¾ cup whole wheat flour
1 ¼ cups sugar
1 ½ teaspoons Spice Islands® Pumpkin Pie Spice
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon Argo® Baking Powder
1 cup canned pumpkin
1 apple, cored and shredded
⅓ cup Mazola® Corn Oil
1 egg
1 teaspoon Spice Islands® Pure Vanilla Extract
½ cup dried cranberries*
2 tablespoons flax seed
¼ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt and baking powder in medium bowl. Whisk together pumpkin, apple, oil, egg and vanilla in a large bowl. Add dry ingredients, mixing just until moistened. Stir in cranberries and flax seed. Portion into greased muffin cups or use paper liners. Sprinkle with walnuts.
  • Bake for 20 to 25 minutes or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan.

2-1/2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped peeled tart apples

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 30-35 minutes or until muffins test done. Cool for 10 minutes before removing from pan.

1 box (15.3 oz) Betty Crocker™ Fiber One™ apple cinnamon or banana nut muffin mix
1/2 cup water
1/4 cup applesauce
1/2 cup fat-free egg product or 2 egg whites

Steps:

  • Heat oven to 425°F (or 400°F for dark or nonstick pan). Place paper baking cups in 12 regular-size muffin cups, or grease (or use cooking spray) bottoms of muffin cups. (For best results, use paper cups.)
  • In medium bowl, stir muffin mix, water, applesauce and egg product just until blended (batter may be lumpy). Divide batter among muffin cups (about 2/3 full).
  • Bake 15 to 20 minutes or until golden brown and tops spring back when touched. Cool 5 minutes; carefully remove from pan (if not using paper cups, run knife around edges of cups before removing). Cool completely before storing.

1/2 cup wheatena cereal, dry
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ginger
1/3 cup brown sugar
1 cup olive oil, lite
1 cup molasses
1 tablespoon vanilla extract
15 ounces pumpkin
2 eggs
1 1/2 cups raisins
2 tablespoons orange rind, grated (optional)

Steps:

  • Preheat oven to 350.
  • Add the first 6 dry ingredients together in a mixing bowl and then mix with a spoon.
  • Add the next 6 ingredients and mix together on low speed of mixer until well mixed.
  • Add raisins and orange rind (if using) and mix until blended.
  • Fill 18 lined muffin cups.
  • Bake for 30 to 32 minutes, or until inserted toothpick comes out clean.

3 ¼ cups white whole wheat flour
2 tablespoons lightly packed dark brown sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 cups pumpkin puree
1 ⅛ cups unsweetened applesauce
1 cup chilled apple cider
4 large eggs, slightly beaten
¾ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat 24 muffin cups with cooking spray.
  • Combine flour, sugar, baking soda, salt, pumpkin pie spice, cinnamon, and nutmeg in a large mixing bowl. Add pumpkin, applesauce, apple cider, eggs, raisins, and walnuts. Stir until thoroughly combined. Divide batter evenly between the prepared muffin cups.
