PUMPKIN BARS - WEIGHT WATCHERS = 1 POINT
This is from one of my many Weight Watchers Meetings. When it's cut into 16 slices = 1 point each! Add 1 Tablespoon of FAT FREE COOL WHIP to finish it off and it's still 1 point!

Steps:
- Mix together the All Bran, Water, Egg Whites and Vanilla and let sit for about 5 minutes.
- Add the pumpkin and mix well.
- Let sit another 5 minutes.
- Add in the remaining ingredients. Mix well and set aside.
- Spray a 9 x 13 pan extra well!
- Spread one READY PIE CRUST into the pan covering only the bottom and just up the sides.
- Mark the pie crust with a fork 5 or 6 times.
- Spread the pie filling evenly over the crust.
- Bake at 400 degrees for approximately 45 minutes.
- Refrigerate and eat cold.

CHERYL'S CRUSTLESS PUMPKIN PIE = 1 WW POINT
I lightened up a recipe to make it even more Weight Watchers friendly so that I would feel even less guilty! If you cut this pie into 16 slivers, each sliver is only 1 point! Everybody can afford 1 point! :-)

Steps:
- Preheat oven to 350 degrees.
- Spray a 9-inch pie baking dish with non-stick spray.
- Combine all ingredients in a blender container. Process until smooth, scraping down sides as needed.
- Pour into the prepared baking dish.
- Bake for 55 minutes or untl knife inserted near center tests clean.
- Cool on wire rack.
- Refrigerate until chilled, about 3 hours.

- In a food processor, combine gingersnaps, butter and 2 tablespoons milk; process until completely blended. Spoon mixture into prepared baking dish and press down crust with fingers to form a crust. Bake crust for 10 minutes; remove from oven and let crust cool for 20 minutes. Reduce oven to 325°F.
- Meanwhile, in a large bowl, using an electric mixer, combine remaining 2 tablespoons milk, cream cheese and egg until well-blended. Add vanilla extract, cinnamon, brown sugar and pumpkin; blend until smooth. Spoon pumpkin mixture over crust and smooth into an even layer; bake until center sets and a knife inserted in center of bars comes out clean, about 35 minutes.
- Remove from oven and let cool. When cool, cover and refrigerate overnight. Cut into 12 bars and serve each with a tablespoon dollop of whipped cream. Yields 1 bar per serving.

- Heat oven to 350ºF (175ºC). Lightly coat a 9x13-inch (23x33 cm) baking pan with cooking spray, then dust lightly with flour.
- In a large bowl, cream sugar and margarine with an electric mixer; beat in egg, egg white, pumpkin purée and buttermilk.
- In medium bowl, combine flour, oats, pumpkin pie spice, baking soda and salt. Stir into pumpkin mixture just until moistened, then add cranberries and mix gently.
- Spread batter in pan and bake 20 to 25 minutes or until centre springs back when gently pressed. Cool and cut into 18 bars.
