WHITE CHOCOLATE PUMPKIN COOKIES
This recipe was given to me by my aunt. Easy to make and everyone loves it. The hardest part is not eating them all while you are baking them!

Steps:
- In a small bowl, whisk together the flour, pumpkin pie spice and baking soda.
- In a medium bowl, with an electric mixer, cream butter and sugar. Beat in pumpkin pie puree. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.
- Drop dough by rounded tablespoon 2 inches apart on an ungreased cookie sheet. Bake at 300 degrees F (150 degrees C) for 20-22 minutes until just set.

CHEWY PUMPKIN WHITE CHOCOLATE CHIP COOKIES

Steps:
- In a medium saucepan, melt butter over medium-low heat. Remove from heat and stir in brown sugar and sugar. Stir for 2-3 minutes or until it becomes silky smooth and glossy. Let cool for 5-10 minutes.
- Stir in vanilla and egg yolk. After it is completely mixed, stir in pumpkin puree.
- Add flour, oats, baking soda, salt, cinnamon, and pumpkin pie spice. Stir well to incorporate ingredients.
- Let chill for 15 minutes. Preheat oven to 350 degrees. Stir in white chocolate chips.
- Using a cookie scoop or two spoons, drop cookie dough on baking sheets, lined with parchment paper or Silpat. Bake for 10-13 minutes or until lightly golden brown on edges. Let set up for 5-10 minutes before removing from pan.
PUMPKIN WHITE CHOCOLATE CHIP COOKIES
Adapted from King Arthur Flour. I love this recipe because the pumpkin flavor shines through. Feel free to substitute regular chocolate chips or raisins. And if you don't have pumpkin pie spice, just use your favorite combination of ginger, cloves, allspice and nutmeg.

- Preheat oven to 375.
- Whisk together dry ingredients, set aside.
- Cream butter and sugars, add eggs one at a time until combined, then vanilla and pumpkin.

Steps:
- Preheat the oven to 350F and grease and line an 8x8 inch square pan.
- Place sugar into a large bowl and pour the melted butter over it, mix with a whisk until well combined and smooth. Add in the egg and vanilla and mix until combined.
- Add in the pumpkin and mix until well combined and smooth.
- In a medium sized bowl, place the flour, salt, spices and chocolate chips and stir until the chocolate chips are coated in flour.
- Add the flour mix into your wet ingredients and stir until combined - don't be tempted to beat or over mix otherwise you'll end up with rubbery blondies.
- Tip the mix into your lined pan and smooth until level with a spatula/wooden spoon.
- Place in the oven for 25-30 minutes until an inserted skewer into the centre comes out clean. They will still look a little dark/moist in the middle, this is fine.
- Leave to cool in the pan for at least and hour before transferring to a wire rack.
- Once cool, slice into 9-12 pieces.
- Blondies will keep in an airtight container, at room temperature, for 3 days.
