Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Beat butter, brown sugar, and white sugar together in a bowl until creamy. Add pumpkin, egg, and vanilla extract; beat until smooth.
- Mix flour, oats, cinnamon, baking soda, baking powder, and salt in a separate bowl; stir into creamed butter until combined. Fold chocolate chips into batter. Drop 1 to 2 tablespoons batter for each cookie onto a baking sheet.
- Bake in the preheated oven until the edges of each cookie are lightly browned, 10 to 12 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in vanilla, egg and pumpkin. Sift together the flour, baking powder, baking soda, salt and cinnamon; stir into mixture until well blended. Cut the cranberries in half and stir into mixture along with the orange zest and walnuts. Drop by teaspoonfuls onto cookie sheets.
- Bake for 10 to 12 minutes.

PUMPKIN OATMEAL CHOCOLATE CHIP AND CRANBERRY COOKIES
Steps:
- Preheat oven to 350℉ (180℃). Coat baking sheets with cooking spray or line with baking mats or parchment paper. In a large bowl, add flours, oats, baking soda, cinnamon and salt, mix until well cominbed; set aside. Add melted butter, oil, apple sauce and both sugars in another bowl, and stir until well mixed. Add egg and vanilla, mix well. Pour liquid mixture into flour-oats mixture, and stir until just moistened. Stir in chocolate chips and cranberries. For each cookie, drop tablespoonfuls of dough onto prepared baking sheet. Bake about 25 minutes until lightly browned around edges and top. Remove from ove and let cool on sheet on wire rack for about 5 minutes. Remove cookies from sheets to wire rack, and let cool completely. Cookies can be stored at an air-tight container for about 1 week.

- Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
- In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a stand mixer fitted with a paddle attachment, beat the butter and sugars together until light and fluffy, about 1 minute. Add the egg and vanilla and beat until smooth. With the machine running, gradually add the flour mixture. Add the oats, cranberries and chocolate chunks. Mix until just incorporated (dough will be stiff). Using a 4-ounce cookie scoop, scoop slightly rounded mounds of the dough into 12 (2-inch-diameter) balls. Arrange 6 balls of dough, spaced evenly apart, on each baking sheet. Using the back of a spoon, flatten the tops slightly and bake until the cookies are slightly golden on the edges, about 13 to 15 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before serving.
