1 cup cornmeal
½ cup brown sugar
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 ¼ cups milk, or more as needed
1 cup canned pumpkin
2 eggs, beaten
2 tablespoons vegetable oil
1 teaspoon vanilla extract
2 tablespoons oil, divided, or as needed

Steps:

  • Whisk flour, cornmeal, brown sugar, baking powder, salt, cinnamon, and cloves together in a large bowl. Beat milk, pumpkin, eggs, 2 tablespoon vegetable oil, and vanilla extract together in another bowl. Add milk mixture to flour mixture and stir until batter is well-combined.
  • Heat about 1 tablespoon oil in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

These buttermilk pancakes owe their incredible texture to cornmeal and whipped egg whites.

Number Of Ingredients 13

3/4 cup all-purpose flour (see Cook's Note)
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon fine salt
1/8 teaspoon baking soda
1/8 teaspoon freshly grated nutmeg
2 large eggs, separated and at room temperature
1 1/2 cups buttermilk, at room temperature
4 tablespoons unsalted butter, melted, plus more for the skillet
1/2 teaspoon pure vanilla extract
Blackberries, for serving
Maple syrup, for serving

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the flour, cornmeal, sugar, baking powder, salt, baking soda and nutmeg in a large bowl. Whisk together the egg yolks, buttermilk, melted butter and vanilla in a medium bowl. Whisk the buttermilk mixture into the flour mixture until just combined to make a thick batter.
  • In another bowl, whip the egg whites until they hold soft peaks. Use a rubber spatula to fold the whites into the batter just until no white streaks remain.
  • Heat a large nonstick skillet over medium heat and brush lightly with butter. Working in batches, drop about 1/4 cup batter per pancake into the skillet. Cook until bubbles form on the tops of the pancakes and the undersides are golden brown, about 2 minutes. Flip and continue to cook until the pancakes are cooked through, about 1 minute more. Transfer the cooked pancakes to the oven to keep warm and continue to make more pancakes, brushing the skillet with butter as needed, until all the batter has been used. Serve the pancakes with blackberries and maple syrup.

Butter for frying

Steps:

  • Combine flour, cornmeal, 1 cup of the confectioners' sugar, ginger and cinnamon in a large mixing bowl.
  • Combine eggs and pumpkin, and beat into the flour mixture. Add milk slowly to make a smooth batter.
  • Heat butter in a frying pan or crepe pan about 8 inches in diameter. Pour about 1/2 cup of the batter in the pan, and swirl around to make a thick pancake. Cook on both sides until nicely browned. Serve hot, heavily dusted with confectioners' sugar.

  • Combine the first five ingredients. In another bowl, whisk eggs, milk and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles on top begin to pop; cook until second side is golden brown. Serve with syrup.

1/2 lb unsalted butter, at room temperature
1 cup granulated sugar
1 tablespoon finely grated orange zest
1 large egg
2 large eggs, separated
8 -12 ounces canned solid-pack pumpkin (or fresh pumpkin)
1 teaspoon vanilla
6 3/4 ounces all-purpose flour (1 1/2 cups)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup fine-ground cornmeal (not coarse, 3 1/4 oz)
sifted powdered sugar, garnish
1/2 cup fresh orange juice
1/2 cup granulated sugar
yogurt or vanilla ice cream, for serving

Steps:

  • Position oven rack in middle of oven, preheat to 350 degrees.
  • Butter a 9-inch bundt pan.
  • With a mixer and paddle attachment, beat butter, zest and sugar until light and fluffy- about 3 minutes.
  • One at a time, add egg and egg yolks, beating well and scraping sides of bowl after each addition.
  • Beat in pumpkin and vanilla.
  • Sift together flour, baking powder and salt, stir in cornmeal.
  • Add dry mixture to pumpkin batter in 3 staqges, stirring gently but thoroughly with rubber spatula after each addition.
  • Do not overwork batter.
  • In a clean bowl, whip egg whites to soft peaks.
  • Gently fold whites into batter with spatula until there are no longer any white streaks.
  • Scrape batter into pan, smooth surface.
  • Bake until top is springy when lightly touched, the sides should be pulling away from the pan and a wooden skewer inserted in the center of the cake comes out clean- about 40-50 minutes.
  • Let cool for 20 minutes and then invert cake onto a rack to cool completely.
  • Dust with powdered sugar if you like.
  • For Orange Syrup: In a small saucepan over low heat, combine orange juice and sugar, stirring until sugar has dissolved.
  • Boil without stirring for 2 minutes.
  • Serve each slice with a drizzle of warm syrup accompanied by yougurt or vanilla ice cream.
