FARMERS' COUNTRY BREAKFAST CASSEROLE



Farmers' Country Breakfast Casserole image

Mmmmm....hash browns, ham and eggs; just like down on the farm, but you only need one pan! This needs to chill overnight, so plan ahead. Prep. time does not reflect refrigeration time.

24 ounces frozen hash brown potatoes
8 eggs, beaten
1 cup milk
1 1/2 cups ham, cut up into 1 inch pieces
8 ounces shredded cheddar cheese
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
  • In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
  • Pour over potato/ham layers.
  • Cover and refrigerate overnight.
  • To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.

  • In a 8×8 square pan or 9-10 inch deep dish pie pan, add the shredded potatoes evenly, followed by the cheese. Layer half the bacon and half the onions evenly over top.
  • In a bowl, combine the beaten eggs, milk, salt, onion, garlic, and pepper. Whisk to combine well. Pour evenly over the casserole dish. Top with remaining half of the bacon and onions. Cover tightly and chill overnight.
  • Thirty minutes before baking, take casserole out to room temp. Meanwhile, preheat oven to 350F, with rack on lower middle position. Bake uncovered 40-50 minutes or until top is golden brown. Let rest at room temp for 10 minutes before slicing and serving.
