BANANA BOATS

- Cut banana peel lengthwise about 1/2 in. deep, leaving 1/2 in. at both ends. Open peel wider to form a pocket. Fill each with 1 teaspoon chocolate chips and 1 tablespoon marshmallows. Crimp and shape four pieces of heavy-duty foil (about 12 in. square) around bananas, forming boats., Grill, covered, over medium heat until marshmallows melt and are golden brown, 5-10 minutes.

Do not close over top., Cut each banana lengthwise about 1/2 in. deep, leaving 1/2 in. uncut at both ends. Gently pull each banana peel open, forming a pocket. Fill pockets with chocolate chips, trail mix and marshmallows., Grill bananas, covered, over medium heat for 4-5 minutes or until marshmallows are melted and golden brown.

- Slit each banana lengthwise through the peel, making sure not to cut all the way through to the other side. Stuff the bananas with marshmallows and chocolate chips.
- Wrap each banana in aluminum foil and cook over a fire, on the barbecue, or in a 300 degree oven for 5 minutes, or until chocolate is melted. Eat with a spoon.

BANANA BOATS
Banana boats are a classic campfire dessert: a delicious gooey mess of softened banana, melted chocolate and sticky marshmallows meant to be eaten with a spoon. Tweaking the recipe so it can be done at home in an oven or on a grill means that this treat can be enjoyed year round, even if you're far from a campfire. Bonus: If you're making them at home and feeling adventurous, you can add sprinkles, nuts or ice cream.

- Preheat the oven to 400 degrees F or prepare a grill for medium indirect heat. For a gas grill (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For a charcoal grill, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. (Be sure to consult the grill manufacturer's guide for best results.)
- Break the chocolate bar into squares. Lightly spray kitchen shears with cooking spray and cut the marshmallows in half crosswise.
- Use a paring knife to cut a slit down the center of 1 unpeeled banana lengthwise, being sure not to cut all the way through. Gently insert alternating pieces of half the chocolate and 4 marshmallow halves. Press the marshmallows into the banana as much as possible so they don't stick out too much. Wrap the banana in nonstick aluminum foil. Repeat with the remaining banana, chocolate and 4 marshmallow halves.
- Bake or grill over indirect heat, covered, until gooey, 12 to 14 minutes. Let cool 1 minute before unwrapping and eating.
BANANA BOATS
My kids like these for breakfast, but they make a great dessert or quick snack too (especially for kids). I just like the fact that my kids really like these, because it helps in my effort to encourage them to eat fresh fruit. This is so quick and easy to prepare -- no cooking, all instant ingredients. If you're in a rush, this is a quick breakfast (or dessert or snack) dish to prepare.

- Peel banana and place it on a plate. Slice banana in half, lengthwise.
- Spray whipped cream on the cut surface of both banana halves. Then fold banana halves together until the two strips of whipped cream touch. Be careful to not squeeze too firmly (or the whipped cream will ooze out too far).
- Add a maraschino (or two) on top.
- For dessert, you can sweeten it up a bit by drizzling a thin line of caramel or chocolate syrup over the whipped cream, or sprinkling chopped walnuts, baking sprinkles, shredded coconut, or other kid-friendly treats on top.

FIRE PIT BANANA BOATS

Steps:
- Cut your aluminum foil into pieces that are about 8"x12" or 12"x12".
- Unpeel the banana, and cut a slice down the middle.
- You don't want to cut all the way through, but you just want a gap so you can put marshmallows and chocolate chips in it.
- Place the peeled and cut banana on the foil to decorate.
- Place desired amount of chocolate chips and marshmallows in the gap.
- I try to get as much as I can in there so It's full, gooey and delicious!
- Fold the foil over the banana so nothing will leak out of the foil, and so you can keep all the good stuff in it.
- Place over coals.
- It will usually take about 5 minutes to cook depending on how hot the coals/fire is.
- You can also cook them in the oven or over the grill if your campfire rains out.
- Medium heat on the grill for 5 or so minutes, checking every so often until desired the marshmallows and chocolate chips are at desired melting point
- Broil on high for 7-10 minutes in the oven, or until desired melting point.
