CORN ON THE COB - PRESSURE COOKER RECIPE

Steps:
- Husk the corns, cut off the bottom "stub" and wash well.
- To the pressure cooker base add the water, and arrange the corn vertically, with the larger end in the water and the smaller end up - if the ear is too tall lay it diagonally or snap it in half and put the wider end onto the base of the pressure cooker. Do not crowd the corn cobs - leave space around ears for steam to get there and cook the kernels evenly.
- Close and lock the lid of the pressure cooker.
- Electric pressure cookers: Cook for 2 minutes at high pressure. Stovetop pressure cookers: Turn the heat up to high and when the cooker indicates it has reached high pressure, lower to the heat to maintain it and begin counting 1 minute pressure cooking time.
- When time is up, open the pressure cooker with the Normal release - release pressure through the valve.
- Serve with lots of butter and salt.

PRESSURE COOKER CORN ON THE COB
Why didn't we think of using our pressure cooker for corn? This makes cooking corn seriously easy. And, it turns out perfect. Crisp and juicy, just slather a bit of extra butter (if you want) plus a hint of salt and you have corn perfection.

- 1. Use as many ears of corn as needed for your dinner. If possible stand the ears of corn up, inside the pressure cooker's removable container.
- 2. Add sugar (if chosen) to the 1/2 cup of water. Dissolve first and then add to container. Then add the 1/4 cup of butter (if chosen) and put into the bottom of the container beneath the ears of corn.
- 3. Close lid, turn and secure lid. Check that the pressure valve is in the right spot and plug in the pressure cooker. Set the manual timer to the number of minutes needed. 1 ear = 1 minute. 4 ears = 4 minutes 6 ears = 6 minutes and so on. Add a little more water if you put more than 6 ears of corn on the cob. It takes mine about 1 to 2 minutes to heat before the pressure and timer kicks in with 4 ears of corn on on the cob.
- 4. When the time is up, unplug machine and do the quick release (so the corn will not cook any extra) Quick release on mine: turn valve to release pressure. Make sure that the steam (release) from this is not pointing in a direction that will cause a problem. This takes less than a minute and then when you see that there is no more pressure or steam coming from the valve, open and serve. If the lid will not open give it a few more seconds. The corn will be sweet (with the sugar), buttery and steamed and not soggy Season to taste!
- 5. I set my pressure cooker on top of the stove on a flat grill when I am going to use it and before I release the steam, I turn on the overhead vent fan to remove the steam. Make sure that you do not turn any burners on that could ruin your pressure cooker! No hot kitchen :o)

- In the Instant Pot, add the trivet and 1.5 cups of water. Layer the shucked corn on top of the trivet and criss-cross each new level. Secure the lid and hit “Manual” or “Pressure Cook” High Pressure for 3 minutes for 2-5 pieces and 4 minutes for 6-8 pieces. Quick release when done.
- While the corn is cooking, make the sauce by mixing together the mayo, sour cream, cotija cheese, dried cilantro, chili powder and lime juice.
- Using tongs, transfer the corn to a plate. Insert wooden skewer sticks into the bottom of each corn cob for support and brush the sauce generously on each piece.
- For A Roasted Touch: After cooking the corn in the Instant Pot, do not sauce it yet. Drain the liner pot, return it and add the fryer basket. Add the air fryer lid and hit Broil (400 degrees) for 10-15 minutes and hit Start. Roast to your liking!OR turn the oven to broil and place corn on a foil-lined baking sheet and broil for a few minutes (about 2-5 but keep an eye on it so it doesn’t burn much as ovens vary). When roasted, slather the corn with the sauce and top with additional cotija cheese, cilantro and squeezed lime if you so desire just before serving.
