PUDGE POTATOES
A friend gave me this recipe after I had these wonderful potatoes at her house. It came from Roger Kaplan, Corporate Chef of the Peasant Group, a popular restaurant chain in Atlanta.

Steps:
- Place potatoes, chicken stock, pepper, garlic, sun-dried tomatoes and olive oil in a large, flat-bottomed pan over medium-high heat. Bring to a boil; reduce heat and simmer on medium heat, covered, until potatoes are very tender, about 20 minutes. Remove from heat; sprinkle Parmesan over potatoes and mash with a hand masher. Add salt to taste. Stir in basil and serve.

- Spread oil in a 13-in. x 9-in. baking pan. Combine the next five ingredients in a large plastic bag. Cut each potato lengthwise into eight wedges. Place half of the potatoes in the bag; shake well to coat. Place in a single layer in pan. Repeat with remaining potatoes. , Bake, uncovered, at 350° for 40-45 minutes or until tender, turning once after 25 minutes.

Steps:
- Place potato in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain. Cool potato until easily handled, about 5 minutes.
- Peel potato and mash into a bowl. Stir in vanilla extract. Stir in confectioners' sugar until mixture is smooth and firm. Fold in coconut.
- Grease a 9-inch cake pan with cooking spray. Spread potato mixture in the pan. Refrigerate until set, about 1 hour. Cut into squares.

- Rinse potatoes and dry well with paper towels. Rub potatoes with oil. Cut each potato in half and sprinkle cut sides with salt. Put potatoes on a baking rack and let stand 10 minutes so salt can draw some water out of potatoes. Bake potatoes on the baking rack (not on a baking sheet) on middle rack of oven until cooked through, about 20 minutes. Increase temperature to 500°F. and bake potatoes until puffed and golden, about 5 minutes more.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
