PUMPKIN BARS - WEIGHT WATCHERS = 1 POINT



Pumpkin Bars - Weight Watchers = 1 Point image

This is from one of my many Weight Watchers Meetings. When it's cut into 16 slices = 1 point each! Add 1 Tablespoon of FAT FREE COOL WHIP to finish it off and it's still 1 point!

Number Of Ingredients 10

2 cups All Bran extra fiber cereal
1/2 cup water
3 tablespoons egg whites
2 teaspoons vanilla extract
29 ounces Libby's canned pumpkin
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1 1/4 cups Splenda granular, artificial sweetener
1 ready-made pie crust, Pillsbury

Steps:

  • Mix together the All Bran, Water, Egg Whites and Vanilla and let sit for about 5 minutes.
  • Add the pumpkin and mix well.
  • Let sit another 5 minutes.
  • Add in the remaining ingredients. Mix well and set aside.
  • Spray a 9 x 13 pan extra well!
  • Spread one READY PIE CRUST into the pan covering only the bottom and just up the sides.
  • Mark the pie crust with a fork 5 or 6 times.
  • Spread the pie filling evenly over the crust.
  • Bake at 400 degrees for approximately 45 minutes.
  • Refrigerate and eat cold.

I lightened up a recipe to make it even more Weight Watchers friendly so that I would feel even less guilty! If you cut this pie into 16 slivers, each sliver is only 1 point! Everybody can afford 1 point! :-)

1 1/4 cups canned pumpkin
1 cup light soymilk, I use Silk Plain Light
1/2 cup Better 'n Peanut Butter spread
1/2 cup fat free egg substitute
1/2 cup Bisquick reduced-fat baking mix
1/2 cup Splenda granular, sugar substitute
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9-inch pie baking dish with non-stick spray.
  • Combine all ingredients in a blender container. Process until smooth, scraping down sides as needed.
  • Pour into the prepared baking dish.
  • Bake for 55 minutes or untl knife inserted near center tests clean.
  • Cool on wire rack.
  • Refrigerate until chilled, about 3 hours.

  • Meanwhile, in a large bowl, using an electric mixer, combine remaining 2 tablespoons milk, cream cheese and egg until well-blended. Add vanilla extract, cinnamon, brown sugar and pumpkin; blend until smooth. Spoon pumpkin mixture over crust and smooth into an even layer; bake until center sets and a knife inserted in center of bars comes out clean, about 35 minutes.
  • Remove from oven and let cool. When cool, cover and refrigerate overnight. Cut into 12 bars and serve each with a tablespoon dollop of whipped cream. Yields 1 bar per serving.
