PRIME RIB CEDAR PLANK ROASTED
This marvelous recipe appeared in our local paper and came from Ron Shewchuk's Cookbook, Planking Secrets. It is extremely important not to overcook a superb roast such as this one. Use a good meat thermometer to check the internal temperture.

Steps:
- In a bowl, combine garlic powder, onion powder, coarse black pepper, dried rosemary and cayenne pepper; mix well.
- Take the roast out of the fridge at least one hour prior to cooking so that the roast adjusts to room temperature.
- Season roast on all sides with Kosher salt.
- Coat the roast with Dijon mustard.
- Sprinkle the chopped rosemary evenly over the roast.
- Now sprinkle the entire roast generously with the dry rub mixture.
- Drizzle olive oil over the entire roast, use more olive oil if necessary.
- Pat the oil, rosemary and dry rub into the roast.
- Preheat the barbecue grill on medium-high heat for 10 minutes or until the chamber reaches 500°F.
- The cedar plank should be at least 3/4 inch thick, 7 1/2 inches wide and 16 inches long.
- Rinse the cedar plank and place it directly on the grill.
- Cover the grill and heat the cedar plank for about 4 minutes or until it starts to throw off a bit of smoke and crackles lightly.
- Reduce the heat to medium-low.
- Lay the rosemary twigs across the plank to make a bed for the roast.
- Place the roast on the rosemary and cover the grill.
- Cook for 1 1/2 to 2 hours, until the core of the roast reaches an internal temperature of 125°F.
- Keep testing the internal temperature with a good barbecue meat thermometer.
- When the roast reaches the desired temperature, remove from the grill along with the cedar plank.
- Tent loosely with aluminum foil and let rest for a least 30 minutes or up to 1 hour.
- The long resting period gives you plenty of time to grill some veggies.
- Serve some good freshly made horseradish with the prime rib roast.
- NOTE: Purchase a cedar plank at your lumber yard outlet. Make sure that it is NOT TREATED.
- The cost of the plank is much less expensive when you purchase at the lumber yard.

ROAST PRIME RIB WITH GARLIC HERB BUTTER RECIPE BY TASTY
Here's what you need: bone in prime rib, kosher salt, freshly ground black pepper, unsalted butter, lemon zest, kosher salt, small garlic cloves, fresh parsley, fresh rosemary, freshly ground black pepper

- Preheat the oven to 225°F (105°C). Set a wire rack over a rimmed baking sheet.
- Season the prime rib all over with the salt and pepper.
- Make the garlic herb butter: In a small bowl, mix together the butter, lemon zest, salt, garlic, parsley, rosemary, and pepper until well combined.
- Transfer butter to a sheet of plastic wrap and roll into a log. Twist the ends to seal well. Refrigerate at least 1 hour, or until ready to serve.
- Set the prime rib on the prepared baking sheet and place in the oven for 3½-4 hours, until the internal temperature reaches at least 130°F (55°C), or 15° less than your desired final temperature - no less than 145°F. Remove from the oven and let rest for 30 minutes.
- Increase the oven temperature to 500°F (260°C).
- Return the prime rib to the oven for 5-10 minutes, or until a brown, crispy crust forms on the surface. Remove from the oven.
- To carve, use a boning knife to cut along the inside of the rib bones, separating them from the roast, then separate the ribs. Slice against the grain of the rest of the roast into ½-inch slices.
- Slice the butter into ¼-inch thick rounds.
- Serve the prime rib immediately with the butter rounds on top.

EASY PRIME RIB ROAST
I'm new to cooking, and I recently purchased a rib-eye roast, and had no idea what it was. I put a few ingredients together and cooked it and to my surprise, it was the best prime rib I've ever had. I thought I would share it with you. Hope you enjoy!

Steps:
- Mix garlic, rosemary, sage, thyme, salt, and pepper together in a small bowl. Pat garlic mixture over entire roast. Make an incision down the middle of the roast, keeping parallel with the bones. Place the roast in a plastic roasting bag and pour Worcestershire sauce and soy sauce into the bag, concentrating on the incision in the roast. Tie the bag and refrigerate roast to marinate, turning often, at least 2 hours.
- Remove roast from refrigerator and allow to come to room temperature, 1 to 2 hours. Remove roast from bag and discard marinade. Place roast, fat-side up, in a roasting pan.
- Preheat an oven to 500 degrees F (260 degrees C).
- Bake in the preheated oven for 15 minutes. Lower heat to 350 degrees F (175 degrees C) and continue cooking until an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let roast stand for 20 minutes before slicing.

- On a cutting board, thoroughly blot the prime rib with paper towels to absorb any moisture.
- Generously season the prime rib all over with salt and pepper.
- Place the prime rib in dish with tall sides and set in the refrigerator uncovered to rest for at least 2-4 hours, or overnight.
- Transfer the prime rib to a roasting rack set inside a roasting pan and let come to room temperature for 1 hour before roasting.
- Preheat the oven to 450˚F (230˚C).
- Roast the prime rib for 30 minutes.
- Reduce the oven temperature to 325˚F (160˚C).
- Continue roasting the rib for 11 minutes per pound, until the internal temperature of the roast reaches 120˚F-125˚F (45-50˚C), for medium rare.
- Remove the rib from the oven, tent with foil, and let rest for 30 minutes.
- Transfer the roast to a cutting board and carve.
- Enjoy!
