QUICK AND EASY PINEAPPLE FRIED RICE
Fried rice with an Asian accent goes well with many things. Perfect alongside chicken and beef, but equally good with salmon, shrimp, or scallops. This comes together quickly, so get all of your ingredients prepped before you start cooking.

Steps:
- Heat a large skillet over medium heat and add oil. Add diced onion and cook for about 1 minute. Add ginger and garlic, and cook, stirring constantly, for 1 minute.
- Increase heat to medium-high; add pineapple, red bell pepper, and peas. Cook, stirring constantly, for 3 to 4 minutes. Stir in rice and soy sauce, and cook until sauce is well incorporated, 1 to 2 minutes. Stir in sesame oil and remove from heat.
- Garnish with sliced green onion and sesame seeds before serving.

PINEAPPLE FRIED RICE (EASY 15-MINUTE RECIPE)
Steps:
- Melt the butter in a wok or a large frying pan set over medium heat. Add the onion and frozen vegetables. Cook for 4 minutes until softened.
- Stir in the garlic and ginger. Cook for a minute further until fragrant.
- Push all of the vegetables to one side of the pan. Add the eggs to the other side and scramble constantly until cooked through.
- Add the cooked rice, pineapple, tamari and Sriracha to the pan. Stir-fry mixture for 2 minutes.
- Sprinkle with green onions and serve.

PINEAPPLE FRIED RICE
This easy pineapple fried rice is full of bright flavors, with chicken, bell peppers, peas, sweet chunks of pineapple, and a squeeze of lime juice. Ready in just about 30 minutes, it's a delicious, healthier meal for any night of the week!

- Season the chicken pieces generously with salt and let them sit for 10-15 minutes while you prep the other ingredients. Blot dry with a paper towel to remove the excess moisture.
- Melt 2 tablespoons of the coconut oil in a large skillet over medium heat. When shimmering, add in the chicken and cook, stirring occasionally, until it is no longer pink in the center, about 5-7 minutes. Remove the chicken from the pan and set it aside.
- Melt the remaining tablespoon of coconut oil in the pan and add the onion. Cook for 3-4 minutes, until just softened. Add the bell peppers, garlic, and ginger and sauté for 2-3 minutes. Add the soy sauce then scrape up any browned bits stuck to the bottom of the pan.
- Stir in the rice, honey, cubed pineapple, and cooked chicken. Reduce the heat to low and cook until heated through, about 5 minutes. In the last few minutes of cooking stir in the frozen peas and lime juice.
- Serve warm with fresh green onions and a sprinkle of sesame seeds, if desired.

- 1 Heat 1 tbsp oil in a wok. Add the eggs, swirling them up the sides, to make a thin omelette. Once cooked through, roll the omelette onto a chopping board and cut into ribbons.
- Heat the remaining oil. Add the garlic, onions and five-spice. Stir-fry until sizzling, then add the rice (if using pouches, squeeze them first, to separate the grains), peas, sesame oil and soy. Cook over a high heat until the rice is hot, then stir through the pineapple and omelette ribbons.

Steps:
- Using a sharp knife carefully cut the pineapple in half lengthways.
- Using the tip of a knife, cut around the edge of the pineapple being careful not to cut through the skin.
- Slice down and across the pineapple flesh then scoop out the pineapple cubes with a spoon. Discard the core and set the flesh aside.
- In a large wok, heat 2 tablespoons of oil over a medium heat. Fry the beaten eggs in a hot wok.
- Once cooked, push the eggs to a side and add in the prawns to the other side.
- Fry until the prawns are just cooked. Remove eggs and prawns from the wok and set aside.
- Heat the wok until smoking hot and pour in 6 tablespoons of oil.
- Add the garlic, chilli, and onion and stir until fragrant.
- Add in the rice and vegetables, and fry until rice turns slightly brown and the veggies are thoroughly cooked.
- Add the cooked eggs and prawns, add in the fish sauce and the prepared pineapple flesh and stir until everything is well mixed together.
- Serve in the empty pineapple halves, along with some lime juice and spring onions.

- Open can of crushed pineapple and drain juice into a cup.
- In a medium saucepan, combine the liquid from the can of crushed pineapple with 3 cups water, bring to a boil. Add rice. Bring mixture to boil. Cover and reduce heat to simmer. Cook 25 to 30 minutes or until rice is tender.
- In a non-stick wok heat the 1 tablespoon walnut or peanut oil. Add the eggs and cook without stirring, until set. Slide eggs out of the wok to a plate - cut into short, narrow strips. In the same wok, heat the sesame oil and stir fry the tofu with the mushrooms, soy sauce, green onions, and carrots for about 4 minutes. Stir in cooked rice, pineapple, and egg strips. Heat until everything is heated through.
