Hearty and saucy, this potato salad is an old family recipe that was updated using cream of potato soup to ease preparation. 8 bacon strips, finely chopped
1 large onion, chopped
1 pound smoked kielbasa or Polish sausage, halved and cut into 1/2-inch slices
2 pounds medium red potatoes, cut into chunks
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup sauerkraut, rinsed and well drained
1/2 cup water
1/4 cup cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon to drain. Saute onion in drippings for 1 minute. Add sausage; cook until lightly browned. Add potatoes; cook 2 minutes longer. Drain., Transfer sausage mixture to a 3-qt. slow cooker. In a small bowl, combine the soup, sauerkraut, water, vinegar, sugar, salt and pepper. Pour over sausage mixture. Sprinkle with bacon. Cover and cook on low until potatoes are tender, 6-7 hours.

quick creamy german potato salad that is made in a pressure cooker. It is take out of the "The Pressure Cooker Cookbook" by Toula Patsalis. I use lower fat turkey sausage. I have tried regular sausage in this recipe and it makes the salad too greasy. I normally dice the radishes and bell peppers in small pieces. I use about a half a pepper. I have substituted regular yellow mustard for dry mustard. Black pepper seems to be ok to use as well.

3 slices bacon or 3 turkey bacon, cut into 1-inch pieces
1 medium onion, cut into slices
2 garlic cloves, crushed
1/3 cup chicken broth
1/3 cup white wine vinegar
3/4 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon dried dill weed
5 medium potatoes, peeled and cut into 1/2 inch slices
1 lb turkey sausage or 1 lb bratwurst
1/2 cup sour cream
1/2 teaspoon dry mustard
1 green bell pepper, minced
4 radishes, thinly sliced
1/3 cup parsley, minced

Steps:

  • In a pressure cooker, saute bacon 2 minutes or until crisp. Stir in onion and garlic and cook 2 minutes. Add broth, vinegar, salt, pepper and dill and mix thoroughly. Add potatoes and sausage and still well. Secure lid on pressure cooker. Over high heat, develop steam to medium-high pressure. Reduce heat and maintain pressure and cook for 4 minutes. Release pressure according to manufacturer's directions. Remove lid.
  • Stir potato-sausage mixture carefully but thoroughly. Add sour cream, mustard, bell pepper, radishes and parsley, tossing gently to mix.
  • Pour salad in serving bowl and serve warm or chilled.

1 tablespoon balsamic vinegar
2 to 3 sprigs fresh thyme, leaves stripped from stems
1 teaspoon Dijon mustard
1 garlic clove, lightly crushed with the side of a knife blade and quartered
1 tablespoon honey
1 teaspoon salt
1/4 teaspoon ground black pepper
3/4 cup olive oil
1 tablespoon olive oil
1/2 pound pork sausage
1 pound green beans, trimmed, cut into 1-inch pieces and blanched
3 tablespoons chopped fresh chives (about 9 chives), divided
4 to 6 freshly sliced scallions, white and tender green parts only
8 large red bliss potatoes (about 3 pounds), scrubbed, cut into 1-inch wedges, and boiled until tender

Steps:

  • For the dressing:
  • Through the feed opening of a running blender add, 1 at a time, apple cider vinegar, balsamic vinegar, thyme, Dijon mustard, garlic, honey, salt, and ground black pepper. Leaving the blender running, slowly add the olive oil in a thin stream. Set aside until needed.
  • For the Salad:
  • Heat the olive oil over medium-high heat in a saute pan and brown sausage. Remove to a cutting board and slice into 1/4-inch pieces, then return to pan and cook over medium heat until cooked through. Using a slotted spoon, remove to paper towels to drain.
  • Combine sausage, green beans, 2 tablespoons of the chives, and scallions in a large bowl. Add enough dressing to coat. Then gently fold in potatoes, taste and add enough dressing as needed. Do not feel compelled to use all of the dressing. Serve family style, garnished with remaining chives, and with any extra dressing on the side.

1/2 cup apple cider vinegar
2 tablespoons honey
Kosher salt and freshly ground black pepper
5 pounds large Yukon gold potatoes, quartered (about 12)
10 slices bacon, cut into 1/2-inch pieces
1/4 cup whole-grain mustard
1 bunch scallions, thinly sliced (about 1 cup)

Steps:

  • Whisk 2 cups water, 1/4 cup of the vinegar, 1 tablespoon of the honey, 1 tablespoon salt and 1/2 teaspoon pepper in the insert of a 6-quart slow cooker. Add the potatoes and stir to combine. Cover with a lid and cook on low heat until the potatoes are tender but not falling apart, about 4 hours.
  • Turn off the heat and drain the potatoes well. Transfer the potatoes back to the slow cooker insert and cover with a lid to keep warm.
  • Add the bacon to a large skillet set over medium heat. Cook, stirring, until the bacon is brown and crispy, 4 to 5 minutes. Remove the skillet from the heat and use a slotted spoon to transfer the bacon to a paper-towel-lined plate. Discard all but 4 tablespoons of the bacon drippings. Add the mustard, the remaining 1/2 cup vinegar and 1 tablespoon honey to the skillet and whisk. Pour the dressing in the slow cooker along with half of the bacon and the scallions, reserving 2 tablespoons for topping. Gently stir to combine, and season with additional salt and pepper if needed. Transfer the potato salad to a large serving platter or bowl and top with the remaining bacon and reserved scallions to serve.

3 tablespoons vegetable oil
4 medium red onions, thinly sliced (4 cups)

6 medium very firm potatoes
1/2 lb low-fat kielbasa
2 tablespoons cider vinegar
2 tablespoons brown sugar
1/2 teaspoon Dijon mustard
salt
freshly ground black pepper
chopped fresh dill

Steps:

  • In a large frying pan, heat the butter and 1 tablespoon of the oil over medium-high heat.
  • Add the onions, thyme, and caraway seeds.
  • Sauté 2-3 minutes, or until the onions begin to soften.
  • Lower the heat, cover, and cook, stirring occasionally, 20-30 minutes, or until the onions are tender but not browned.
  • While the onions are cooking, place the potatoes in a large pot, cover with water, and bring to a boil over high heat.
  • Lower the heat and simmer, covered, 15 minutes.
  • Pierce the kielbasa several times with a fork, add to the potatoes, and simmer 10 minutes, turning several times.
  • Drain, cool slightly, and then slice the potatoes and kielbasa into ½“ pieces- place in a large bowl.
  • In a small bowl, whisk together the remaining oil, vinegar, brown sugar, and mustard.
  • Season with salt and pepper.
  • Drizzle this mixture over the potatoes and kielbasa and mix well.

1 pound tiny new potatoes
8 ounces low-fat chicken sausage, preferably with Italian seasoning
1 tablespoon flour
3 tablespoons white vinegar
1 1/2 teaspoons sugar
1/2 teaspoon celery seed
1/2 cup water
1 large pimento to yield 1/4 cup chopped
2 scallions
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Scrub potatoes and cook in water to cover until potatoes are done, about 17 minutes. If tiny new potatoes are not available, use large ones, scrub and cut into eighths. Cook about 10 minutes.
  • Cut sausages into tiny pieces.
  • Heat nonstick pan and saute until sausages are cooked, about 7 minutes.
  • Mix flour with a little of the vinegar to a smooth paste. Stir in remaining vinegar until smooth; stir in sugar, celery seed and water, and set aside.
  • Drain potatoes, and cut into bite-size pieces.
  • Chop pimento; trim and thinly slice scallions.
  • Stir flour mixture into sausages with potatoes, and stir until mixture thickens. Stir in pimento and scallions.
  • Season with salt and pepper.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

Steps:

  • Cook bacon in 12-inch skillet over medium-high heat, stirring frequently, until brown and crisp; remove from skillet with slotted spoon and drain on paper towels. Cook onions and celery in bacon drippings 5 to 8 minutes over medium-high heat, stirring frequently, until crisp-tender. Sprinkle with salt, celery seed and pepper. Cover and refrigerate bacon.

Increase heat setting to High. Cover and cook 20 to 30 minutes or until potatoes have thickened. Sprinkle with parsley. Potato salad will hold on Low heat setting up to 2 hours; stir occasionally.
