1 large onion (finely minced)
2 medium carrots (chopped)
5 cloves garlic (minced)
1 1/2 lb ground chicken or turkey
2 sprigs rosemary
2 cups tomato sauce (such Pomodoro or Marinara)
1 lb Rigatoni (or any other pasta)
1 c Parmesan (grated)
3 tbsp olive oil
salt, pepper

Steps:

  • Bring a large pot of salted water to a boil and cook pasta according to the packaging instructions.
  • Meanwhile heat olive oil in a large non-stick skillet or Dutch oven. Add onion and carrots and saute for 5 minutes stirring from time to time.
  • Add ground chicken and cook stirring occasionally for 10 minutes until liquid evaporates and meat starts to brown. Add garlic and cook for additional 1 minute. Stir in tomato sauce, rosemary, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and bring Ragu sauce to a simmer.
  • Add cooked pasta along with 1/4-1/2 cup of pasta cooking water if necessary to get the creamy texture of the pasta.
  • Stir in Parmesan cheese and serve immediately.

Ragu Sauce Chicken Pasta Recipe is a one pot, creamy, comforting and perfect for a weeknight flavorful and affordable dinner.

2 jars (24 ounces each) Ragu Pasta Sauce
9-10 drumsticks
1/2 cup olive oil
1 large onion (chopped)
15-20 Garlic cloves (minced)
1 cup heavy whipping cream
4 rosemary sticks
3 dried chili peppers
salt
pepper
1 box of spaghetti
crumbled feta
chopped parsley
chopped basil

Steps:

  • Preheat oven to 375F.
  • Place a large dutch oven on the stove over medium heat, once the dutch oven its warm add the olive oil. Once the oil is hot add the chopped onion and cook for 3 minutes, stirring occasionally, add the minced garlic and dried chili peppers, cook for 3-4 minutes stirring occasionally. Add the chicken and cook for 8-9 minutes on one side, than flip on the other side and cook for another 8-9 minutes. The chicken must be golden brown.
  • Add 1 cup of heavy cream over the chicken to deglaze the pan, add salt and pepper to your own taste. Pour the Ragu Pasta Sauce over the chicken and gently stir until combined.
  • Add rosemary sticks on top, cover with a lid and transfer to the oven, cook for 40 minutes.
  • minutes before serving bring a large pot of water to a boil, add to the water 1 teaspoon of salt and 1 tablespoon of olive oil and cook in it the spaghetti. Usually ready in 11-13 minutes.
  • Remove the baked chicken from the oven, drain the spaghetti using a colander, and serve the chicken over pasta, making sure to top it with a lot of the sauce.
  • Any leftover pasta can be added to the sauce and saved for later.

  • Place all ingredients EXCEPT for the cheese in cooker in order listed. Add enough water to just barely cover all ingredients and push the pasta under the surface, but DO NOT STIR. 2 tablespoons olive oil
1 rack baby back ribs (about 2 1/4 pounds), cut into 2-rib sections
Table salt and ground black pepper
1 pound hot Italian sausage links
2 medium onions, chopped fine (about 2-cups)
1 1/4 teaspoons dried oregano
3 tablespoons tomato paste
4 medium garlic cloves, minced or pressed through garlic press (about 4-teaspoons)
2 (28-ounce) cans crushed tomatoes
2/3 cup beef broth
1/4 cup fresh basil leaves, chopped
MEATBALLS:
2 slices hearty white sandwich bread, crusts removed and bread cut into 1/2-inch cubes
1/2 cup buttermilk (Six tablespoons of plain yogurt thinned with 2 tablespoons of milk can be substituted for the buttermilk.)
1/4 cup fresh parsley leaves, chopped
2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
1 large egg yolk
1/2 teaspoon table salt
1/4 teaspoon crushed red pepper flakes
1 pound meatloaf mix* (I used a combo of ground beef and pork)
2 ounces thinly sliced prosciutto, chopped fine
1 ounce Pecorino Romano, grated (about 1/2 cup)
1/2 cup olive oil
PASTA:
1 1/2 pounds spaghetti or linguine
2 tablespoons table salt
Grated parmesan cheese for serving

Steps:

  • Notes: I made the meatball mixture, first, since my pressure cooker time was 45 minutes. If using the stove top method, you will have 2-1/2 hours of time to make the meatballs-- which are absolutely delicious on their own! Note: Prosciutto and cheese are added to the meatball mixture to mimic the flavor of the brasciole. Sauce: Pressure cooker method: Do not preheat the oven, as you won't be using it. Using browning cycle, follow steps 1 to 6 (below). Traditional method: Adjust oven rack to lower- middle position and heat oven to 325°F Heat oil in large Dutch oven over medium-high heat until just smoking. Pat ribs dry with paper towels and season with salt and pepper. Add half of ribs to pot and brown on both sides, 5 to 7 minutes total. Transfer ribs to large plate and brown remaining ribs. After transferring second batch of ribs to plate, brown sausages on all sides, 5 to 7 minutes total. Transfer sausages to plate with ribs. Reduce heat to medium, add onions and oregano; cook, stirring occasionally, until beginning to brown, about 5 minutes. Add tomato paste and cook, stirring constantly, until very dark, about 3 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Meatballs: Meanwhile, combine bread cubes, buttermilk, parsley, garlic, egg yolk, salt, and red pepper flakes in medium bowl and mash with fork until no bread chunks remain. Divide mixture into 12 pieces; roll into balls, transfer to plate, cover with plastic, and refrigerate until ready to use. Cook meatballs: Add meatballs and cook until well browned all over, 5 to 7 minutes. Transfer meatballs to paper towel-lined plate to drain briefly. Oven version: Remove sauce from oven and skim fat from top with large spoon. Transfer browned meatballs to sauce and gently submerge. Cover, return pot to oven, and continue cooking until meatballs are just cooked through, about 15 minutes. Pressure cooker version: When the pressure cooker beeps, release the pressure and carefully remove the lid. Skim fat from top with large spoon. Transfer browned meatballs to sauce and gently submerge. Replace the lid, and lock it, and pressure cook for 3 minutes. Release the pressure and carefully remove the lid. Pasta: Meanwhile, bring 6 quarts water to boil in large pot. Add pasta and salt and cook until al dente. Reserve 1/2 cup cooking water; drain pasta and transfer back to cooking pot. To serve: Using tongs, transfer meatballs, ribs, and sausage to serving platter and cut sausages in half. Stir basil into sauce and adjust seasoning with salt and pepper. Toss pasta with 1 cup sauce and reserved pasta cooking water so that sauce lightly coats pasta. Serve pasta, passing remaining sauce and meat platter separately.

This is a delicious meal-in-a-pot that's ready in less than an hour. The cooker does all the work except for prep, so don't be concerned about the time. This hearty stew tastes and looks long-cooked, a real husband-pleaser :-). Note: I developed this recipe for the Wolfgang Puck 6-quart electronic pressure cooker that used to be sold on HSN (Home Shopping Network on TV). I'm sure it would be quite easy to adapt for stove-top pressure cookers or other brands of electronic ones. Enjoy!

1 whole chicken, 3 to 3 1/2 pounds
2 (14 1/2 ounce) cans chicken broth
3 cups onions, diced
3 cups carrots, diced
1 (28 ounce) can tomatoes with juice, whole
1 tablespoon Worcestershire sauce
1/2 cup wine, sherry, white, blush
6 ounces pasta, uncooked
2 tablespoons oil, vegetable, olive
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/2 teaspoon dried herbs, rosemary, thyme
1 loaf bread, French, Italian

Steps:

  • Truss chicken and brown on all sides in oil in separate pan on top of stove.
  • Put chicken in cooker, breast side down.
  • Saute carrots and onions in pan on top of stove.
  • Deglaze pan with 1 can chicken broth and add entire contents of saute pan to the cooker.
  • Cut tomatoes into smaller pieces if desired.
  • Add tomatoes with juice to cooker.
  • Add worcestershire and season with salt, pepper and rosemary or thyme to taste.
  • Top up with water.
  • Do not exceed the "max PC" line when filling cooker.
  • Put cover on cooker and set to "seal."
  • Select meat function and set timer on cooker to 25 minutes.
  • After 25 minutes, unplug cooker and let the pressure drop.
  • Open cooker when pressure has dropped.
  • Remove chicken from cooker and remove all meat and skin from the bones.
  • Discard bones and skin.
  • Shred the meat.
  • Put glass cover on cooker and plug inches It should go into the "heat" mode.
  • Select "meat" mode and set timer on cooker to 20 minutes.
  • Bring broth and vegetables to a boil. Add pasta and 1 can chicken broth. Cook uncovered until pasta is tender.
  • Turn off heat and let cooker cool for 5 minutes.
  • Add chicken.
  • Stir and serve with crusty bread.
  • Ladle into serving bowls and sprinkle with parmesan or romano cheese, if desired.
