ORANGE AND HONEY GLAZED SHRIMP
A delicious, quick and easy recipe of tender, plump shrimp bathing in a sweet n' spicy orange glaze served with jasmine rice.

- In a medium saucepan, bring the orange juice, zest, honey, soy sauce, and red pepper flakes to a boil. Reduce heat to medium.
- In a small bowl, combine the water and cornstarch. Whisk mixture into the saucepan. Simmer 5 minutes until thickened and bubbly.
- Keep sauce warm on medium-low heat while sautéing the shrimp.
- Heat 2 tablespoons of olive oil in a cast-iron skillet or high-rimmed, large sauté pan over medium-high heat.
- Season shrimp with salt and pepper. Add half of the shrimp to the pan. Cook until just opaque in center, about 2 minutes on each side.
- Transfer shrimp to a medium bowl. Cover with foil to keep warm. Ditch oil in the skillet and wipe with a paper towel.
- Heat the remaining 2 tablespoons in the skillet. Repeat cooking the remaining shrimp, about 2 minutes per side.
- Return the first batch of shrimp to the pan. Stir in the orange honey glaze.
- Remove pan from heat. Add green onions (reserve some for garnish), parsley and cilantro. Season to taste with salt and pepper.
- Serve shrimp with cooked rice. Garnish with extra parsley, cilantro and sliced green onions. Enjoy!

Steps:
- Wash shrimp well and submerge in cold water in a bowl; set shrimp aside.
- Place cornstarch, garlic powder, salt, and black pepper in a large plastic bowl with a tight-fitting lid, close the lid, and shake several times to mix. Place half the wet shrimp into the container, cover, and shake to coat shrimp with cornstarch mixture. Remove shrimp to a platter and repeat with remaining shrimp.
- Heat canola oil in a large skillet over medium heat until the oil is hot and shimmering but not smoking. Tap excess cornstarch from the shrimp and pan-fry in batches until shrimp are opaque inside and brown and crisp outside, 2 to 3 minutes per side. Drain cooked shrimp on paper towels while you fry the remaining shrimp.
- Clean skillet and pour in honey; bring to a boil over medium heat and stir in orange zest, lemon juice, and cayenne pepper. Serve hot shrimp on a serving platter drizzled with honey sauce to taste.

- Mix the oil, orange zest and juice, honey, soy and vinegar in a bowl, then combine the cornflour, sesame seeds, five-spice and a pinch of salt in another bowl. Run a small knife down the back of each prawn, so they butterfly out as they cook, helping more sauce stick to them.
- Toss the prawns through the cornflour mixture. Heat the oil in a large wok or frying pan. When it's very hot, add the garlic. Sizzle for 10 secs, but don't let it brown. Add the prawns and any flour and seeds left in the bowl. Stir-fry over a high heat for a few minutes, until the prawns are pink and the sesame seeds are golden. Tip the prawns onto a plate and pour the sauce mixture into the wok. Bubble for a few minutes until thickened. Add the prawns back to the wok and stir to coat in the sauce. Heat through for another 30 seconds. Top with spring onions and serve with rice.

This is from a New Zealand Magazine which highlighted the food of Cuba!? Anyway this is a flavourful dish to serve with steamed rice.

Steps:
- Clean and shell the prawns.
- Season with salt, pepper and ginger.
- Heat oil in frying pan, add butter.
- When oil is hot add prawns sauteeing for two minutes.
- Remove from heat and drain on paper towel.
- Discard oil from pan, reheat and slowly add honey, allowing it to colour slightly.
- Return prawns to pan to coat in the honey.
- When covered with the caramelised honey remove and place and warm serving plate.
- Reheat pan and slowly add orange juice.
- Turn up heat to allow sauce to reduce by half.
- Pour over prawns and serve.
- You can add toasted almonds and slices of orange for presentation.

CARAMELISED ORANGE AND GINGER BUTTER TROUT
A flavouring for fish: Loch Etive Trout, Salmon or Sea Bass. This works best in my opinion with the large Loch Trout, rather than Rainbow Trout, but if using Rainbow - use the whole fish as you would with Sea Bass.

- Grate the zest and squeeze the juice from 1 navel orange.
- Take about a 1 ½ inch square hunk of fresh root ginger and slice it thinly and then chop it fairly finely.
- Melt a teaspoon of the butter in a wok or pan.
- Then put the orange zest, juice, and the chopped ginger into the wok - or pan, with the melted butter.
- Turn the heat up, but watch and stir it carefully - so that it doesn't burn but the ginger cooks properly. About 3 to 5 minutes.
- At the last minute, when it all looks nicely cooked add about half a teaspoon of suger, and stir that in,
- Take off the heat as soon as the sugar has combined properly - i.e. no longer crunchy.
- Cool the result in a plastic container in the fridge.
- Then add about 2 to 3 tablespoons of cold butter, mix it well in and put it in the freezer to hurry the solidifying for no more than an hour, or leave overnight in the fridge if you have the time.
- Cut 2 large slits in a tail fillet of Loch Etive Trout, then stuff the butter into the slits in the fish. Sprinkle the fish with sea salt and freshly ground black or rainbow pepper. Rainbow peppercorns are a mixture of Black Peppercorns, White Peppercorns, Pimento, Green Peppercorns and Pink Peppercorns - and makes for a milder, almost fruity taste compared to Black Peppercorns alone. (A tail fillet of Salmon or a whole small Sea Bass can replace the Trout.).
- Cook the fish in foil in the oven at 200 degrees C for 25 to 30 minutes depending on your oven.
- This serves 1 person as a main meal, try it served with baby leeks and baby corn cobs microwaved in lemon flavoured olive oil with wild black onion seeds and cumin seeds and salt and pepper. And maybe some noodles.
- Or multiply the number of fish for each person and serve at a dinner party.
- This amount of the caramelised butter will fill 4 fish.
