I discovered this recipe almost 20 years ago. Quail is a family favorite every fall when my husband goes hunting. It's an elegant meal, using only one skillet, so there's hardly any cleanup or fuss. -Lenora Picolet, Dwight, Kansas

4 bacon strips, halved
8 quail (about 2 pounds)
1 cup shredded carrots
1/2 cup sliced green onions
1/2 cup minced fresh parsley
2-1/2 cups chicken broth
1 cup uncooked long grain rice
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning

Steps:

  • In a large skillet over medium heat, cook bacon until partially done. Remove bacon; drain, reserving 2 tablespoons drippings. Brown quail in drippings. Remove and keep warm. Saute carrots, onions and parsley in drippings until tender. Add broth, rice, salt and lemon-pepper; bring to a boil. Place quail over rice; place one bacon strip on each. Reduce heat; cover and simmer for 25-30 minutes or until the rice is tender and quail is cooked.

2 cups short grain glutinous rice
2 Chinese sausages, cut into rounds
1/4 cup roasted, peeled, and diced chestnuts
3 tablespoons sugar, more if needed
2 tablespoons soy sauce
2 tablespoons dried scallop, reconstituted in water
2 tablespoons gingko nuts
2 tablespoons cubed Chinese ham
1 tablespoon red dates, reconstituted in water
1 tablespoon shao xing cooking wine
1 teaspoon dried shrimp, finely chopped
1/4 cup edamame peas
2 tablespoons thinly sliced (on the bias) scallion greens
8 (4 ounce) boneless quail
1 scallion green, blanched, shocked, and squeezed dry
1/3 cup soybean oil
Salt and freshly ground black pepper
1 teaspoon pulverized fresh ginger, or to taste
1 cup soybean oil
2 cups garlic chives, cut into 2-inch lengths

Steps:

  • To make the quail with rice:
  • Rinse the rice 2 times in a bowl of cold water and drain. In a large ovenproof pot, combine the rice, sausages, chestnuts, sugar, soy sauce, dried scallops, gingko nuts, ham, dates, wine, and dried shrimp. Add a scant 3 cups of water, put in a steam oven, and cook until cooked through and soft, 30 to 45 minutes. Fold in the edamame. Taste and adjust the sugar, soy sauce, and salt. Let cool and then fold in the scallions. Stuff about 1/2 cup of the rice mixture into each quail.
  • To make the scallion oil:
  • Put the scallions in a bowl, cover with the oil, and season with salt and pepper, to taste. Puree in a blender and strain through a very fine-mesh sieve, gently pressing to extract the pulp. Add the ginger, to taste.
  • To make the garlic chives:
  • In a small skillet heat the oil over medium heat. Saute the garlic chives, seasoning with salt, until slightly caramelized. You can add a bit of water to help cook the chives through before burning, if needed.
  • To serve:
  • Preheat the oven to 500 degrees F.
  • Heat a large skillet with a little oil. Sear the birds breast side down and then put in the oven until golden, 2 to 3 minutes. Then turn the birds and repeat the process on the other side, cooking until the birds are cooked and the rice is heated through.
  • Serve the whole quail on a bed of chive buds with a few dots of scallion oil to garnish the plate.

BONELESS QUAIL STUFFED WITH WILD RICE AND MUSHROOMS



Boneless Quail Stuffed With Wild Rice and Mushrooms image

8 boned quail (see note)
3/4 cup cooked wild rice (see recipe)
2 tablespoons butter
2 tablespoons finely chopped onion
2 tablespoons finely chopped shallots
1/2 cup mushrooms, cut into half-inch cubes
Salt to taste if desired
Freshly ground pepper to taste
1 tablespoon bourbon
Cream of chicken sauce (see recipe)
1/4 cup finely chopped parsley

Steps:

  • Prepare the quail and set aside.
  • Cook the wild rice and drain.
  • Heat the butter in a skillet and add the onion and shallots. Cook, stirring, until wilted. Add the mushrooms and cook about one minute, stirring. Add the wild rice, salt and pepper to taste. Sprinkle with bourbon and stir. Remove from the heat and let cool.
  • Spoon equal portions of stuffing onto the opened quail. Carefully fold over the quail halves to enclose the filling.
  • Lay out eight squares of plastic wrap, one square at a time. Place one stuffed quail in the center and carefully fold the plastic wrap to enclose the stuffed pieces. Wrap securely.
  • Place the stuffed quail in one layer in the top rack of a steamer. Set aside. Add enough water to boil in the bottom of the steamer to steam the quail when added.
  • When ready to cook, place the quail over the steamer and cover closely. Let the quail steam for 15 to 20 minutes or until done. Serve with cream of chicken sauce. A serving suggestion: spoon a little of the sauce onto a hot plate, top with two stuffed quail and sprinkle with 1 tablespoon parsley. Spoon the remaining sauce over the quail.

6 boneless quail
salt to taste
2 teaspoons grated orange zest, divided
2 ½ cups vegetable broth
½ cup uncooked wild rice
1 bay leaf
1 tablespoon vegetable oil
1 cup diced onion
¾ cup diced celery
½ cup fresh sage, minced
1 egg white
⅓ cup toasted walnuts
½ teaspoon freshly ground black pepper
¼ cup fresh parsley, minced
½ cup chicken broth

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a roasting pan.
  • Wash quail and rub the inside cavities with salt and 1 teaspoon of orange zest.
  • In a medium saucepan bring vegetable broth and rice to a boil. Add the bay leaf and reduce heat to low; cover and simmer for 35 to 40 minutes, or until liquid is absorbed.
  • Meanwhile, heat oil in a medium skillet over medium heat. Saute onions until translucent; add celery and sage and saute 2 minutes. Transfer to a medium bowl. Stir in the egg white, remaining orange zest, walnuts, black pepper, cooked rice and parsley; mix well. Stuff the cavities of the quail with the rice mixture. Lightly season the skins with salt and cracked black pepper.
  • Bake in preheated oven for 35 to 40 minutes, or until cooked through.
  • Remove quail from pan and de glaze with the chicken broth. Strain and ladle over the quail.

This is from Charmaine Solomon's Encyclopedia of Asian Food, one of my most used cookbooks. The toasted rice gives a lovely crisp finish and the marinade is delicious.

4 quail
1 teaspoon chopped garlic
1 teaspoon salt
1 teaspoon finely grated ginger
1 tablespoon oil
3 tablespoons natural yoghurt
3 teaspoons ground coriander
2 teaspoons rice flour (*)
1 teaspoon ground cumin
1 teaspoon garam masala
1/2 teaspoon ground turmeric
1/2 teaspoon white pepper
1/2 teaspoon chili powder

Steps:

  • Using scissors or poultry shears, split the quail down the backbone and open out flat-I like to remove the backbone, and pull the tiny breast bones out (it's easy).
  • Rinse and clean the cavity, and if the birds have been frozen, dry well with paper towel.
  • Crush the garlic with the salt until very smooth, then mix in the remaining ingredients.
  • Rub the mixture well into the quail, then cover and marinate at least 1 hour or overnight if time permits.
  • Remove from the marinade, reserving it.
  • Preheat a grill or broiler and cook, turning and brushing the quail at least twice with any remaining marinade.
  • It the marinade is too thick to brush on, dilute it with a tablespoon each of oil and water.
  • Cook until the quail are brown and crisp and done to your liking. I cooked our to medium and it took about 10 minutes.
  • *Toast the rice in a dry pan, then grind with a mortar and pestle, the ground rice helps give the quail their nice crunchy coating.

This is the essential game-bird hunter's recipe. If you've never had quail, they are very mild white meat, all breast, really. In any case, this is a tasty recipe that easily deals with a good brace of birds. You could use this recipe for 2 or 3 (thawed) Cornish Game hens if you increase the baking time to 1 hour and 15 minutes.

8 quail (cleaned and rinsed)
1 cup fresh mushrooms, chopped
1 cup Italian seasoned breadcrumbs
2 tablespoons butter
1 teaspoon table salt
1/4 teaspoon ground red pepper
2 tablespoons olive oil
2 tablespoons flour
1 tablespoon seasoning salt
3 cups chicken stock
1 teaspoon scallion, minced
1 teaspoon fresh parsley, minced
8 orange slices (for garnish)

Steps:

  • Pre-heat the oven to 325-degrees F.
  • If the quail have been shot in the wild, inspect them all for lead shot, removing any shot with tweezers or the point of a paring knife.
  • Lightly rub all the quail, inside and out with the seasoned salt.
  • In a large skillet, over medium heat, melt the butter and saute the mushrooms, bread crumbs, and table salt until the mushrooms tenderize a bit. Stuff the quail with this mixture.
  • Using the same skillet, make a roux by pouring in the olive oil and browning the flour in it. Then, add the chicken stock, scallions, red pepper, and parsley to the roux and saute the mix for about 5 minutes, until the onions are tender.
  • Next, spray a baking pan or large casserole dish with cooking spray and place the stuffed quail in it. Pour the sauce over the quail.
  • Baked, uncovered, at 325-degrees F. for 45 minutes, basting 2 or 3 times during the baking process.
  • Serve two quail to a person and garnish each plate with two orange slices. Serve cooked white rice as a side dish.

Steps:

  • Begin making the au jus gravy by browning extra poultry parts thoroughly, and add carrot, garlic & celery while browning. Once nicely browned, add about 500 ml water and simmer for 1.5 hours
  • Once you've started the gravy, start the dressing: chop the onion, celery and saute in butter &/or olive oil until transluscent. Add garlic and saute another minute or two. Add wild rice, chopped mushrooms and raisins. Add liquid for cooking the wild rice (see package instructions), and cover. Cook until wild rice is done.
  • While the dressing cooks, saute the quail pieces skin side up for 10 minutes. Turn them over and saute for another 20-30 minutes.
  • Remove quail and cook cut corn from 4 ears (about 250 grams) in a little of the pan fat for about 5-8 minutes.
  • Make a paste from a teaspoon of arrow root or cornstarch with a little water. Strain the stock and bring to boil. Thicken with a little of the paste to make a thin gravy.
  • Arrange the corn around the outside of a platter. Place the dressing inside and pile the quails on top. Drizzle with the gravy and serve more along side.
