DILL POTATO SALAD



Dill Potato Salad image

This tasty dill potato salad is just like Grandma's: it's bursting with fresh herbs and flavored with olive oil and vinegar.

3 pounds baby yellow potatoes
1/4 cup minced shallot (about 1 large)
1/4 cup fresh dill, minced
2 tablespoons fresh parsley
3 green onions, optional
1/4 cup white wine vinegar
1 teaspoon kosher salt
1/4 cup capers, drained
2 tablespoons olive oil
Fresh ground pepper

Steps:

  • Fill a large pot with cold water and add 1 tablespoon kosher salt. Add the whole potatoes and bring to a boil. When it comes to a boil, boil for about 5 to 8 minutes, depending on the size. Cook until fork tender (taste test to check).
  • Mince the shallot. Finely chop the dill and parsley. Thinly slice the green onions, if using.
  • When the potatoes are done, drain them. When they are cool enough to handle, slice them into bite sized pieces. Place the potatoes in a bowl and gently mix in the minced shallot, white wine vinegar, kosher salt, and 1/2 cup warm water. Let stand for 5 minutes, gently stirring occasionally. The potatoes will absorb the water as they stand.
  • Add the dill, parsley, green onions, drained capers, olive oil, and a few grinds black pepper. Taste and add additional salt if necessary (we added 1/4 teaspoon more). Serve warm or room temperature.

12 small new potatoes, scrubbed
½ cup butter, softened
2 tablespoons capers, chopped
1 tablespoon minced green onion
⅓ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon white wine vinegar
salt and pepper to taste

Steps:

  • Combine the softened butter, capers, green onion, Parmesan cheese, parsley and vinegar in a bowl. Set aside.
  • Bring a large pot of salted water to a boil. If potatoes are large, cut into halves or quarters. Add potatoes and cook until tender but still firm, 15 to 20 minutes. Drain.
  • Add the caper sauce to the pot of drained potatoes and toss gently to coat. Season to taste with salt and pepper.

Crunchy potatoes with dill & onions image

Roasties packed with flavour, and they're good for you too... try them with slow-roast lamb

1 ½kg Desirée potatoes , cut into roughly 1in chunks
3 tbsp olive oil
1 onion , as thinly sliced as you can
small bunch dill , roughly chopped

Steps:

  • Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
  • Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

(Patatas Con Alcaparras Y Eneldo) Note: An interesting variation on potato salad (the dressing includes orange juice, capers, and fresh dill) and always a good addition to a tapas menu.

1 1/2 lbs potatoes, preferably red waxy
1/2 cup olive oil
2 tablespoons fresh lemon juice
2 tablespoons orange juice
2 tablespoons onions, minced
2 tablespoons parsley, minced
1 tablespoon fresh dill, minced
4 teaspoons small capers
to taste salt
to taste pepper, Freshly ground
to taste fresh dill, for garnish

Steps:

  • Boil the potatoes in their skins in salted water until tender.
  • While the potatoes are cooking, make the dressing. In a small bowl mix together the oil, lemon juice, orange juice, onion, parsley, dill, capers, salt, and pepper. Let sit at room temperature.
  • Drain the potatoes, cool briefly, skin, then cut in slices about 1/8 inch thick.
  • Arrange in layers in a serving dish, pouring some of the dressing over each layer and sprinkling with salt.
  • Marinate for several hours at room temperature, carefully turning occasionally with a metal spatula.
  • Serve at room temperature, decorated with a sprig of dill.

3 sprigs fresh rosemary, each broken into 4 pieces plus more for garnish
3 large garlic cloves, halved
1 1/2 teaspoons coarse kosher salt
3 tablespoons drained capers

Steps:

  • Preheat oven to 400°F. Arrange potatoes in single layer on large rimmed baking sheet. Drizzle with oil; sprinkle with rosemary pieces, garlic, and salt; toss to coat. Roast until potatoes are tender, stirring every 15 minutes, about 45 minutes total. Mix in capers. Roast until flavors blend, about 5 minutes longer. Season with pepper. Transfer to bowl. Garnish with rosemary sprigs.
