The simplest and most savory way to dress up chicken breasts for a quick supper is just to top them with mayonnaise, sprinkle with Parmesan cheese and bread crumbs, and bake. Dinner will be ready in 30 minutes or less.

¼ cup grated Parmesan cheese
4 (5 ounce) boneless, skinless chicken breast halves
4 teaspoons Italian seasoned dry bread crumbs

Steps:

  • Preheat oven to 425 degrees F.
  • Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl.
  • Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  • Bake 20 minutes or until chicken is thoroughly cooked.

This recipe was inspired by a wedding reception that I attended. The original was stuffed with a creamy white cheese (possibly Gouda). I omitted the cheese on the inside, and instead opted to add Parmesan to the outside. This is delicious! Crunchy on the outside and moist on the inside. The measurements for the marinade are an estimate.

1 cup light olive oil
3 cloves garlic, minced
1 tablespoon chopped fresh basil
1 ½ teaspoons dried rosemary
1 teaspoon ground thyme
ground black pepper to taste
4 skinless, boneless chicken breast halves
7 ounces hard sourdough pretzels
⅔ cup freshly shredded Parmesan cheese
1 ½ teaspoons dried parsley
½ teaspoon garlic powder

Steps:

  • Whisk together olive oil, minced garlic, basil, rosemary, thyme, and black pepper in a bowl.
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1 inch.
  • Transfer chicken breasts to the bowl with the olive oil marinade; cover and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pretzels and Parmesan cheese into a food processor; pulse until the pretzels are finely crushed and combined with cheese.
  • Mix in parsley and garlic powder by pulsing once or twice. Transfer the mixture to a shallow dish.
  • Remove chicken from the marinade, and shake off excess. Discard the remaining marinade.
  • Press chicken into pretzel mixture, coating both sides.
  • Arrange coated chicken in a baking dish. Sprinkle about 1 tablespoon additional pretzel mixture on top.
  • Bake chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Cover chicken with a foil tent and allow to rest for 10 to 15 minutes before slicing and serving.

2 boneless, skinless chicken breast halves
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Canola oil, for grilling
1/2 cup mayonnaise
1/2 cup whole-grain Dijon mustard
1 cup finely crushed pretzels
1/3 cup grated Parmesan

Steps:

  • Preheat a grill pan over medium-high heat.
  • Cut each piece of chicken lengthwise into 6 slices. Thread each strip through a bamboo skewer. Sprinkle the chicken generously with salt and pepper.
  • Using a rag and tongs, generously oil the grill pan. Place the chicken skewers on the grill. Cook the chicken until lightly charred and cooked through, 2 to 3 minutes per side. Remove the skewers from the grill to a plate or sheet tray and cover to keep warm.
  • In a small bowl stir together mayonnaise and mustard. Put the crushed pretzels onto a large plate and combine with the grated cheese.
  • Brush a chicken skewer with the Dijon mayonnaise, then roll into the pretzel and cheese mixture to coat completely. Repeat with remaining chicken skewers and serve with extra Dijon mayonnaise for dipping.

¼ cup pretzels
2 tbsp Parmesan cheese, grated
1 tbsp butter, melted
3 tbsp honey mustard
2 tbsp green onion, finely chopped
½ tsp each salt and pepper
1 egg, beaten
4 boneless, skinless chicken breasts
4 slices black forest ham

Steps:

  • Preheat the oven to 375ºF (190ºC). Chop the pretzels into small pieces; discard fine pretzel dust. Toss the pieces with the Parmesan and butter; set aside. Cut each chicken breast through the center, leaving one side intact, so it opens like a book. Stir the mustard with the green onion, salt and pepper. Brush all over the inside of the chicken. Place a slice of ham in the centre of each piece; fold over to enclose.
  • Brush the tops of the chicken with egg and sprinkle with the pretzel mixture over top; press lightly to adhere. Arrange chicken on a foil-lined baking sheet. Bake for 25 minutes or until an instant-read thermometer registers 165ºF (74ºC) when inserted into the center of the largest chicken breast.
