with foil during the last 20 minutes of baking to prevent overbrowning.
  • Cool the pie thoroughly on a wire rack to serve at room temperature, or cool slightly, then cover and refrigerate to serve cold later. Garnish with whipped cream and candied ginger.
  • Cook's Tip: This pie can also be made without using a crust. Pour ingredients into a buttered 9-inch pie plate and bake 40 minutes at 375 degrees F. or until knife inserted in center comes out clean.

1 large egg
1-3/4 cups mashed sweet potatoes
1/2 cup 2% milk
1/4 cup reduced-fat butter, melted
1 tablespoon bourbon
1-1/2 teaspoons vanilla extract
2/3 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 reduced-fat graham cracker crust (9 inches)
1/2 cup fat-free whipped topping

Steps:

  • In a large bowl, whisk the the first 7 ingredients until blended. In another bowl, combine the brown sugar, flour, cinnamon, salt, nutmeg and cloves; gradually beat into pumpkin mixture until blended. Pour into crust., Bake at 350° for 45-55 minutes or until a knife inserted in the center comes out clean. Cool completely on a wire rack. Garnish with whipped topping. Refrigerate leftovers.
