Steps:
- Place cubed potatoes into a glass dish, and cook in the microwave oven for 7 to 10 minutes, or until soft.
- While the potatoes are cooking, melt the butter in a large pot over medium-high heat. Whisk in flour until smooth, then gradually stir in the milk. Bring to a boil, then reduce heat to medium, and simmer for 5 to 10 minutes, or until slightly thickened.
- Stir in the potatoes and onion, and cook for 5 more minutes. Stir in the sour cream and Cheddar cheese until melted and well blended. Season with salt and pepper.

- In 3-quart saucepan, mix milk, salt, pep- per and potatoes, breaking up potatoes with whisk or wooden spoon. Heat to boiling over high heat; reduce heat. Simmer uncovered 4 minutes, stirring frequently with whisk, until thoroughly heated. Remove from heat; stir in 2/3 cup of the cheese.
- Top individual servings with remaining 1/3 cup cheese and the bacon; garnish with onions.

FULLY-LOADED BAKED POTATO SOUP
The thickest and most delicious potato soup ever. I created this soup after having a similar soup at a restaurant. Incredible comfort food with ease! It's a very simple recipe to adjust to your taste. My family always asks for this soup in the winter. Garnish with chives, bacon crumbles, and Cheddar cheese.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Remove from skillet and crumble. Reserve drippings.
- Place potatoes in a pot; cover with water. Bring to a boil. Reduce heat to medium-low. Cook, covered, until tender, 15 to 20 minutes. Drain.
- Melt butter in a large skillet over medium-high heat. Add onion and garlic; saute until onion is translucent, about 5 minutes. Stir in bacon crumbles, reserved bacon drippings, flour, salt, and pepper. Reduce heat; add the boiled potatoes, half-and-half, and chicken broth. Simmer until thickened, about 5 minutes. Add sour cream and 1 cup Cheddar cheese; cook and stir until heated through, about 5 minutes. Garnish soup with remaining Cheddar cheese and parsley.

- Peel and dice the baked potatoes; set aside. In a Dutch oven or soup kettle, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1-1/2 teaspoons drippings., Add the soups, milk, garlic powder, Worcestershire sauce, onion powder, pepper, Liquid Smoke if desired and reserved potatoes to the drippings. , Cook, uncovered, for 10 minutes or until heated through, stirring occasionally. - Prepare potatoes in the microwave, as directed on package.
- While potatoes are cooking, cut bacon into small strips, chop green onions and shred cheddar cheese.
- Fry bacon in a saucepan over medium-high heat, set aside.
- Drain bacon grease, turn heat down to medium-low and pour Alfredo sauce into saucepan.
- Add milk and broccoli florets, stirring occasionally.
- Pour one cup of cooked potatoes into small bowl, mash.
- Blend mashed potatoes into soup.
- Pour 1 cup of cooked potatoes into individual serving bowls.
- Ladle soup over the potatoes.
- Top with cheese, bacon and green onions.

I invented this recipe when I had a bad tooth and needed something easy to fix and eat as well as delicious. My family has loved this soup.

Steps:
- Peel and chop potatoes into cubes.
- Put potatoes into a large pot.
- Add 32 oz container of chicken stock.
- Add water until the potatoes are covered with liquid.
- Add the whole yellow onion and minced garlic.
- Clean the green onions removing the tips from each end.
- Add the whole green onions to the pot.
- Cook the bacon in the microwave.
- Add the whole slices of bacon.
- Bring the pot of ingredients to a soft boil stirring occasionally.
- Once the potatoes are cooked (can easily cut a potato with a fork), remove the yellow and green onions and bacon from the pot.
- Add one or two sticks of butter, 8 oz sour cream, cream of chicken soup and 1 cup heavy cream.
- Stir until blended.
- Add bag of shredded cheese.
- Stir until blended.
- Add salt, parsley, paprika, and peppers. Add more to taste.
- Serve with a little sour cream, shredded cheese, or crumbled bacon on top.
