Chicken in a Pot image

This dish uses just one skillet to prepare. Quick, easy and delicious. Tomato paste and chicken broth combine to make a tasty sauce. Garnish with fresh parsley.

¾ cup chicken broth
1 ½ tablespoons tomato paste
¼ teaspoon ground black pepper
½ teaspoon dried oregano
⅛ teaspoon salt
1 clove garlic, minced
4 boneless, skinless chicken breast halves
3 tablespoons dry bread crumbs
2 teaspoons olive oil
2 cups fresh sliced mushrooms

Steps:

  • In a medium bowl, combine the broth, tomato paste, ground black pepper, oregano, salt and garlic. Mix well and set aside.
  • Dredge the chicken in the bread crumbs, coating well. Heat the oil in a large skillet over medium high heat. Saute the chicken in the oil for 2 minutes per side, or until lightly browned.
  • Add the reserved broth mixture and the mushrooms to the skillet and bring to a boil. Then cover, reduce heat to low and simmer for 20 minutes. Remove chicken and set aside, covering to keep it warm.
  • Bring broth mixture to a boil and cook for 4 minutes, or until reduced to desired thickness. Spoon sauce over the chicken and serve.

1/4 cup EVOO
2 carrots, chopped
1 onion, chopped
2 to 3 ribs celery, chopped with leafy tops
3 to 4 cloves garlic, thinly sliced
Zest and juice of 1 lemon
About 3 tablespoons rosemary, chopped
6 small pieces bone-in, skin-on chicken breast
Salt and pepper
1 cup dry red or white wine
2 tablespoons tomato paste
1 cup chicken stock
Crusty bread

Steps:

  • In a pot, combine EVOO with the carrots, onion, celery, garlic and lemon zest and juice. Season the chicken with salt and pepper on both sides, turn in the vegetables and oil and cover. Refrigerate for 3 to 4 hours.
  • Return to room temp.
  • Place a pot over medium-high heat and brown the chicken 15 to 20 minutes. Add the wine and reduce for a few minutes. In a small bowl, stir together the tomato paste with 1/4 cup hot water, then add to the sauce along with the stock. Bring to a boil, then reduce the heat and simmer 20 to 30 minutes more to cook through. Cool and store.
  • Reheat over medium heat. Serve with crusty bread.

1 1/2 cups low-sodium chicken broth
1/3 cup dry white wine
1 whole chicken (3 to 4 pounds), rinsed and patted dry (giblets removed)
1 tablespoon butter, room temperature
Coarse salt and ground pepper
2 leeks (white and light-green parts only), halved lengthwise, rinsed well, and cut into 2-inch pieces
10 baby carrots or 5 carrots, halved if large and cut into 2 1/2-inch lengths
5 garlic cloves, unpeeled
1 tablespoon extra-virgin olive oil
1 pound new potatoes, halved (quartered if large)

Steps:

  • Preheat oven to 450 degrees. In a 5-quart Dutch oven or heavy pot, combine broth and wine. Rub chicken all over with butter and season generously with salt and pepper. Tie legs together with kitchen twine. Place chicken in pot. Bake, uncovered, 30 minutes.
  • In a large bowl, toss leeks, carrots, and garlic with oil; season with salt and pepper. Remove pot from oven and add vegetables. Bake until chicken's juices run clear when pierced between breast and leg or an instant-read thermometer inserted in thickest part of a thigh (avoiding bone) registers 165, 35 to 45 minutes. Let chicken rest 10 minutes.
  • Meanwhile, set a steamer basket in a large pot filled with 2 inches boiling water. Place potatoes in basket, cover, and steam until tender, about 15 minutes. Season with salt and pepper. Carve chicken and serve with vegetables and pan juices.

6 skinless chicken thighs
1 onion, sliced
1 carrot, sliced
6 peppercorns
1 bay leaf
1 pinch ground mace
1 pinch cayenne pepper
1/4 teaspoon freshly grated nutmeg
200 g unsalted butter, softened

Steps:

  • Place chicken thighs, onion, carrot, peppercorns and bay leaf in a pan and add 2 cups of water.
  • Bring to the boil, skimming of any foam.
  • Reduce heat and cover and simmer for 30 minutes.
  • Remove the chicken then rapidly boil the remaining liquid until it has reduced to about 1/4 cup.
  • Strain though a fine sieve and allow to cool.
  • Remove the chicken flesh from the bones.
  • Place the flesh in a food processor with the liquid and process until smooth.
  • Add the mace, cayenne and nutmeg and also 150g of the butter.
  • Season to taste with salt and pepper and process until well combined and smooth.
  • Put the chicken in a 750ml ceramic dish.
  • Melt the remaining butter and pour the yellow clarified butter onto the surface of the chicken leaving the while milk solids in the pan.
  • Refrigerate for at least 2 hours until the butter sets.

1 chipotle pepper from a can of chipotles in adobo sauce ( (leave the pepper whole))
1 Tablespoon adobo sauce ( (from the can of chipotles))
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon paprika
1 teaspoon salt
½ teaspoon ground black pepper
2 pounds boneless, skinless chicken breasts

Steps:

  • In the bottom of the Instant Pot pot, mix together chicken broth, onion, garlic, pepper, adobo sauce, chili powder, cumin, oregano, paprika, salt, and pepper.
  • Place the chicken breasts in the bottom of the Instant Pot and make sure that the chicken is mostly covered by the sauce.
  • Place lid on top of Instant Pot and turn valve to SEALING. Press MANUAL button (or PRESSURE COOK button) and set timer to 15 minutes (22 minutes if chicken is frozen).
  • When chicken is finished cooking, move valve to VENTING and do a quick release of the pressure.
  • Remove chicken and transfer to a plate or cutting board (leaving liquid in the pot).Shred or slice the chicken.
  • You can use the chicken in tacos, burritos, on top of salads, or even in a bowl.
  • To assemble your own bowl, place rice in the bottom of the bowl. Top with cooked chicken, pinto or black beans, guacamole, corn, pico de gallo, and shredded cheese.

Steps:

  • chop the chicken into bite size pieces, cut the pancetta the same, peel the garlic and hit with the back of a knife, roughly chop the coriander, deseed and finly slice the chilli pepper, add salt & pepper to taste with 3 tbsp of olive oil, mix and cover with cling film, place in fridge for a minimum of 3 hours(overnight is best).
  • Heat a pan with 1 tbsn of olive oil with a knob of butter, add the marinated chicken and pan fry until golden brown, remove from heat and place contents on kitchen towel to drain and cool.
  • pre heat oven to 180C/ fan 160C/ gas 5
  • Get 2 large ramikens and place half the chicken and bits in each, pour over the cream and tap each ramiken on a work surface, reapeat this until cream is approx 10mm from top, place breadcrumbs on top with a knob of butter then sprinkle some cayenne pepper over.
  • place ramekins on a oven tray and bake until breadcrumbs are golden brown, or 15-20 mins.
  • Remove from oven and place on a plate with a mixed leaf salad and a balsamic dressing, sit back and enjoy..
