THREE CHEESE GARLIC SCALLOPED POTATOES

Three Cheese Garlic Scalloped Potatoes image

If you love cheese and love potatoes you'll adore this delicious recipe! You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!

Time 1h10m

Yield 6

Number Of Ingredients 8

1 ½ pounds Yukon Gold potatoes, thinly sliced
2 tablespoons butter, divided
1 pint heavy cream
2 cloves garlic, thinly sliced
salt and pepper to taste
2 cups shredded Cheddar cheese
4 slices provolone cheese
½ cup grated Parmesan or Romano cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese. Season again with salt and pepper.
  • Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top. This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

I had to post this recipe...I was interested in making a different type of scallop potato for our Easter dinner..started looking on line and stopped dead in my tracks when I came across this recipe. Number Of Ingredients 8

2 lb yukon gold potatoes, peeled and thinly sliced
2 Tbsp butter, divided
1 pt heavy cream
2 clove garlic thinly sliced
2 c shredded sharp cheddar cheese
4 slice provolone cheese
1/2 c freshly grated parmesan cheese
salt and pepper to taste

Steps:

  • 1. Preheat oven to 325 degrees F. Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • 2. Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over potatoes. Sprinkle one cup of Sharp cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Sharp cheddar cheese, then top with slices of provolone cheese. Season again with salt and pepper.
  • 3. Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan cheese over the top. This will create a semi hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork. Allow to cool for about 15 minutes before serving.
  • 4. NOTE: I put the freshly grated parmesan cheese on before putting it in the oven...I did this by mistake and realized I was supposed to add after the potatoes had cooked for a 1/2 hour..so I covered the casserole dish with a piece of foil that was loosely covering the dish as not to touch the cheese on top...I then baked potatoes for about an hour and then removed foil and allowed to bake until potatoes were tender and the cheese started to make a beautiful crust on top. It will look soupy at first..after it sets it thickens and makes a wonderful cheesy sauce for the potatoes. I also added a little more heavy cream than recipe calls for, like a 1/4 cup or so...use your judgement.

BAKED SCALLOPED POTATOES WITH CHEESE

Baked Scalloped Potatoes with Cheese image

These scalloped potatoes are EXTRA cheesy thanks to three cheeses used as well as super rich and CREAMY!! They're a perfect HOLIDAY SIDE DISH as well as family friendly weeknight COMFORT FOOD!

Provided by Averie Sunshine

Categories     Sides, Salads & Vegetables

Time 1h50m

Number Of Ingredients 14

4 pounds Russet potatoes, peeled and sliced to 1/8-inch thick
1 large white or yellow onion, diced small
3 to 4 cloves garlic, finely minced or pressed
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 teaspoons Kosher salt, or to taste
2 teaspoons seasoning blend such as Mrs. Dash, Trader Joe's 21 Salute, or poultry seasoning*
1 teaspoon freshly ground black pepper, or to taste
1 cup vegetable or chicken broth
1 cup heavy cream
1 cup sour cream
1.5 cups shredded Colby Jack cheese, divided
1.5 cups shredded cheddar cheese, divided
1 cup shredded Parmesan cheese, divided

Steps:

  • Preheat oven to 400F and to a 9×13-inch casserole dish or baking pan, arrange the potatoes upright in the pan along one of the long edges. Repeat with the remaining potatoes until you have three columns of potato slices; set aside. Tip - If you have a mandoline, use it here!
  • To a saucepan, add and melt the butter, add the onion and garlic, and cook for 5 minutes; stir frequently.
  • Add flour, and cook for another minute, whisking nearly constantly, or until the flour is lightly golden browned. This is what's called a 'roux' and is important so that later on the mixture properly thickens.
  • Add the salt, seasoning blend, pepper, broth, cream, and stir until somewhat thickened, about 3 minutes.
  • Turn off the heat and stir in 1 cup each of the Colby Jack and cheddar cheeses and 1/2 cup of the Parmesan; set aside momentarily.
  • Spread the sour cream over potatoes and pour the cheesy mixture evenly over potatoes.
  • Evenly sprinkle the remaining one-half cup of each of the three cheeses over potatoes.
  • Cover potatoes with foil and bake for 1 hour, remove from the oven, and check for doneness. The potatoes should be fork tender and not at all hard. If they're not cooked through yet, recover with the foil and bake for an additional 10 to 15 minutes, or as long as necessary so they cook through.
  • After the potatoes have cooked through completely, remove and discard the foil, and allow the potatoes to bake uncovered for an additional 30 minutes, or as desired to brown the cheeses. In the final moments of baking the potatoes uncovered, keep a close eye on them so you know exactly how fast the cheese is browning**
  • Allow potatoes to cool momentarily before serving, about 5 minutes.

SCALLOPED POTATOES

Scalloped Potatoes image

A rich, cheesy, wholesome side dish worthy of any All-American meal. Four types of cheeses, great served leftover, and they travel well. Perfect for potlucks or family get-togethers.

Provided by pkhemmerich

Categories     Potato

Time 1h5m

Yield 1/2 cup, 6 serving(s)

Number Of Ingredients 11

4 medium russet potatoes
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup provolone cheese
1/2 cup parmesan cheese
1 cup cheddar cheese (the sharper the better)
1/2 cup muenster cheese
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1 pint heavy cream (or half and half if you're on a diet)

Steps:

  • 1) In stock pot, bring water to boil and then preheat the over to 375 degrees F.
  • 2) Slice potatoes 1/4" thick; I prefer them with the skins on. (Can be completed ahead of time).
  • 3) Shred all your cheeses and combine, mixing well. Set aside about 1/3 of a cup for topping. (This can be done earlier in the day.).
  • 4) Parboil sliced potatoes for 1-2 minutes. They should just be slightly tender. Remove and drain on towel Let them completely dry. (This can be done ahead of time.).
  • 5) In small saucepan, combine flour and butter over low heat and make a roux. Then add cream and continue heating on low heat, stirring gently.
  • 6) Once the cream is warm, but not boiling, add the cheese in small quantities until all the cheese is melted and incorporated. Add salt, pepper, and paprika. Continue heating until the sauce thickens.
  • 6) In a greased 9x9 glass roasting dish, layer potatoes in the bottom, about two layers tall. Pour part of the cheese mixture over this layer. Repeat until all the sauce and potatoes are used.
  • 7) Top the potatoes with the 1/3c. of cheese mixture.
  • 8) Bake, uncovered, for 45 minutes. If the top isn't thoroughly browned after the 45 minutes, increase the temperature to 450 degrees F. and bake until golden brown OR place under the broiler. If you broil them, watch them closely so they don't burn!
  • 9) Let them cool before serving.
  • Just one note, cheddar cheese is fairly high in oil, so after cooking you can remove some of the excess released from the cooking process fat with a spoon.

ITALIAN STYLE SCALLOPED POTATOES RECIPE

Italian Style Scalloped Potatoes Recipe image

This is a cheese and ham scalloped potato recipe made from scratch with provolone and sharp cheddar cheese.

Provided by Claudia Lamascolo

Categories     vegetables, potato recipes, casserole, side dishes

Time 1h15m

Yield 8

Number Of Ingredients 21

2 1/2 pounds peeled white potatoes (around 5 medium-sized potatoes)
3 tablespoons butter or other fat
3 tablespoons flour
2 cloves garlic, minced
1 teaspoon dry mustard
1/4 teaspoon Italian seasoning
1 teaspoon freshly chopped parsley
1 teaspoon granulated garlic powder
salt and pepper, to taste
pinch of cayenne pepper or red pepper flakes for a little heat
2 cups whole milk ( for an instant pot or slow cooking add 1/2 cup more milk)
1 cup chopped cooked ham, cooked crumbled bacon or Proscuitto
1 cup extra sharp cheddar cheese shredded
1/2 cup provolone cheese shredded
1/4 cup Parmesan cheese grated
Garnish:
1 teaspoon chopped parsley
1/4 cup provolone, shredded
1/2 cup Italian flavored bread crumbs or buttery crackers crushed
grated Parmesan cheese
Optional: add hotdogs, kielbasa, seasoned hamburger meat, breaded chicken tenders or whatever meat you prefer

Steps:

  • Note: I have cooked these in an instant pot on high for 6 hours, a regular slow cooker or baked in the oven.
  • Follow manufacturer instructions for other methods than using the oven.
  • Preheat oven 375 degrees. Oil spray whatever cooking vessel your using. You will need at least a 3 to a 4-quart casserole dish.
  • First wash, peel and slice the potatoes. (We like ours a little thicker so around 1/4 inch thick)
  • In a small saucepan on medium heat, add the butter, saute the garlic until it is just soft around 30 seconds.
  • Stir in the flour to make the roux and blend for another minute or so until the desired color is achieved around 1 minute, darker roux adds more flavor.
  • Pour in the milk and stir until it gets thick.
  • Pour in the cheeses, seasoning, fresh parsley, dried herbs and fold in the meat of choice, mix together.
  • In your oil sprayed cooking vessel add the potatoes on one layer, then some cheese mixture, more potatoes then end with sauce.
  • Garnish the top with more provolone (or cheddar if you prefer)cheese, then sprinkle the top with bread crumbs with more Parmesan grated evenly and chopped parsley.
  • This will take at least an hour to cook or so, testing with a fork to see if the potatoes are soft.
  • Note: If using a slow cooker or instant pot 6 to 8 hours on high adding 1/2 cup more milk to this recipe.

  • Wash and peel the potatoes removing any blemishes. You should have approx. 1 ½ lb of peeled potatoes. Enough for a 9-10-inch round baking pan. Slice the potatoes crosswise into thin ⅛ inch rounds. You can totally do this with a mandoline slicer to make the process faster and more precise. But you can do equally well without. Just make sure your slices are more or less of the same size so they all cook at the same rate.
  • Spread 2 tbsp of homemade or ready-to-use bechamel sauce over the bottom of the baking dish.
  • Layer ⅓ of the potato slices overlapping each other. Spread 2-3 tbsp of bechamel sauce. Sprinkle with a pinch of salt and ground pepper to taste.
