HOMEMADE PUB CHEESE SPREAD
Make this smooth and tasty homemade beer pub cheese with just 6 ingredients (7 if you add some spicy heat!) It's a simple snack that's perfect for parties.

Steps:
- Combine all ingredients in a food processor and secure the lid.
- Pulse the ingredients until mixed, then blend on high until smooth.
- Spread will keep in the fridge, tightly covered, for up to 1 week.

Warm creamy sharp cheddar and pickled peppers make a classic and comforting party snack.

- 1. In medium bowl toss together cheddar cheese, Colby cheese and
- cornstarch. Set aside.
- 2. In medium saucepan whisk together cider and mustard. Cook over
- medium-high heat until boiling. Slowly add the cheese mixture, a little at
- a time, stirring constantly until smooth. Remove from heat. Stir in
- jalapeno peppers and red pepper.
- 3. Transfer to 1-quart slow cooker or fondue pot. Keep warm over very

- crackers.
- *Note: Hard cider, the fermented version of sweet apple cider, can be found near the beer section of your local grocery or liquor store.

Steps:
- Place cheeses in food processor or blender, process until smooth.
- Gradually add ale, mustard and cayenne pepper.
- If mixture is soft, refrigerate until firm enough to hold shape.
- Mould into a disc shape (a sphere or ball!!).
- Combine pecans and parsley.
- Pat the mixture onto the ball or roll the ball in the mixture until the cheese mixture is covered completely.
- Place on a serving plate or board and surround with crackers or flatbreads.
- Slices of apple are nice with this too.
PUB CHEESE SPREAD
This is an all-time favorite in English Pubs. Best if aged in the refrigerator for one week. For a more upscale and refined spread, substitute brandy or cognac for the beer.

Steps:
- In a blender or food processor, combine the beer, cheese, butter, herbs, spices and lemon juice. Process until blended and smooth.
- Spoon one-third into a crock or jar with an airtight cover. Push 2 garlic halves into the mixture. Add another one-third of the mixture. Insert 2 more garlic halves. Fill the crock with the remaining cheese mixture and insert the remaining garlic halves.
- Lay a single layer of plastic wrap over the top of the cheese mixture and press down so it is covering the entire top of the cheese mixture. Gather the remaining overlapping plastic wrap and fill the space between the cheese spread and the top of the crock. Seal the crock tightly.
- Age the cheese spread in the refrigerator and remove plastic wrap before serving. Some people remove the garlic cloves while others leave them inches Your choice.

This is as close as one can get to the famous restaurant 'bar scheez; spread my mother loved, Win Schuler's®. It became a staple in our house. The horseradish gives the spread that interesting bite. You'll have people begging you for the recipe and you won't be able to stop eating it! You can start with less horseradish and increase to your taste. Serve with crackers, pita or bagel chips, or pretzels. Even great with celery sticks! Store leftovers in refrigerator in airtight container.
