This is a common springtime dish in Italy and in a neighboring region of Croatia, Istria, where it's made with wild asparagus that is thinner than a pencil. If you can find thin spears at your farmers' market, use them. The recipe is inspired by a dish in Carol Field's "Italy in Small Bites."

1 to 2 garlic cloves to taste, peeled, halved, green shoot removed
3 anchovy fillets, rinsed
2 teaspoons capers, rinsed
2 tablespoons extra virgin olive oil
1/4 cup finely chopped onion
1 to 2 teaspoons fresh lemon juice
1 teaspoon chopped fresh mint
Salt
freshly ground pepper
1 pound asparagus, preferably thin stalks, trimmed

Steps:

  • Place the garlic, anchovy fillets and capers in a mortar and pestle, and mash to a paste.
  • Heat 1 tablespoon of the olive oil over medium heat in a small skillet. Add the onion and a pinch of salt. Cook, stirring often, until tender (do not brown), three to five minutes. Stir in the garlic and anchovy paste, and cook, stirring, for another minute. Remove from the heat, and stir in the lemon juice, mint, salt and pepper. Set aside for 15 to 30 minutes or longer. The flavors will mellow.
  • Steam the asparagus for three to five minutes until just tender. Remove to a platter or a wide bowl, and add the remaining olive oil and the onion mixture. Toss gently and serve.

Number Of Ingredients 7

1 large egg at room temperature
5 teaspoons fresh lemon juice
1 teaspoon Dijon-style mustard
3 flat anchovy fillets, rinsed, drained, and patted dry
1/4 teaspoon salt
1/4 teaspoon white pepper
3/4 cup olive oil, vegetable oil, or a combination of both

Steps:

  • In a blender or food processor blend the egg, the lemon juice, the mustard, the anchovies, the salt, and the white pepper and with the motor running add the oil in a stream. Thin the mayonnaise with water if desired and serve it over asparagus.

Basic Boiled Asparagus, recipe folows
1 tablespoon extra-virgin olive oil
Salt and pepper
1/2 tablespoon truffle oil
1 cup of your favorite mayonnaise
2 pounds asparagus, the thicker the better
2 tablespoons salt (for boiling water)

Steps:

  • Toss the cold asparagus with the extra-virgin olive oil, salt and pepper. Stir truffle oil into the mayonnaise. Plate the asparagus. Spoon mayonnaise to one side of asparagus.
  • Bring about 6 quarts of water to a rapid boil in a covered pot large enough to hold the asparagus. Cut the bottom section- usually about 1 to 2 inches off the asparagus stalks with a sharp knife. Peel the asparagus by laying them flat, one at a time, on a cutting board. If the asparagus are thinner than 1/2-inch, use a vegetable peeler and peel the asparagus starting at the base of the tip and peeling them all the way down to the base, eliminating the fibrous peel and revealing the pale green flesh. If the asparagus are very thick or woody, use a paring knife and start peeling from the base. When ready to cook, toss the salt into the boiling water and carefully lower in the asparagus. Turn the heat to low and simmer the asparagus, uncovered, until the spears are easily penetrated with a knife, usually after about 5 minutes but from 1 minute for very thin asparagus to 12 minutes for the very thickest. If serving cold asparagus, plunge the hot cooked asparagus into ice water or rinse under cold water in a colander. Pat dry.

200g clarified butter
50g plain flour
3 eggs , beaten
200g brioche , blitzed into crumbs
16medium English asparagus spears, bottom of stem peeled
parmesan , grated, to serve
100g stoned black olives (75g whole, 25g chopped)
2 egg yolks
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 salted anchovy
250ml light olive oil
squeeze lemon juice
pinch cayenne pepper

Steps:

  • First, make the mayonnaise. In a food processor, add the whole olives, egg yolks, vinegar, mustard and anchovy, and blend until you have a smooth paste. Slowly add the oil until it becomes thick and glossy. To finish, stir through the chopped olives, lemon juice and cayenne pepper.
  • Next, in a pan over a low heat, warm the clarified butter until it melts. Put the flour, beaten eggs and brioche crumbs into three separate bowls. Dip the asparagus stem into the flour, leaving the tip uncovered, then dip it into the beaten egg and finally into the brioche crumbs. Repeat for each spear.
  • Turn up the heat until the melted butter is hot. Add four spears of asparagus and fry for 1 min or so - it will cook quickly. Use a slotted spoon to lift them onto a plate lined with kitchen paper. Repeat with the remaining spears. After each batch comes out of the butter, grate over the Parmesan. Serve with the mayo.

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add the garlic, red pepper flakes and anchovy paste (or anchovy fillet) stirring constantly until garlic is fragrant and anchovy melts.
  • Add asparagus and water and cook stirring occasionally until the asparagus is tender-crisp, about 5 minutes.

5 tablespoons butter
1 (2 ounce) can flat anchovies packed in oil
4 teaspoons minced garlic (about 5-7 cloves)
3 tablespoons olive oil
1/3 cup light cream
grated parmesan cheese

Steps:

  • 1/2 pound pasta for 2 generous servings.
  • Prepare the sauce while the pasta water is boiling.
  • I like to use vermicelli.
  • In a small skillet melt the butter.
  • Add minced garlic.
  • Cook until golden brown until it smells toasted.
  • Do not let it scorch or it will taste bitter.
  • When the garlic is golden brown, add the entire can of anchovies, including oil and the 3 tablespoons of olive oil.
  • Cook and stir until the anchovies dissolve.
  • If the pasta is not cooked yet, turn off the heat.
  • When the pasta is cooked, finish the sauce.
  • Add light cream to the sauce, and cook until it comes to a rolling boil.
  • Pour over the well drained pasta and toss vigorously.
  • Serve with parmesan cheese.

Coarse sea salt
1 egg yolk
1 tablespoon lemon juice, from Meyer lemons, if possible
4 large anchovy fillets packed in olive oil, drained and pounded to paste with a mortar and pestle
Freshly ground pepper (black, red, green, grains of paradise, whatever you like)
3/4 cup peanut oil
1/4 cup extra virgin olive oil
1 1/2 pounds cauliflower, trimmed into walnut-size florets

Steps:

  • Fill a large pot with water. Season with coarse sea salt, and bring to a boil. Meanwhile, in a small bowl, combine egg yolk, lemon juice, half the anchovy paste, a large pinch of salt and several turns of the pepper mill. Whisk together vigorously.
  • Gradually add peanut oil, whisking in a few drops at a time. Once mixture begins to emulsify, oil may be added faster, in a thin stream. After peanut oil is added, begin whisking in olive oil. Whisk in remaining anchovy paste. Mixture should be highly seasoned, and anchovy should be pungent but not unpleasantly so.
  • When water comes to a boil, add cauliflower, and cook until tender but still slightly crisp, about 3 to 4 minutes (may also be steamed). Drain, and run under cold water. Lay out on a dish towel to dry, then transfer to a serving bowl. Pour 1/2 cup mayonnaise on top, and toss to coat. Taste and adjust seasoning. Serve, with remaining mayonnaise on the side, or save it for sandwiches.
