Steps:
- Place the first five ingredients in a blender; cover and process until desired consistency. Transfer to a small bowl. Stir in vinegar. Serve with bread cubes.

HERB GARLIC OIL
This is a basic garlic oil that can be used as a dipping sauce for bread, the oil half of an Italian vinaigrette, or as the base for Mediterranean-style cooking. If you use it for the latter, though, you may want to omit the herbs and add the extra-virgin olive oil unless your pan is non-stick or you do not mind burned little flecks of oregano and parsley.

Steps:
- Heat a skillet over medium-low heat. Pour olive oil into skillet gradually, sliding skillet away from burner if oil begins to splatter. Add garlic; cook until sizzling but not brown, about 1 minute. Turn off heat, leaving skillet on burner. Stir in extra-virgin olive oil, basil, and oregano. Transfer to container and store in refrigerator until flavors blend, 8 hours to overnight.

GARLIC OIL
Steps:
- Place the oil, garlic and thyme sprigs in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 minutes, until the garlic is browned and tender. Turn off the heat. Carefully remove the thyme sprigs and discard. Add the red pepper flakes. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
GARLIC OIL
Steps:
- In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low, and cook for 5 minutes, until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook.
- Remove the garlic cloves from the oil and slice them. Place them in a bowl and pour the oil over them.
BREAD DIPPING OIL - GARLIC & HERBS
I'm not sure where my brother got this recipe, but it is packed full of flavor and worthy of restaurants. My brother uses freeze dried herbs in this recipe, but I would assume fresh herbs would be just as wonderful. This olive oil dip is perfect for any crusty type artisan bread. Hope you enjoy!

Steps:
- Mix all ingredients (except oil) and mince with a food chopper. If you do not have a food chopper, mince together with a knife to make an herb mixture.
- Use 1 teaspoon of herb mixture for every 1/2 cup of olive oil when serving.
HERB OIL
Steps:
- Put herbs, garlic and salt into a food processor. Add a splash of olive oil, and pulse to combine. Place mixture into a jar.
- Add the rest of the olive oil. Store in the refrigerator. Lasts about a week.
HERB AND GARLIC DRESSING
I found this years ago in a recipe book made by a local church auxiliary. I make it and use it as a dressing for pasta salad or tomato and cucumber Greek salad. I usually mix a day ahead and the flavors taste 100 times better!
