An extra-easy wonderfully refreshing cream cheese and mixed fruit pie. Perfect for picnics, hot summer nights, or even breakfast!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Roll pastry into an 11 inch circle. Lay flat on a baking sheet or pizza pan. Prick several times with a fork. Bake in preheated oven for 12 to 15 minutes, until light brown. Remove and allow to cool completely.
- In a small mixing bowl, beat together cream cheese and sugar until mixture is creamy and smooth. Spread evenly onto cooled pastry. Arrange fruit in a decorative pattern over cream cheese layer. Chill until ready to serve.

This is a great pie. Quick and easy. You can make it in a 9 x 13" inch pan and alternate flavors for a party pie. It's a no-bake pie too so no need to heat up the kitchen. For a light version use sugar free, fat free ingredients.

- spread evenly in pie crust.
- squeeze chocolate syrup over pie in a criss-cross motion .
- do the same with the caramel syrup in oppostie direction .
- sprinkle top of pie with the crushed candy topping .
- freeze until ready to serve .
- any combination of ice cream and toppings works wonderfully, this just happens to be my favorite combination !
