PEANUT BUTTER PUMPKIN BREAD
My husband brought this recipe home from the office more than 20 years ago. Each fall, I bake several of these lovely loaves to share with family and friends. Pumpkin and peanut butter are a unique, delicious combination.

Steps:
- In a large bowl, combine the flour, sugar, baking soda, salt, cinnamon and nutmeg. In another bowl, combine the pumpkin, eggs, oil, water and peanut butter. Stir into dry ingredients just until moistened. , Pour into 2 greased 9x5-in. loaf pans. Bake at 350° until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pans to wire racks.

Glazed pumpkin bread with chocolate chips. This is really good stuff.

Steps:
- In a large bowl mix together the flour, baking soda, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, ground ginger, and ground cloves.
- In a separate bowl cream together the sugar and butter or margarine. Add eggs and beat until smooth.
- Alternately add the creamed ingredients and pumpkin to the dry ingredients. Fold in chocolate chips and chopped nuts. Spoon into two greased 9x5 inch loaf pans.
- Bake in a preheated 350 degree F(175 degrees C) oven for 45 to 50 minutes.
- To make the glaze: In a small bowl, combine confectioners sugar, 1/8 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Add milk, and mix until smooth. Drizzle over warm cake.

- Grease and flour 3 loaf pans (8 1/2 x 4 1/2 x 2 1/2).
- In a medium mixing bowl, combine flour, sugar, baking soda, salt and cinnamon. Set aside.
- In a large mixing bowl, blend pumpkin with oil, water and eggs.
- Add the dry ingredients gradually until well blended.
- Stir in the chips, nuts, and raisins.
- Pour into loaf pans and bake at 350 degrees for 50-60 minutes until cake tester comes out clean.

This is posted in request for a pumpkin bread recipe with peanut butter chips. It comes from the Hershey's website. Makes 3 loaves so would be good to freeze extras to have on hand.

Steps:
- Preheat oven to 350°F.
- Grease and flour three 8.5x4.5x2.5-inch loaf pans.
- Stir together flour, sugar, baking soda, salt and cinnamon and set aside.
- Stir together pumpkin, oil, water and eggs in a large bowl then gradually add the dry ingredients, stirring until blended.
- Stir in peanut butter chips, nuts and raisins, if desired. Divide evenly between prepared pans.
- Bake 55 to 65 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pans for 10 minutes then remove from pans to wire racks to cool completely.

I had some extra pumpkin butter and came up with this recipe. This delicious, moist bread is flavorful and fragrant; the smell when cooking reminds me of Thanksgiving!

- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 3x7-inch loaf pan.
- Whisk together the flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves in a bowl; set aside.
- Beat the egg in a bowl. Whisk in the brown sugar, apple juice, melted butter, and half of the pumpkin butter until smooth. Stir in the flour mixture until no lumps remain. Pour half of the batter into the prepared pan and spread the remaining pumpkin butter over top. Pour in the remaining batter.
- Bake in the preheated oven on the middle rack until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Stir granulated sugar and brown sugar with oil and pumpkin. Stir in the eggs, pumpkin pie spice, salt, and baking soda. Stir until combined. Stir in buttermilk and flour just until combined. Fold in 1 cup of the chopped peanut butter cups.
- Pour batter into prepared pan. Sprinkle the remaining peanut butter cup chunks over the top of the bread. Bake for 40-45 minutes. If you want it totally done (no gooey center), test it by inserting a toothpick just partway into the top center of the bread. If this comes out clean, it’s done. If you like a gooier center, remove it when testing it with at toothpick that way comes out with a little stuck to the top.
- Let the bread cool before cutting. Store in an airtight container for up to 3 days or slice and freeze in individual sandwich bags.
