CHEWY CINNAMON COOKIES
These are yummy cinnamon cookies made with graham cracker crumbs. If you want a little variation, throw in a bag of butterscotch chips. My kids love them plain. I find it easiest to freeze the dough in logs, then slice and cook them as I want them. Enjoy!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Stir together graham cracker crumbs, flour, cinnamon, baking soda, and salt in a mixing bowl; set aside.
- Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat in the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla. Mix in the flour mixture. Scoop the dough out onto ungreased baking sheets by rounded spoonfuls.
- Bake in the preheated oven until slightly browned at the edges, 9 to 11 minutes.

CINNAMON COOKIES
These are one of the best cookies I have ever eaten. They make up easily, and they disappear fast. I make these every year when we put up our Christmas Tree. I serve them with hot Cocoa while we decorate our tree. I swear the cookies are anticipated as much as the tree!

Steps:
- In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
- Combine flour, cinnamon, baking powder and salt.
- Add to butter mixture.
- Blend well.
- Cover and refrigerate 2 hours or till firm enough to roll into balls.
- Shape dough into small balls about 3/4-inch in diameter.
- Roll in cinnamon sugar to coat.
- Set cookies 1-inch apart on lightly greased cookie sheets.
- Bake at 350° for 10 minutes or till the edges are lightly browned.
- Cool slightly on pans, then remove to racks to cool completely.

Steps:
- Combine the flour, yeast, salt, and 1/3 cup sugar in the container of a food processor fitted with the steel blade and process for 5 seconds. Add the 2 tablespoons butter and the egg and pulse a few times, until well combined. With the machine running, drizzle most of the milk through the feed tube. Process just until a dough ball forms; add more milk, 1 teaspoon at a time, if necessary.
- Knead by hand on a lightly floured surface for a minute or two longer, adding a little more flour or milk if necessary, until the dough is silky smooth and elastic.
- Butter a bowl; place the dough in it. Cover and let rise until doubled in bulk, at least 2 hours. (Hasten the process by putting it in a warm place.).
- Roll out the dough into a 1/2-inch-thick rectangle. Brush liberally with the 4 tablespoons butter (melted), then spread with a mixture of the 1/2 cup of sugar and the cinnamon. If you like, dot it with about 3/4 cup raisins or nuts (I didn't). Roll it up, lengthwise, then cut into 1- to 1-1/2-inch thick slices.
- Place in a buttered 12-compartment muffin tin and let rise until puffy, about 1 hour.
- Preheat the oven to 400°F.
- Brush the tops of the rolls lightly with melted butter and sprinkle with sugar. Bake until nicely browned, about 20 minutes.

- Put the butter in a saucepan and allow it to melt over medium heat. Once it’s almost fully melted, add the milk and water. Bring mixture to a simmer, then remove from heat and let cool to 125 degrees F. Add the vanilla.
- Meanwhile, combine 1 cup of the flour, yeast, sugar, egg and salt in a bowl. Add the warm milk mixture, then add remaining flour 1/4 cup at a time, stirring to make a soft, slightly sticky dough.
- Put the ball of dough into a food processor fitted with a kneading hook and let the processor knead the dough until smooth and elastic. Note: The processor works pretty quickly. My dough is done in less than 3 minutes. Check dough, scraping it a bit, every 40 seconds or so to make sure it’s not too warm from friction of processor.
- Scrape the dough into a well-oiled bowl and roll it around so it’s coated with a thin layer of oil. Cover and let rise until doubled in bulk (about 45 minutes with the quick rising yeast).
