INSTANT POT® BEEF STEW WITH RED WINE

Instant Pot® Beef Stew with Red Wine image

Delicious family recipe I was able to make in my electric pressure cooker! I only have a 3-quart Instant Pot® so if you have a 6-quart plus, you can double the recipe.

Time 1h15m

Yield 4

Number Of Ingredients 17

4 tablespoons all-purpose flour
1 ½ tablespoons Italian seasoning
1 ½ tablespoons onion powder
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ pounds beef stew meat, cubed
2 ¾ cups beef broth
1 cup dry red wine
2 tablespoons tomato paste
3 cloves garlic, minced
1 cup chopped red potatoes
1 medium white onion, quartered
½ cup chopped carrots
½ cup chopped celery
2 sprigs fresh rosemary
1 bay leaf
½ (8 ounce) package egg noodles

Steps:

  • Combine flour, Italian seasoning, onion powder, salt, and pepper in a gallon-sized resealable plastic bag. Shake to mix seasoning. Add beef to bag, seal, and shake to coat.
  • Select Sear function on a multi-functional electric pressure cooker (such as Instant Pot®) according to manufacturer's instructions. Add coated beef cubes and sear until lightly browned on all sides, 7 to 10 minutes. Pour in broth and red wine. Add tomato paste and garlic. Stir in potatoes, onion, carrots, celery, rosemary, and bay leaf.
  • Close and lock the lid. Select Stew setting and set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Serve alongside beef stew.

Time 4h

Yield 12

Number Of Ingredients 24

½ (750 milliliter) bottle dry red wine
2 sprigs fresh thyme
12 juniper berries
2 bay leaves
3 ½ pounds well-marbled beef stew meat, cut into large pieces, or more to taste
8-inch square of cheesecloth, or as needed
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
6 juniper berries
4 whole cloves
1 teaspoon dried orange peel
salt and freshly ground black pepper to taste
4 tablespoons vegetable oil
3 tablespoons olive oil
3 stalks celery, cut into large chunks
3 large carrots, cut into large chunks
2 onions, cut into large chunks
3 cloves garlic, minced
3 tablespoons tomato paste
1 large Idaho potato, peeled and diced
½ (32 fluid ounce) container chicken broth, or as needed
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme, or to taste

Steps:

  • Combine wine, thyme, juniper berries, and bay leaves in a large bowl. Mix well and add meat; stir to coat. Cover and refrigerate at least 2 hours, or up to 1 day.
  • Create bouquet garni by placing cheesecloth square on a work surface and adding thyme, rosemary, bay leaves, juniper berries, cloves, and orange peel on top. Tie cheesecloth into a bundle and set aside until ready to use.
  • Strain and reserve marinade from meat. Drain meat on a plate lined with paper towels; pat until very dry. Sprinkle meat with salt and pepper.
  • Add 2 tablespoons vegetable oil to a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil until shimmering. Add 1/2 of the meat and brown gently on both sides, 5 to 7 minutes. Transfer meat to a plate lined with paper towels and repeat with remaining oil and meat. Turn pot off. Return all meat to the pot.
  • Heat olive oil in a large skillet over medium heat. Add celery, carrots, onions, and garlic and cook, stirring gently, until softened and golden, about 10 minutes. Increase heat and add tomato paste. Cook, stirring, until fragrant and sizzling, 1 to 3 minutes more. Add reserved marinade, potato, and bouquet garni bundle to the skillet. Bring to a boil and cook, bubbling fiercely, until thickened and syrupy, 5 to 10 minutes.
  • Pour vegetable mixture into the Instant Pot® with the meat. Pour in enough chicken broth to cover ingredients halfway. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Use a fork to mash some of the carrots and potatoes into the liquid in the pot. Taste and adjust salt and pepper as needed. Garnish each serving with a sprinkling of parsley and thyme.

SLOW-COOKER BEEF STEW

Slow-cooker beef stew image

Cook beef stew in a slow cooker for really tender meat. Add button mushrooms or smoked paprika for extra flavour - it will be an instant family favourite

Provided by Lulu Grimes

Categories     Dinner, Main course, Supper

Time 4h20m

Number Of Ingredients 13

1 onion, chopped
2 celery sticks, finely chopped
2 tbsp rapeseed oil
3 carrots, halved and cut into chunks
2 bay leaves
½ pack thyme
2 tbsp tomato purée
2 tbsp Worcestershire sauce
2 beef stock cubes or stock pots
900g beef for braising such as skirt, buy a whole piece and cut it yourself for bigger chunks or buy ready-diced
2 tsp cornflour (optional)
½ small bunch parsley, chopped
buttery mash, to serve (optional)

Steps:

  • Fry the onion and celery in 1 tbsp oil over a low heat until they start to soften - about 5 mins. Add the carrots, bay and thyme, fry for 2 mins, stir in the purée and Worcestershire sauce, add 600ml boiling water, stir and tip everything into a slow cooker. Crumble over the stock cubes or add the stock pots and stir, then season with pepper (don't add salt as the stock may be salty).
  • Clean out the frying pan and fry the beef in the remaining oil in batches until it is well browned, then tip each batch into the slow cooker. Cook on low for 8-10 hrs, or on high for 4 hrs.
  • If you want to thicken the gravy, mix the cornflour with a splash of cold water to make a paste, then stir in 2 tbsp of the liquid from the slow cooker. Tip back into the slow cooker, stir and cook for a further 30 mins on high. Stir in the parsley and season again to taste. Serve with mash, if you like. Leave to cool before freezing.

  • Mix together 3/4 cup flour with 1 tsp salt and 1/2 tsp pepper. Toss the 2 # beef chunks in the flour until it is completely coated. Set aside.
  • In a dutch oven, cast iron pot, or sturdy pot with a tight fitting lid, warm 2 tbsp olive oil over medium heat. Brown all the beef, working in batches to not over crowd the pot. Set the browned pieces on a plate to the side.
  • In the now empty pot, saute the 1 chopped yellow onion and 4 chopped garlic cloves for 1-2 minutes, stirring constantly so they don't burn.
  • Deglaze the pot with 3 cups of red wine (don't use the whole bottle yet, you will need the remaining red wine to thicken the stew at the end), scraping up all the browned bits at the bottom of the pot. Stir in the 2 tbsp worcestershire sauce, 1 tbsp beef base, 1 tbsp + 1 tsp sugar, 1 tsp salt, 1/2 tsp black pepper, 1 bay leaf, and the browned beef with juices. Let that simmer together for 5 minutes.
