AMARETTO PRAWNS/SHRIMP APPETIZER
Here for safe keeping from the Junior League of San Francisco in their San Francisco Encore cookbook. The recipe states "This rich and sweet dish is ideal in small portions as a first course to a candlelit dinner."

Steps:
- Shell prawns, leaving tail intact, and devein.
- Melt butter in a large skillet and add prawns, cooking 4-5 minutes.
- Remove from pan and set aside.
- Mix together the lemon and orange peel (zests), the lemon and orange juices, the brandy, and the Amaretto and bring to a boil in the pan.
- Add the heavy cream and continue cooking until slightly reduced and thick enough to coat the prawns.
- Return the prawns to the pan and cook until heated through.
- Season to taste with salt and pepper,.
- Arrange prawns 4 to a plate, in a circular pattern with the tails pointing inches.
- Mask with the sauce and serve immediately.

Steps:
- Coat prawns with flour. Melt butter in small skillet. Add prawns and saute until browned on both sides. Remove from pan and add brnady, amaretto, wine, orange juice and peel. Cook stirring until liquid is shiny and reduced. Add cream to sauce, heat until sauce is slightly thickened. Add back prawns, sprinkle with parsley.
PRAWN & TOMATO PASTA
Quick & easy prawn pasta made with fresh veg & basil. Serves 2

Steps:
- Preheat the oven to 180 degrees.
- Prepare vegetables; cut tomatoes into medium sized chunks, slice red onion finely. Put vegetables in roasting tray; sprinkle with sugar and half the olive oil, then season with salt & pepper. Put the tray on the middle shelf of the oven for approx. 30 minutes (Ensure that the juices don't evaporate!).
- Bring a pan of water to the boil; add a pinch of salt then cook pasta as per instructions.
- Crush garlic. Fry in pan with remaining oil on low heat until fragrant. Add prawns, and lemon juice. Cook for 2 minutes, flipping prawns until they are just pink on both sides, then add the tomato mixture to frying pan. Stir frequently and add just a dash of pasta water to the mixture - this will help thicken it up.
- Season the prawn & tomatoes with salt and pepper to your taste and cook for a further 4-5 minutes.
- Drain pasta & add with basil leaves to the tomato mixture. Stir to coat the pasta and serve.
GARLIC PRAWNS
This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

Steps:
- In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
- Heat an outdoor grill to high heat.
- Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.
- If desired, reserve marinade; transfer to a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Serve with prawns.

AMARETTO SHRIMP

- 1. In a large skillet, melt the butter over medium heat. 2. Add amaretto, almonds, sugar, cinnamon and cayenne pepper and stir until the sugar dissolves. 3. Add shrimp and cook for 3 to 5 minutes, just until pink. 4. Serve over rice or noodles.
