¾ cup drained and chopped sauerkraut
1 ½ cups buttermilk
⅔ cup butter
1 ¾ cups packed light brown sugar
2 teaspoons vanilla extract
2 eggs
⅔ cup unsweetened cocoa powder
2 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift cocoa, flour, baking powder, baking soda and salt together and set aside. In a separate small bowl, combine buttermilk with sauerkraut and set aside.
  • In a large bowl, cream butter, brown sugar and vanilla until light and fluffy. Add eggs and beat in. Add flour mixture alternately with sauerkraut mixture. Beat only until blended.
  • Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for about 45 minutes, or until toothpick inserted into cake comes out clean. Cool cake and frost with your favorite chocolate frosting.

1 ½ cups white sugar
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsweetened cocoa powder
3 eggs
1 ¼ teaspoons vanilla extract
1 cup water
½ cup drained and chopped sauerkraut

Steps:

  • Cream shortening and sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  • In another bowl, whisk together flour, baking soda, baking powder, salt and cocoa. Add flour mixture to creamed ingredients alternately with the water, ending with dry ingredients. Mix well until smooth. Blend in sauerkraut.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Top with Fluffy Creamy Frosting.

3/4 cup butter, softened
1-1/2 cups sugar
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup water
1 cup sauerkraut, rinsed, drained, squeezed dry and finely chopped
2/3 cup sweetened shredded coconut
1/2 cup finely chopped pecans
FILLING/FROSTING:
2 cups semisweet chocolate chips, melted
2/3 cup mayonnaise
2/3 cup sweetened shredded coconut, divided
2/3 cup chopped pecans, divided

Steps:

  • In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to the creamed mixture alternately with water. Fold in sauerkraut, coconut and pecans. Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 20-24 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks; cool completely. , In a bowl, combine melted chocolate and mayonnaise. Set aside 1-1/4 cups for frosting. To the remaining chocolate mixture, add half of the coconut and pecans; spread between cake layers. Spread reserved chocolate mixture over top and sides of cake. 1/2 cup baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda

2/3 cup butter or 2/3 cup regular margarine
1 1/2 cups sugar

1 teaspoon vanilla
1 cup water
2/3 cup sauerkraut, rinsed, drained, coarsely chopped
1 ounce semisweet chocolate
3 ounces cream cheese, softened
1 tablespoon milk
1 cup confectioners' sugar
1/8 teaspoon salt
1/2 teaspoon vanilla extract

Steps:

  • Sift together the flour, cocoa, baking powder, baking soda and salt; set aside.
  • Cream together the butter and sugar in a bowl until light and fluffy, using an electric mixer set at medium speed.

Steps:

  • Heat oven to 350°F
  • Melt 4 oz. chocolate as directed on package; set aside. Combine flour and baking soda. Beat granulated sugar and 1/2 cup butter in large bowl with mixer until light and fluffy. Add eggs, 1 at a time, mixing well after each addition. Blend in melted chocolate and 1 tsp. vanilla.
