CINNAMON-CANDY COOKIES
I was trying to make a unique Christmas cookie inspired by my brother's love of Red Hots, so I used the candies for cinnamon flavor in these lacelike cookies. -Wendy Rusch, Cameron, Wisconsin

Steps:
- Place Red Hots in a food processor; process until fine and powdery. Add flour; pulse to combine., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour mixture. Shape into two 8-in. rolls; wrap each roll in waxed paper. Refrigerate until firm, about 1 hour., Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake until edges are just lightly browned, 7-9 minutes. Cool on pans 2 minutes before removing to wire racks to cool completely., For frosting, in a small bowl, beat confectioners' sugar, butter, extract, salt and enough milk to reach desired consistency. Decorate cookies as desired., Freeze option: Place wrapped logs in a freezer container; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake and decorate cookies as directed.

CINNAMON SUGAR BUTTER COOKIES II
This recipe is meant to mimic a Mrs. Fields cookie - for those times you can't get to the mall cookie shop!

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Combine the 3 tablespoons white sugar and the cinnamon in a small bowl and set aside.
- Blend dark brown sugar and white sugar in a large bowl with mixer on medium speed. Add butter and blend until grainy. Add eggs and vanilla extract, mixing until light and fluffy.
- Whisk flour, baking soda and salt together in a separate bowl. Add to sugar mixture, mixing at low speed just long enough to combine. Overmixing makes tough cookies!
- Roll dough into 1inch balls, then roll each ball into cinnamon-sugar to coat. Place cookies on ungreased cookie sheets and bake at 300 degrees F (150 degrees C) for 18 to 20 minutes. Remove from sheets and let cool on racks.

CINNAMON COOKIES

- Make cookies:
- Sift together flour, cinnamon, and salt.
- Pulse walnuts with 2 tablespoons sugar in a food processor until finely ground (be careful not to grind to a paste).
- Beat together butter and remaining sugar with an electric mixer until pale and fluffy. Beat in eggs until combined. Mix in flour mixture and nuts at low speed just until blended. Form dough into a disk and chill, wrapped in plastic wrap, until firm, about 1 hour.
- Preheat oven to 325°F.
- Keeping remaining dough chilled, roll out half of dough 1/4 inch thick on a lightly floured surface. Cut out cookies with a 2 1/2- to 3-inch floured cookie cutter. Chill scraps.
- Arrange cookies 1 inch apart on greased baking sheets.
- Bake cookies in batches in middle of oven until firm but not browned, about 10 minutes. Transfer cookies to a rack to cool. Make cookies with remaining dough in same manner, rerolling scraps no more than twice.
- Ice and decorate cookies:
- Whisk together powdered egg whites and water, then stir in confectioners sugar and lemon juice until smooth and spreadable.
- Spread a thin layer of icing on 1 cookie with a metal spatula or knife and sprinkle lightly with walnuts. (Use your imagination and decorate more elaborately if you like.) Decorate remaining cookies in same manner. Let icing harden, about 1 hour, before storing cookies.
CINNAMON SHORTBREAD COOKIES
My ex M-I-L had this recipe scribbled on the flyleaf of one of her family cookbooks and no one knew what it was, one year we made it and it was her mom's infamous shortbread cookies. I thought I'd lost the recipe when I divorced, but I found it online (with food processor instructions no less!) and wanted to share. I like bigger cookies so I don't get as many out of the recipe, some friends can get 5 dozen out of theirs. Prep time includes chilling, and it can vary.

Steps:
- Preheat oven to 350 degrees; lightly grease baking sheets.
- Place flour, cinnamon, and salt in work bowl of food processor; pulse five or six times until blended.
- Remove to a small bowl.
- Process butter and brown sugar about 30 seconds, scraping down sides once or twice, until light and fluffy.
- Add egg yolk and process about 10 seconds to blend.
- Add flour mixture and pulse six to eight times, just until blended.
- Wrap dough in plastic wrap and chill at least one hour or overnight (Dough may also be frozen up to a month).
- Roll out dough, half at a time, to 1/8-inch thick.
- Cut with cookie cutter and place cookies two inches apart on baking sheets.
- Sprinkle with sugar.
- Bake seven to eight minutes until firm and just beginning to darken at edges.
- Cool on wire racks.

- Preheat the oven to 175 degrees celsius (351 degrees fahrenheit) and line a flat tray with parchment paper.
- In a big bowl, mix together the butter, white sugar, brown sugar and mix until light and fluffy, then mix in the egg and vanilla.
- Sift in the dry ingredients together : flour, cornflour, baking powder, baking soda and cinnamon. Mix until successfully reached cookie batter consistency.
- In a small bowl mix the brown sugar, white sugar and cinnamon for the cookies to be rolled in
- Shape the cookie dough into a small circle and roll in the sugar mixture
- Flatten the cookies to about the size of your palm and put in the oven for 12 minutes or lightly brown on top .
- In a big bowl mix together the butter, milk, icing sugar and cinnamon for the icing. Put in a piping bag and cut off about 2cm from the tip.
- Once cooled, ice the cookies and serve.

PROCESSOR CINNAMON COOKIES
Modeled on the traditional Mexican shortbread cookies, this is a vegan form. They are very tasty and crunchy once hardened, and keep quite well.

Steps:
- Process oil, sugar, and water until the sugar is completely dissolved.
- Add cinnamon, salt, and vanilla, and process again.
- Adding a little at a time, blend in up to 3 1/4 c unbleached white or all-purpose flour, processing between each addition.
- When the dough is firm but elastic, neither falling apart nor stiff, stop adding flour.
- Wrap the dough in plastic wrap in a tubular form and chill overnight or freeze until firm.
- Cut 1/4 inch slices through the wrap with a sharp knife, discard the wrap peelings.
- Bake cookies at 350° F for approximately 15 minutes. Adjust for altitude as need be.
- Cool on wire rack, store in air-tight container or refrigerator. They will keep nicely for quite a while.

- Put the butter in a saucepan and allow it to melt over medium heat. Once it’s almost fully melted, add the milk and water. Bring mixture to a simmer, then remove from heat and let cool to 125 degrees F. Add the vanilla.
- Meanwhile, combine 1 cup of the flour, yeast, sugar, egg and salt in a bowl. Add the warm milk mixture, then add remaining flour 1/4 cup at a time, stirring to make a soft, slightly sticky dough.
- Put the ball of dough into a food processor fitted with a kneading hook and let the processor knead the dough until smooth and elastic. Note: The processor works pretty quickly. My dough is done in less than 3 minutes. Check dough, scraping it a bit, every 40 seconds or so to make sure it’s not too warm from friction of processor.
- Scrape the dough into a well-oiled bowl and roll it around so it’s coated with a thin layer of oil. Cover and let rise until doubled in bulk (about 45 minutes with the quick rising yeast).
