ZU'S FRIED APPLE PIES
These are simple and delicious. My kids can't stop eating them! I sometimes use canned apple pie filling and a little sugar and maybe add some ground cinnamon to pastry. Yum!

Steps:
- Place the apples into a saucepan with the sugar and cinnamon, and bring to a simmer over low heat. Cook the apples, stirring frequently, until soft, about 10 minutes; mash the apples with a fork to form a chunky applesauce. Set the apple filling aside.
- Whisk flour and salt together in a bowl, and cut in the shortening with a pastry cutter until the mixture resembles coarse crumbs. Stir in water until the dough is moistened, and knead several times just until dough holds together. Place dough onto a floured surface, pat into a round, and roll out 1/8-inch thick. Use a large round cookie cutter (4 inches in diameter) to cut the dough into 8 rounds.
- Place a heaping tablespoon of apple filling onto the center of a dough round, and use your finger to moisten the edge of the crust with cold water. Fold the dough over the filling, and crimp the edges with a fork to make a half-moon-shaped pie. Repeat with remaining dough and filling.
- Pour the oil into a skillet over medium-high heat, and gently lay 2 or 3 pies into the hot oil. Fry to a golden brown color, 2 to 3 minutes per side. Drain the pies on paper towels. Sprinkle a pinch of confectioners' sugar over each pie to serve. Allow to cool for at least 10 minutes before serving.

- Toast pita. Spoon apple mixture onto pita and top with a dollop of whipped topping.

I sort of made up this recipe, and it turned out to be pretty good. I was trying to imitate a pita with garlic butter sauce appetizer this one restaurant makes.

Steps:
- Preheat oven to 400 degrees.
- Peel, core and thinly slice apples. Place in bowl and sprinkle lemon juice over them. Toss and set aside.
- In skillet over medium heat melt butter and whisk in brown sugar.
- Put apples in butter and brown sugar mixture adding cinnamon, nutmeg and pinch of salt and stir together well.
- Turn heat down to low and cover cooking apples until tender approximately 10 minutes.
- Melt butter in microwave. Place pitas on baking sheet and lightly brush melted butter on top. Sprinkle sugar on melted butter.
- Place in oven and bake until sugar is melted. This happens quickly so do not take eyes off oven.
- As soon as pitas can be handled stuff with cooked apples and sprinkle with chopped walnuts.

- In a large saute pan, place apples and all other filling ingredients in over medium heat. You will cook the apples down, for about 10 minutes, until they begin to get nice and gooey. While this is cooking you can make the oat crumble topping.
- For the oat crumble topping: mix all ingredients in a medium sized bowl, cut in the butter and mix until a crumb begins to form.
- Cut pitas in half and line a baking sheet. Fill each pita halve with apple filling and lay pita on baking sheet on its side, being careful to not let apples fall out. Top with oat crumble. Repeat with remaining pitas.

- DOUGH: Combine flour, baking powder, egg, sugar and butter to make a dough. If the dough is too dry, add up to 1 Tbsp milk. Do not overwork the dough. Wrap it and cool in refrigerator for about 30 minutes.
