3- 6 oz boneless skinless chicken breast
2 oz prosciutto
3 oz mozzarella cheese
1/4 cup diced red pepper
1/4 cup diced red onion
1 egg
Juice of half a lemon
1/2 cup breadcrumbs

Steps:

  • Sautee your diced peppers & onions in a frying pan with a little cooking spray for 5 minutes
  • Preheat oven to 400F, spray a baking dish with some non-stick spray.
  • Mix your egg and lemon into a small dish, spread your breadcrumbs out onto a flat plate.
  • Cut your 3 chicken breast open so you have 2- 3 oz pieces (approx)
  • Divide your 2oz of prosciutto into 6 portions, approx 0.3oz in each roll.
  • Place prosciutto on top of your chicken, top with 0.5oz of mozzarella, and a spoon of you pepper/onion mix, I also added a dash of pepper. Roll chicken up, use toothpicks if you need to.
  • Dip your rolled chicken into your egg mix and then roll in breadcrumbs, place in baking dish and repeat with remaining chicken.
  • Once all your chicken is rolled and in dish spray tops with a little cooking spray, bake in oven for 25 minutes.
  • Serve warm, makes 6 chicken rolls.

This recipe is so easy and yummy. I got this recipe from my grandma. My family loves it, Even my picky daughter.

4 thin boneless chicken breasts
8 slices of fresh mozzarella
4 slices of good quality prosciutto
flour, seasoned with black pepper and parsley
olive oil for frying chicken
2 eggs & 1 tbsp milk beaten

Steps:

  • 1. heat olive oil in frying pan
  • 2. Dredge chicken in flour,egg,flour
  • 3. Fry until lightly golden brown
  • 4. Place on heavy sheet pan lined with parchment paper
  • 5. Top each cutlet with 1 slice prosciutto & 2 slices cheese
  • 6. Bake in 350 degree oven until cheese melts. Garnish with sprig of fresh basil.
  • 7. Serve with any pasta I like to make garlic and oil pasta with this chicken

These Stuffed Chicken Breasts are an impressive dish for a Sunday night dinner or a Holiday. These breasts are stuffed with cheese, prosciutto, basil and sun dried tomatoes. Totally delicious chicken rolls with a surprise filling.

2 chicken breast (skinless and boneless)
¼ cup cream cheese (I used spreadable garlic and herb cream cheese)
4 slices prosciutto (thinly sliced)
2 tablespoon sun-dried tomatoes (packed in oil, chopped)
6-12 leaves basil
2 tablespoon olive oil
¼ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)

Steps:

  • Preheat oven: To 450 F degrees.
  • Prepare the chicken: Flatten the chicken breasts using a meat mallet to pound them until they are about ¼ inch to ½ inch in thickness.
  • Assemble the chicken breasts: Spread ½ the cream cheese on each chicken breast. Top with basil leaves, then 2 slices of prosciutto on each breast and a tbsp of chopped sun-dried tomatoes on each breast. Carefully roll up the breasts and secure with toothpicks. Season with salt and pepper.
  • Cook the chicken: Heat the olive oil in an oven proof skillet and brown the chicken, placing first with seam side down until just slightly golden brown. You may need to remove toothpicks to brown on all sides. Place skillet in oven and bake chicken for an additional 20 minutes, until chicken is cooked through.
  • Finish the dish: Remove chicken from skillet onto a cutting board, discard toothpicks and wait about 15 minutes before slicing each chicken breast. To double the recipe simply double all the ingredients.

1 clove garlic, minced
6 fresh sage leaves, roughly chopped
4 chicken cutlets (about 1 1/4 pounds)
Kosher salt and freshly ground pepper
8 to 12 thin slices prosciutto
3 tablespoons extra-virgin olive oil
Juice of 1 lemon
1 teaspoon dijon mustard
10 cups mixed baby lettuce (about 5 ounces)
1 cup cherry tomatoes, quartered
3/4 cup low-sodium chicken broth
1 tablespoon unsalted butter

Steps:

  • Sprinkle the garlic and sage on the chicken cutlets; season with salt and pepper. Wrap 2 or 3 slices prosciutto around each cutlet.
  • Heat a large nonstick skillet over medium heat; add 1 tablespoon olive oil. Working in batches if necessary, add the chicken and cook, flipping once, until the prosciutto is golden brown and slightly crisp, 6 to 8 minutes. Transfer to a plate.
  • Meanwhile, whisk half of the lemon juice, the mustard, a pinch of salt and a few grinds of pepper in a large bowl. Gradually whisk in the remaining 2 tablespoons olive oil until smooth. Add the lettuce and tomatoes; toss to coat.
  • Add the chicken broth and the remaining lemon juice to the skillet; cook over medium heat until slightly reduced, 1 to 2 minutes. Add the butter and cook, stirring with a rubber spatula, until the butter melts and the sauce thickens, 1 to 2 minutes. Serve the chicken with the salad. Drizzle with the pan sauce.

  • From the fresh mozzarella, home made or store bought, slice off a piece and using a rolling pin, roll it out into a smooth flat piece, about 1/2-inch thick. 2 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon dried basil
Pinch pepper
Pinch salt
1/3 cup roasted sweet red peppers, drained and julienned
3 tablespoons shredded mozzarella cheese
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/8 teaspoon paprika
TOMATO RELISH:
1/2 cup cherry tomatoes, quartered
3 fresh basil leaves, chopped or 1/2 teaspoon dried basil
1 teaspoon olive oil
1 teaspoon lemon juice
Pinch salt

Steps:

  • For each chicken, make a horizontal cut along one long side almost to the other side; leave chicken breasts attached at opposite side. Open breast so it lies flat; cover with plastic wrap and flatten to 1/4-in. thickness. Remove plastic wrap., Combine basil, pepper and salt; sprinkle over the cut side of each chicken breast. Top with red pepper strips and sprinkle with cheese. Fold in sides and roll up. Secure with toothpicks., Combine oregano, garlic powder and paprika; sprinkle over the top of each chicken roll. Place chicken in a medium or large ZIPLOC Brand Zip "n Steam Bag. Seal bag and place in microwave., Cook on high for 5-9 minutes or until chicken juices run clear. If needed, continue microwaving at 30-seconds intervals or until chicken is done. Let stand 1 minute before handling. Meanwhile, combine all Tomato Relish ingredients., Carefully open bag and remove chicken. Serve with Tomato Relish.
