LOADED ROASTED POTATOES
These loaded roasted potatoes are delicious oven-roasted potatoes that are loaded with meat and cheese.

Steps:
- Preheat oven to 400°
- Lightly spray a 8x8 baking dish with a nonstick cooking spray.
- Place potatoes in baking dish and roast for 45-50 minutes or until potatoes are tender.
- While potatoes are roasting, add ground beef, onions and jalapeños to a large skillet or frying pan and cook over medium high heat until meat is no longer pink.
- Add garlic and cook for another minute or two. Drain and return to pan.
- Sprinkle taco seasoning over meat and add water and corn. Stir frequently and cook until hot.
- Remove potatoes from oven and spoon meat mixture over potatoes.
- Sprinkle both types of cheese over the top and bake until cheese has melted, about 5 minutes.
- Spoon into individual serving bowls and top with diced avocado, sour cream, cilantro, and green onions, if desired.
ROAST WITH POTATOES
Eye of round is one of the least expensive cuts of meat and is best when roasted.

- Preheat oven to 425 degrees. In a large saucepan, cover potatoes with water; bring to a boil, and add 1 teaspoon salt. Cook until potatoes are slightly soft on the outside, about 12 minutes. Drain; return to pan. Add 1/2 teaspoon salt and 1/2 teaspoon pepper. Shake pan to soften edges.
- Pour oil in a large roasting pan; place in oven. On a plate, mix together flour, dry mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Dredge beef in flour mixture, turning to coat all sides.
- Transfer potatoes to hot roasting pan; toss to coat. Place beef in center of pan; roll in oil, leaving fat side up. Roast until beef is 120 degrees. 40 to 45 minutes. Turn potatoes after 15 minutes of cooking.
- Remove potatoes and beef. Cover; let beef rest about 20 minutes before slicing thinly to allow temperature to reach 135 to 140 degrees for medium-rare.
- Place roasting pan over medium heat. Add broth; simmer, scraping bottom of pan, about 1 1/2 minutes. Serve sauce with beef and potatoes.
ROASTED POTATOES WITH GARLIC, LEMON, AND OREGANO
For perfect Roasted Potatoes with Garlic, Lemon, and Oregano there is no need to peel them, but I suggest that you halve them, because they taste best when they can absorb more sauce.

- Preheat oven to 400°F.
- Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
- Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
- Sprinkle with the fresh oregano and serve at once.
- Variation:
- Dissolve 1 tablespoon tomato paste in the stock, and reduce the amount of lemon juice to taste. Substitute Aleppo pepper or crushed red pepper flakes for the black pepper.
SMASHED POTATOES WITH ROASTED-GARLIC GRAVY

- Roast garlic and make stock:
- Preheat oven to 400°F.
- Separate 6 cloves from garlic (do not peel), drizzle with a little olive oil, and double-wrap tightly in foil. Roast until garlic is very soft, about 45 minutes.
- While garlic roasts, heat oil (2 tablespoons) in a 4-to 5-quart heavy pot over medium heat until it shimmers, then cook vegetables, remaining garlic cloves (separated but not peeled), bay leaf, and peppercorns, stirring occasionally, until browned, about 8 minutes. Stir in wine and boil until most has evaporated. Add soy sauce and water and simmer, uncovered, 30 minutes.
- Strain stock through a fine-mesh sieve into a large measuring cup. If you have more than 4 cups, boil to reduce; if less, add water.
- Boil potatoes:
- Unless they are very small, cut potatoes (peeled if desired) into 2-inch pieces. Generously cover with cold water in a 5-quart saucepan and add 2 teaspoons salt. Simmer, uncovered, until just tender, 12 to 15 minutes. Reserve 1/3 cup cooking liquid and stir butter and oil into it. Drain potatoes, then return to pan along with reserved liquid and coarsely mash. Season with salt and pepper and keep warm, covered.
- Make Gravy while potatoes cook:
- Mash roasted garlic to a purée.
- Melt butter in a heavy medium saucepan over medium heat. Stir in flour and garlic purée and cook, stirring, 2 minutes. Slowly add stock, whisking, then simmer 3 minutes. Season with salt and pepper.
ROASTED MELTING POTATOES

- Preheat the oven to 500 degrees F (260 degrees C) and place oven rack in upper-middle position. Grease a high-rimmed metallic baking sheet with butter.
- Combine melted butter, thyme, salt, and pepper in a bowl. Add potatoes and toss until fully coated. Place potato slices in a single layer on the prepared baking sheet.
- Roast in the preheated oven until slightly golden, about 15 minutes.
- Flip potatoes over and roast for another 15 minutes.

Steps:
- Peel the potatoes, use a small knife and aim to get even sized potatoes, but rather than curved, made from many flat surfaces; like a faceted jewel. They brown better with the many flat surfaces and they look 'old fashioned'.
- Heat a large roasting pan in a 200 C oven. (Fan forced best)
- Add the oil and then when that is hot
- Add the (dried if you've peeled then earlier and kept them under water) potatoes.
- Cook shaking them every ten minutes, for 30 min, then
- Add the stock
- And cook, (still giving the occasional shake) until the stock has been absorbed/evapourated.
- The potatoes will be very nicely browned, tender and deliciously meaty.
- Serve these with some grilled meat, and salad.

Steps:
- Set oven to 400 degrees (preferably convection bake).
- Line a cookie sheet or baking pan with foil that has been well sprayed with cooking spray.
- Dry the potatoes pieces well with a paper towel to remove any excess moisture.
- In a large bowl, combine the Italian salad dressing, olive oil and the minced garlic, mix well.
- Toss the potatoes in the mixture to coat well.
- Transfer the potatoes onto a greased cookie sheet.
- Season with salt and pepper and the grated Parmesan cheese.
- Bake in oven for 30-35 minutes.
- Turning occasionally to brown evenly and to prevent sticking.
- Test with fork, as potatoes might be done before 30 minutes (cooking time will vary depending on the size of your potatoes).
- Remove from oven.
- Season with additional Parmesan cheese 3-5 minutes before serving.
