Sweet Potatoes with Coconut, Pomegranate, and Lime image

This dish adds tropical flavor to a nutrient-rich sweet potato by topping it with cilantro, coconut flakes, and pomegranate seeds.

4 sweet potatoes
1/2 cup light coconut milk
1/4 toasted unsweetened coconut flakes
2 tablespoons chopped cilantro
1 cup pomegranate seeds
Kosher salt
Lime wedges

Steps:

  • Heat oven to 400 degrees. Arrange sweet potatoes, pricked with a fork, on rimmed baking sheet and roast until tender, about 45 minutes. Let cool slightly.
  • Slice tops and mash sweet potatoes with a fork. Divide coconut milk, coconut flakes, cilantro, and pomegranate seeds among sweet potatoes. Season with salt. Garnish with additional sprigs of cilantro and serve with lime wedges.

2 lb sweet potatoes, peeled and cut into 3/4-inch pieces
3 tablespoons extra-virgin olive oil
3/4 teaspoon salt
1/4 teaspoon cayenne
1/2 teaspoon finely grated fresh lime zest
1 tablespoon fresh lime juice
1/4 cup chopped fresh cilantro

Steps:

  • Put oven rack in lower third of oven and preheat oven to 425°F.
  • Toss sweet potatoes with 2 tablespoons oil and 1/4 teaspoon salt in a shallow baking pan. Arrange potatoes in 1 layer and roast, stirring halfway through roasting, until tender, about 25 minutes total. Stir together cayenne, zest, and remaining 1/2 teaspoon salt in a small bowl. Whisk together lime juice and remaining tablespoon oil in a medium bowl, then add potatoes. Sprinkle with cayenne mixture and cilantro, stirring gently to combine.

4 medium sweet potatoes (about 2 1/2 pounds), scrubbed well
2 tablespoons extra-virgin olive oil
2 teaspoons ground cumin
1 teaspoon hot paprika
1 teaspoon ground ginger
Coarse salt and freshly ground white pepper
Lime wedges, for serving
Yogurt Dipping Sauce for Spicy Sweet Potatoes with Lime, for serving

Steps:

  • Preheat oven to 400 degrees. Heat a baking sheet in the oven until hot, about 15 minutes. Meanwhile, slice sweet potatoes in half lengthwise; slice each half into 3 wedges. Place in a medium bowl, and toss with oil, cumin, paprika, and ginger. Season with salt and pepper.
  • When baking sheet is hot, remove from oven. Arrange sweet potatoes in a single layer on sheet. Return to oven; cook until potatoes are crisp and golden on the bottom, about 15 minutes. Turn, and continue cooking until golden all over, about 15 minutes more.
  • Remove from oven; season with salt and pepper. Serve with limes and sauce.

Sweet potatoes love to be oven roasted, but dicing and sauteing them allows you to get that charred yet deeply sweet flavor in a fraction of the time. The coconut here acts like a breadcrumb, providing a crispiness that's spiked with chile flakes and garlic. It's a simple (and one-pan!) fall or winter side dish that's both hearty and bright.

1/3 cup unsweetened grated coconut
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
4 tablespoons olive oil
3 medium sweet potatoes, cut into 3/4-inch cubes
1 teaspoon kosher salt
1 tablespoon fresh lemon juice, plus more to taste

Steps:

  • Mix the coconut, garlic and red pepper flakes together in a small bowl.
  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the coconut mixture and cook, stirring occasionally, until the coconut and garlic are fragrant and the coconut has turned golden, 5 to 10 minutes. Transfer the mixture to a plate.
  • In the same skillet (no need to wipe it out), heat the remaining 3 tablespoons oil over medium-high heat. Add the sweet potatoes and salt. Toss to coat the sweet potatoes in the oil (be careful not to spatter the oil). Arrange the potatoes in a single layer and let cook, stirring occasionally so that all sides get browned, until the sweet potatoes are slightly charred and soft enough to pierce with a fork, about 10 minutes.
  • Remove from the heat and immediately mix in the coconut mixture, tossing to coat evenly. Just before serving, stir in the lemon juice. Taste and add more lemon juice, if needed.
