Steps:
- Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
- Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
- Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
- Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
- Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
- Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
- Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
- Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

Steps:
- Place 16-18 hot coals as a base for the bottom and place 12 inch Dutch Oven over coals. Allow Dutch Oven to heat up. Once hot add sliced bacon. I like to cut bacon in about 3/4in slices and throw them into the hot Dutch Oven and let them cook stirring as needed
- Remove any excess oil and fat. It's easiest to use a few paper towels to absorb the excess fat.
- Add 1 lb of ground beef to the cooked bacon. I prefer a lean ground sirloin but choose what you prefer.
- Chop ground beef and allow to fully cook. You may need to drain excess fat from the hamburger depending on what you choose.
- Add diced Onion and Diced Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
- Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
- Pour Chili Sauce, broth, and Yellow Mustard on top.
- Add ham cubes and brown sugar and stir to combine.
- Cover with lid and add 12-14 hot coals on top of Dutch Oven
- Stir every 15 minutes and cook for 60-70 minutes.
- In a large skillet on the stove over medium/high heat add bacon slices. I like to cut bacon in 3/4in pieces. Stir as needed until fully cooked.
- Remove excess fat using paper towels to carefully remove.
- Add 1 lb Lean Ground Sirloin to bacon and chop to break up beef. Feel free to use any ground beef. You may need to remove excess fat after cooking.
- Dice Onion and Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
- Pour meat mixture into Slow Cooker or Dutch Oven
- Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
- Pour Chili Sauce, broth and Yellow Mustard on top.
- Add ham cubes and brown sugar and stir to combine.
- Cover Dutch Oven or Slow Cooker with Lid
- Bake in 350 Degree Pre-heated Oven for 1 hour stirring every 15 minutes OR - Use Slow Cooker and set to low for 4 hours.

EASY COWBOY BEANS (FRIJOLES CHARROS)
This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

EASY COWBOY BEANS
My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

Steps:
- Cook bacon until crispy. Drain and crumble. Put in large pot.
- Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
- Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
- Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
- These are generally better the next day, but are might fine the same day!

- To the Instant Pot add the beans, lard and onion and cover with water about 2 inches above the beans. Set the Instant Pot on beans mode (should be 30-35 minutes) and cook until the time has elapsed. Then, do the quick steam release. Leave the beans in your Instant Pot. If you are going to cook stovetop, I would soak the beans the night before, combine all the ingredients adding about 2 quarts of water. Bring to a boil, then reduce heat and cook for about 2 hours or so until tender. I start my stovetop beans out with a lid, then when they begin to soften, I remove the lid and cook uncovered so the juice will begin to thicken. If you are using a slow cooker, the same instructions apply as stovetop. The myth about salt preventing the beans from softening is not true. You can add salt from the beginning. I would only add about a teaspoon if you add to beginning to prevent over salting. Then, when the beans are done check for seasoning and add salt to taste. You can do this step ahead, eith
- In a saucepan or skillet cook the bacon over medium heat, stirring regularly, until browned, about 4 minutes. Add the garlic and cook for a minute or so, preventing burning. Add the tomatoes with their juices. Cook about 3 or 4 minutes blending the flavors. To the beans in the Instant Pot, add this mixture and set the Instant Pot for an additional 10-15 minutes. When that time has elapsed, either do the quick release or allow to release the steam on their own. If you cooked your beans in a slow cooker, add this mixture to your beans after the first 2/3 of cooking. If you cooked stovetop, add the mixture after the two hour or so when your beans are done, then cook an additional 15 minutes or so.
